PRITIKIN DIET STYLE STIR-FRIED STEAK AND GREEN PEPPERS



Pritikin Diet Style Stir-Fried Steak and Green Peppers image

Low fat and good for you, this recipe is a simple inclusion into your diet and is even great for those that just want something light to eat.

1 lb flank steak, trimmed of all visible fat
2 tablespoons cornstarch
1 tablespoon powdered ginger
2 tablespoons frozen apple juice concentrate
2 tablespoons soy sauce or 2 tablespoons tamari
1/4 cup dry sherry or 1/4 cup wine vinegar
3/4 cup stock, without fat
4 large green peppers, cut into thin strips
1 large carrot, thinly sliced on the diagonal

Steps:

  • Place flank steak in the freezer until partially frozen. Slice diagonally into very thin strips, cutting across the grain.
  • In a mixing bowl, combine the cornstarch, ginger, apple juice concentrate, soy sauce, sherry, and 1/4 cup of stock.
  • Marinate the meat strips in the mixture for at least 30 minutes, stirring occasionally.(the longer, the better).
  • In a large skillet or wok, heat the remaining stock over high heat. Add the vegetables and stir-fry quickly, no more than 2-3 minutes.
  • Push the vegetables to the sides of the pan, leaving the center empty.
  • Remove the meat from the marinade and stir-fry quickly.
  • Add any remaining marinade, stir until thickened, and then stir in the vegetables.

This is a Latin-style steak stir-fry. It's quick and rustic. It can easily be adjusted to serve more or less people. Recipe courtesy of Ingrid Hoffmann!

1 tablespoon canola oil
1 -1 1/2 lb flank steak, sliced into 1 1/2 inch wide strips
1 large red onion, quartered and thinly sliced
1 large tomatoes, cored, halved and sliced
1 garlic clove, finely minced
salt & freshly ground black pepper, to taste
2 teaspoons soy sauce (I use low-sodium)
1 teaspoon red wine vinegar

Steps:

  • Heat the oil in a large wok or skillet over medium-high heat. Add the steak and stir fry until it is browned on all sides, about 8-10 minutes. Transfer steak to a plate and set aside.
  • Add the onion, tomato, garlic, salt and pepper to the same skillet and cook until the onion is soft and the tomato starts to break down, about 2-4 minutes.
  • Return the beef to the skillet and add the soy sauce and vinegar. Cook 1 minute, season with salt and pepper to taste and serve!

Nearly all the Green tomato recipes are breded & fried in butter or even deep fried. I wanted something lighter so raided the garden and put this together- We enjoyed it so I decided to post it. Use whatever peppers you want in place of the banana pepper. Use your favorite BBQ sauce. Serve as a side dish with eggs or meat of your choice.

2 roma green tomatoes, cut 1/4-inch slices
2 banana peppers, chopped
1/2 cup sweet onion, diced
1/4 cup sweet red pepper, diced
1/2 teaspoon dried oregano
1/2 teaspoon granular garlic
2 tablespoons barbecue sauce

Steps:

  • Spray a skillet lightly with oil.
  • Place over medium/high heat.
  • Add all the ingredients and stir fry for 5 minutes.
  • Do not over cook - the ingredients should be heated through but still crisp.

8 ounces fresh green beans, raw
1 bell peppers, any color or 1 cup bell pepper, mixed colors
1 teaspoon olive oil
1/4 teaspoon sea salt
1/4 teaspoon sugar

Steps:

  • Wash beans and dry thoroughly. Use fresh green beans- the longer the better for presentation. Traditionally long beans are used.
  • Trim beans at each end and slice pepper into strips equal to the size of the beans.
  • In a hot wok or skillet add oil and beans and stir fry for 1 minute.
  • Add 1/4 cup hot water. Cover and cook on high for 3 minutes.
  • Add bell pepper strips and re-cover cooking for 1 minute.
  • Add salt and sugar and stir to combine.
  • Serve immediately.
