Meat 'n' Potato Kabobs image

They're summery, but these kabobs really stick to your ribs. A microwave makes quick work of cooking the potatoes, so grilling is done in a flash. -Taste of Home Test Kitchen

1 pound beef top sirloin steak, cut into 1-inch cubes
1-1/2 teaspoons steak seasoning, divided
1 garlic clove, minced
1 cup cola
3 small red potatoes (about 8 ounces), cubed
1 tablespoon water
1 cup cherry tomatoes
1 medium sweet orange pepper, cut into 1-inch pieces
1 teaspoon canola oil
1 cup pineapple chunks

Steps:

  • Sprinkle beef with 1 teaspoon steak seasoning and garlic. Place cola in a large bowl. Add beef; toss to coat. Set aside., Place potatoes and water in a microwave-safe bowl. Microwave, covered, on high just until tender, 4-5 minutes; drain. Return to bowl. Add tomatoes, pepper, oil and remaining steak seasoning; gently toss to coat., Drain beef, discarding marinade. On 8 metal or soaked wooden skewers, alternately thread beef, vegetables and pineapple. Grill, covered, over medium heat or broil 4 in. from heat until beef reaches desired doneness and pepper is crisp-tender, 6-8 minutes, turning occasionally.

Veggies needn't feel left out at barbecues with these Indian-spiced kebabs

3 tbsp tikka paste
500g tub yogurt
2 tsp cumin seeds
thumb-size piece fresh root ginger , finely grated
250g bag small new potatoes
300g paneer cheese, cut into chunks
3 red onions , peeled and sliced into wedges through the root
2 red peppers , deseeded and cut into chunks
5 tbsp mango chutney
small pack mint leaves, leaves picked
250g bag salad leaves
12 chapatis

Steps:

  • Soak 12 wooden skewers in water for 30 mins (this helps to stop them burning). In a large bowl, mix together the tikka paste with half of the yogurt, the cumin, ginger and seasoning. Boil the potatoes in a pan of boiling salted water for 7 mins, then drain well and tip into the tikka mixture with the paneer. Gently mix into the marinade, then chill for at least 2 hrs to take on flavour.
  • To assemble the kebabs, alternately thread the marinated potatoes and paneer onto the skewers with the onions and peppers, then cover on a tray until you are ready to barbecue.
  • Heat the barbecue or a grill. Mix the mango chutney into the remaining yogurt, and the mint leaves into the salad leaves. Barbecue or grill the kebabs for 10-15 mins, turning, until the veg are charred and softened. With a few minutes to go, add the chapattis to the barbecue in batches to warm through. Serve the kebabs with the minty salad, cooling mango yogurt and chapattis, and let everyone assemble their own wraps.

These yummy little potatoes can be made ahead. Just cover and refrigerate the mixture in the bowl until grilling time. You can use either white or red potatoes or mix the two for a more colorful presentation.

4 lbs tiny new potatoes
salt
1/3 cup olive oil
2 teaspoons minced garlic
1/2 teaspoon dried thyme
1/2 teaspoon black pepper

Steps:

  • Place potatoes in salted water to cover in large sauce pot.
  • Boil until potatoes are tender, about 10 to 12 minutes.
  • Drain and transfer potatoes to large bowl.
  • Toss with oil, garlic, thyme and pepper.
  • Preheat grill.
  • Thread potatoes evenly on 6 metal skewers.
  • Grill for about 9 minutes, turning every 3 minutes and brushing with oil mixture until evenly browned.

Pork, lemon & potato kebabs image

Perfect for the BBQ, pork, lemon and potato kebabs

16 baby new potatoes
700g pork tenderloin (you'll find this in most supermarkets)
lemon wedges, to serve
2 tbsp chopped fresh rosemary leaves, or 2 tsp dried
3 tbsp olive oil
½ lemon , juice only
oil , for spraying or brushing

Steps:

  • Cook the potatoes in boiling salted water for 10-12 minutes until barely tender. Drain well. Trim the pork of any excess fat and cut the meat into 3cm cubes. Thread the pork alternately with the potatoes on to 8 skewers.
  • First get the barbecue going or put the grill on to heat up. Mix the chopped rosemary, olive oil and lemon juice together and season with salt and pepper.
  • Brush the marinade over the pork and potatoes. Barbecue or grill for 14 minutes, turning once and brushing again halfway through cooking. Serve with lemon wedges.

This is easy and tasty with polawo, (a Bangladeshi or south Asian rice) or local fried rice. This is a bit hot and spicy, but really tasty. You may also eat it with Paratha (Bangladeshi, Indian or Pakistani bread). If you are eating without anything, then you may have some tomato ketchup.

2 1/2 cups boiled and mashed potatoes (do not forget to take out the peel)
2 tablespoons chopped onions
1 tablespoon chopped fresh tomato
1 teaspoon chopped green chili (add more if you like or less if you don't like)
2 teaspoons coriander powder (Dhaniya)
3/4 teaspoon black pepper (Gol moricher goorow)
2 tablespoons oil
salt, according
2 1/2 tablespoons cornstarch
2 eggs
1/2 teaspoon red chili powder
1 pinch of tasting salt
breadcrumbs, as needed
1 tablespoon flour (maida)
oil (for frying, !!No deep frying!!)
white onions (as needed) or carrot (to garnish, as needed)

Steps:

  • In a large bowl add boiled and smashed potato, chopped onions, chopped tomato, chopped green chili, coriander powder, black pepper, oil, salt, cornstarch, 1 egg and red chili powder. Mix all these ingredients well with the help of your hands or spoon.
  • Now in another bowl beat 1 egg.
  • In a flat plate mix some bread crumbs and flour.
  • Make small cutlets of the potato mixture with the help of your hands.
  • Dip these kebabs in the egg and wrap with bread crumbs and flour.
  • Now fry them in oil and when brown, serve in a dish with sliced cucumber, carrot and onions.
  • TIPS:.
  • While making kebabs you may spread some oil on your palm.
  • After making kebabs with your hands, you may put them in dish and keep in the fridge. REMEMBER! THE DISH ON WHICH YOU WILL PUT THE KEBBAB, grease it. Then after sometime fry them in oil.
