1 pound potatoes
1 Tablespoon of olive oil
½ cup red wine
1 teaspoon dried rosemary

Steps:

  • Preheat oven to 400 degrees.
  • Cut the potatoes into 1-inch pieces. Put them in a zippered top bag.
  • Add the olive oil, red wine, and rosemary. Zip the bag and shake until the potatoes are coated.
  • Dump the whole thing into a greased 8 x 8-inch pan and cook for about 45 minutes, turning once half way through cooking time.

1/3 cup dry white wine
2 tablespoons olive oil

Steps:

  • Peel potatoes, putting them in a bowl of cold water as peeled to prevent discoloration. Drain potatoes, then steam in a steamer set over boiling water, covered, until tender, 18 to 20 minutes.
  • Toss hot potatoes with wine in a large bowl, then add oil, 1 teaspoon salt, and 1/2 teaspoon pepper and toss again. Cool to room temperature.

1 pound new potatoes
1 tablespoon olive oil
4 ounces whole onion or 3 ounces chopped ready-cut onion (1 cup)
Fresh rosemary sprigs to yield 1 tablespoon chopped leaves
1/2 cup dry red wine
2 tablespoons red wine vinegar
1/4 teaspoon salt
Freshly ground black pepper

Steps:

  • Scrub potatoes. Do not peel; slice in food processor.
  • Heat nonstick pan large enough to hold all the ingredients, until it is very hot. Reduce heat to medium high. Add oil, and cook potatoes, turning often to brown on both sides.
  • Chop onion, and add to potatoes as they cook.
  • Chop rosemary leaves, and stir into potato mixture.
  • When potatoes are brown, reduce heat to simmer. Add the wine and vinegar, and season with salt and pepper. Cover, and cook until potatoes and onions are soft.

¼ cup cooking sherry

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Make several cuts crosswise across the potato, about 1/2 inch apart and not quite all the way through. Place half of an onion slice, and a piece of butter into each cut. Place the potato onto a sheet of aluminum foil, and form a bowl. Pour the cooking wine over the potato, and fold the foil around to seal, turning the ends up like a boat to keep the wine from spilling out.
  • Place the potato onto a baking sheet, and bake for 50 to 60 minutes, depending on the size of the potato. When done, cut through foil, and top with your favorite potato toppings or just salt and pepper.

3 russet potatoes, peeled, cut into scants (about 2 1/4 lb)
1/2 cup olive oil
3 garlic cloves, minced
1 1/2 tablespoons fresh oregano, chopped
1 teaspoon salt
1/4 teaspoon red pepper, crushed
3/4 cup dry white wine
1/4 cup water
4 (5 -6 ounce) red snapper fillets (3/4-inch thick)
4 tablespoons fresh parsley, chopped

Steps:

  • Preheat the oven to 450°F.
  • Slightly overlap the sliced potatoes in a 9X13 metal pan.
  • Mix oil, garlic, oregano, 1 tsp salt and the crushed red pepper in a bowl.
  • Pour over potatoes.
  • Pour wine and 1/4 c water over the potatoes.
  • Cover with aluminum foil and bake for 20 minutes.
  • Uncover and bake until the potatoes are tender, about another 35 minutes.
  • Place fish on top of potatoes.
  • Drizzle with remaining 1/4 c oil.
  • Sprinkle with salt, pepper and 2 tbsp parsley.
  • Bake uncovered until fish is opaque in the center, about 18 minutes.
  • Sprinkle with the remaining 2 tbsp parsley and serve.

Steps:

  • heat the oven to 200c gas 6,grease a shallow oven-proof dish.
  • scrub the potatoes,and slice them as thin as possible,leaving the peel on.layer the potato slices in the buttered dish.
  • pour the stock and wine over the potatoes.dot with butter and cover with foil.
  • bake for 1 hour until the potatoes are tender,remove the foil and sprinkle with the cheese.return to the oven for a further 15-20 minutes until golden.
