2 1/2 pounds boneless pork butt
2 ounces unsalted butter
1/4 cup diced yellow onion
1 tablespoon chopped garlic
2 teaspoons dark chili powder
1 teaspoon smoked paprika
1/2 teaspoon dry mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 pinch cayenne
1/3 cup brown sugar
1/3 cup molasses
2 cups ketchup
2 tablespoons Dijon mustard
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
Kosher salt and freshly ground black pepper
3 Russet potatoes, large dice
2 tablespoons grapeseed oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 large portobello mushroom caps
1/4 cup grapeseed oil
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
2 tablespoons grapeseed oil
1 cup chopped bacon
1 cup diced yellow onions
Kosher salt and freshly ground black pepper
6 slices Cheddar
2 tablespoons chopped fresh parsley

Steps:

  • For the smoked pork: Preheat a smoker to 300 degrees F. using a 50/50 mixture of pre-soaked apple wood and oak woodchips.
  • Combine the granulated sugar, brown sugar, paprika, chili powder, garlic powder, onion powder, salt, pepper, cayenne pepper and dry mustard in a bowl and mix well.
  • Dry the pork and then rub the piece of meat with the spice rub, making sure to cover the entire piece. Place the pork butt directly on a rack in the smoker and cook until it reaches an internal temperature of 200 degrees F., 3 to 4 hours.
  • Remove the pork from the smoker and let it rest for 20 to 30 minutes, and then pull the meat, discarding large pieces of fat. Hold the pulled pork for later use.
  • For the BBQ sauce: While the pork is smoking, heat a pot over medium-high heat. Melt the butter and then add the onions and garlic and saute until the onions are tender. Add the chili powder, smoked paprika, dry mustard, garlic powder, onion powder and cayenne. Stir the spices into the butter and toast for about 1 minute.
  • Add the brown sugar and molasses and cook until the sugar is dissolved, 2 to 3 minutes.
  • Whisk in the ketchup, Dijon mustard, cider vinegar and Worcestershire sauce and bring to a simmer. Simmer the sauce for 30 minutes and then season with salt and pepper. Let cool slightly, and then puree in a blender.
  • For the potatoes: Preheat the oven to 400 degrees F. Toss the potatoes with the grapeseed oil, salt and pepper in a large bowl and then spread them out on a baking sheet. Bake until tender and golden brown, 20 to 25 minutes.
  • For the roasted portobello mushrooms: Remove the stems from the mushroom caps and scrape the gills out from the caps with a spoon. Starting at the outer edge of each mushroom cap, use a knife to peel the "skin," or outer layer, off the cap.
  • Arrange the mushrooms on a baking sheet and drizzle with the grapeseed oil. Season with the salt and pepper and roast the mushrooms stem-side up until the mushrooms are tender, about 10 minutes.
  • For plating: Heat a large saute pan over high heat. Heat the grapeseed oil and then add the bacon and onions and saute until cooked and tender. Season with salt and pepper and then add the pulled pork and BBQ sauce and cook until hot.
  • Divide the pork mixture and mound it on the 6 mushroom caps. Top each with a slice of cheese. Wipe out the saute pan and arrange the mushrooms inside. Add about 1/4 cup water, cover the pan, and cook to melt the cheese.
  • Divide the potatoes among 6 plates. Place the mushroom on top of the potatoes. Garnish with parsley and a pinch of freshly ground black pepper.

3 large portobello mushrooms, divided

1-1/2 cups soft bread crumbs
1/3 cup chopped pecans
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons plus 1/4 cup balsamic vinegar, divided
1 boneless pork loin roast (3 to 4 pounds)
CHERRY PORT WINE SAUCE:
1/2 cup ruby port wine or grape juice
1/2 cup balsamic vinegar
1/4 cup chicken broth
3 garlic cloves, minced
1/2 cup heavy whipping cream

Steps:

  • In a small bowl, combine cherries and 1/2 cup wine. Let stand 5 minutes. Drain cherries, reserving wine; set side., Chop one mushroom. In a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Remove from heat. Add bread crumbs, pecans, salt, pepper, 3 tablespoons balsamic vinegar, 1/2 cup cherries and chopped mushroom., Preheat oven to 350°. Starting about a third in from one side, make a lengthwise slit in the roast to within 1/2 in. of bottom. Turn roast over and make another lengthwise slit, starting from about a third in from the opposite side. Open roast so it lies flat; cover with plastic wrap. Flatten to 3/4-in. thickness; remove plastic. Spread stuffing mixture over meat., Roll up jelly-roll style, starting with a long side. Tie pork at 2-in. intervals with kitchen string. Place on a rack in a shallow roasting pan. Slice remaining mushrooms; brush with 1 tablespoon vinegar. Arrange around pork., Bake 1 hour. In a small bowl, combine remaining vinegar and reserved wine; brush over pork. Bake 1 to 1-1/2 hours longer or until a thermometer reads 160°. Let stand 10 minutes before slicing., For sauce, in a small saucepan, combine wine, vinegar, broth, garlic and remaining cherries. Bring to a boil; cook until liquid is reduced by half. Stir in cream; simmer 5 minutes. Serve with pork and mushrooms.

1 package (1 oz) dried porcini mushrooms
1 boneless pork loin roast (3 lb)
1 tablespoon butter or margarine
1 medium onion, finely chopped (1/2 cup)
1 package (8 oz) fresh baby portabella mushrooms, finely chopped
1/2 cup herb-seasoned stuffing crumbs (do not use stuffing cubes)
2 tablespoons olive or vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
Fresh sage leaves, if desired

Steps:

  • Heat oven to 375°F. In small bowl, place dried porcini mushrooms. Cover mushrooms with hot water; let stand 10 minutes.
  • Meanwhile, cut pork roast horizontally to 1/2 inch from one long side without cutting all the way through (pork will open like a book); set aside. In 10-inch skillet, melt butter over medium-high heat. Add onion; cook and stir about 1 minute or until tender.
  • Drain porcini mushrooms well; chop. Add porcini and portabella mushrooms to butter in skillet; cook about 4 minutes, stirring occasionally, until mushrooms are tender. Stir in stuffing crumbs.
  • Spoon mushroom mixture into opening in pork; close pork over stuffing and secure with string. Place stuffed pork in shallow roasting pan. Brush with oil; sprinkle with salt and pepper. Insert ovenproof meat thermometer so tip is in center of thickest part of pork.
  • Roast uncovered 45 to 55 minutes or until thermometer reads 150°F. Remove pork from pan; cover with foil and let stand 10 minutes until thermometer reads 160°F. Remove strings from pork before carving. Garnish with sage.

½ cup chopped onion
½ cup chopped mushrooms
2 stalks celery, chopped
3 cups torn day-old bread
salt and ground black pepper to taste
1 (4 pound) boneless pork loin roast
3 tablespoons water, or as needed
1 tablespoon ground thyme
1 tablespoon herbes de Provence
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Heat margarine in a skillet over medium heat; cook and stir onion, mushrooms, and celery in the hot margarine until vegetables are tender, about 12 minutes. Transfer vegetables to a bowl. Stir bread into vegetables until moistened; season with salt and black pepper.
  • Cut the pork loin almost in half lengthwise, cutting to about 1 inch from the bottom; open pork loin like a book. Cover with plastic wrap and lightly pound with a meat mallet to flatten the meat.   • Roast stuffed pork loin until an instant-read meat thermometer inserted into the center of the stuffing reads 160 degrees F (70 degrees C), 2 1/2 to 3 hours. Rest meat for 15 minutes before untying and slicing.

1 1/2-2 1/2 lbs pork tenderloin, butterflied
2 lbs portabella mushrooms, sliced
1 tablespoon butter or 1 tablespoon olive oil
1/2 cup white wine
1/4 cup fresh cilantro leaves, chopped
2 garlic cloves, smashed, divided
salt and pepper
1/2 lb broccoli floret, chopped
1/4 lb parmesan cheese, shaved about 1/8 inch thick
2 teaspoons butter or 2 teaspoons olive oil

Steps:

  • Lay out butterflied pork tenderloin, inside up.
  • Cover one half of tenderloin with one layer of shaved Parmesan, overlapped.
  • Spread chopped broccoli over cheese and sprinkle with one smashed clove garlic.
  • Dot with butter or sprinkle over olive oil.
  • Sprinkle with salt and pepper to taste.
  • Cover all with another layer of shaved Parmesan.
  • Fold unfilled half over filled half and tie together a couple of times around the middle and once length wise, with kitchen string.
  • In a large fry pan, at medium hot heat, sear on all sides, set aside, in roaster.
  • Sauce: Add butter or oil to fry pan, scrape up bits and saute mushroom slices until lightly browned, about 5 minutes.
  • Add wine, cilantro, remaining smashed garlic and salt and pepper to taste.
  • Reduce heat and simmer about 5 minutes until slightly thickened.
  • Pour a quarter of the sauce over the roast.
  • Preheat oven to 400°F, cook roast uncovered for about 45 minutes.
  • Pour remaining mushroom sauce over roast and return to oven for 10 to 15 minutes.
  • Remove tenderloin to platter, let stand for 10 minutes, then carve into half inch slices and spoon all mushroom sauce from roaster over roast slices.
  • Garnish with sprigs of cilantro.

1 (4 lb) rolled boneless pork loin roast
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1/2 teaspoon ground coriander, divided
1 (10 ounce) jar cherry preserves
2 tablespoons orange marmalade
heavy string, cut into 10 inch lengths
1/4 lb bulk pork sausage
1 3/4 cups herb seasoned stuffing mix
1 cup peeled chopped tart apple
1/2 cup hot water
1/3 cup raisins
1 tablespoon diced onion
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Buy a boneless, rolled pork loin.
  • Rolled pork loin comes in two pieces.
  • Cut each one lengthwise to, but not through, the other side.
  • Open the meat like a book and pound to 1/2 inch thickness.
  • Sprinkle each side with 1/4 teaspoons each of salt, pepper, and coriander.
  • To prepare stuffing:.
  • Cook sausage until slightly pink; drain well and pat dry with paper towels.
  • Combine sausage and the next 9 ingredients; set aside.
  • Lay out enough 10" pieces of string, spaced 2 inches apart, the length of meat.
  • Place one piece of meat on strings, with strings crossing under meat horizontally.
  • Spoon stuffing mixture evenly down center of one piece of meat.
  • Top with remaining pork rectangle.
  • Tie securely with the string at 2 inch intervals, securing sides together.
  • Trim loose ends of string.
  • Place roast on a greased rack in a shallow roasting pan.
  • Insert a meat thermometer into the thickest portion of the meat, making sure it doesn't touch fat or stuffing.
  • Bake at 325 degrees for one hour and 30 minutes or until meat thermometer registers 145 degrees.
  • Combine cherry preserves and orange marmalade; stir well.
  • Brush roast with preserve mixture.
  • Bake an additional one hour or until thermometer registers 160 degrees, basting often.
  • Allow approximately 30-35 minutes per pound.

1/2 pound fresh chorizo or bulk spicy pork sausage
10 bacon strips, diced

  • Soak planks in water at least 1 hour. In a large skillet, cook chorizo and bacon over medium heat 10-12 minutes or until chorizo is fully cooked and bacon is crisp. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan., Add pepper and onion to drippings; cook and stir over medium-high heat 3-4 minutes or until tender. Add garlic, pepper flakes and cayenne; cook 30 seconds longer. In a large bowl, combine meat mixture, vegetable mixture and cheese; set aside., Remove and discard stems from mushrooms; with a spoon, scrape and remove gills. Fill caps with meat mixture., Place planks on grill rack over direct medium heat. Cover and heat 3-4 minutes or until light to medium smoke comes from the plank and the wood begins to crackle. (This indicates the plank is ready.) Turn planks over; place mushroom caps on planks. Grill, covered, over medium heat 8-10 minutes or until mushrooms are tender.
