1/2 c butter, softened
1 c all-purpose flour
3 Tbsp heavy whipping cream
granulated sugar
FILLING
1/4 c butter, softened
3/4 c sifted confectioners' sugar
1/2 tsp vanilla extract
1 1/2 - 2 tsp heavy whipping cream
1 drop each red and green food coloring

Steps:

1. In a mixing bowl, beat the butter, flour, and cream. Cover and refrigerate for 1 hour or until easy to handle.
2. On a lightly floured surface, roll out dough to 1/8-inch thickness. Cut with a floured 1 1/4 or 1 1/2-inch round cookie cutter. Place 1 inch apart on ungreased baking sheets. Sprinkle with sugar. Prick each cookie 3 - 4 times with a fork. Don't omit the pricking. If you do, the little cookies will puff up and not make neat cookies.
3. Bake at 375 for 7 - 9 minutes or until set. Remove to wire racks to cool.
4. FILLING -- In a small bowl, combine the butter, confectioners' sugar, vanilla, and enough cream to achieve desired consistency. Remove half to another bowl; tint one portion of filling with red food coloring and the other half with green. Carefully spread filling on the bottoms of half of the cookies; top with remaining cookies. Yield: 2 dozen sandwich cookies.
5. Sometimes I bake the cookies and freeze them; then I put the filling between them just before I'm going to serve them. Works just fine!

Ingredients

sweetened whipped cream or whipped topping
2 Tbsp butter
1 Tbsp vanilla extract
2 c milk chocolate chips (or dark chocolate if you prefer)
1/2 tsp salt
4 egg yolks
3 c milk
2/3 c sugar
1/3 c cornstarch
1 deep dish pie shell or use a 10" pie pan

Steps:

1. Bake the pie shell according to package directions; cool.
2. In a 2-qt. saucepan stir together sugar, cornstarch and salt.
3. In a container with a pouring spout, combine egg yolks and milk.
4. Gradually blend milk mixture into sugar mixture.
5. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir for 1 minute; remove from heat. Stir in butter and vanilla. Add 1-3/4 cup chocolate chips and stir until chips are melted and mixture is well blended.
6. Pour into prepared pie shell. Press plastic wrap onto filling. Cool. Refrigerate several hours or until well chilled and firm.
7. Garnish with whipped cream and remaining chocolate chips.

I found this recipe 20 years ago in my mom's recipe box. It was a very old newspaper clipping, but I don't recall her ever making them. I updated it a bit and baked a cookie that my friend named by saying, "Oh, I've died and gone to heaven!"

Ingredients

1 cup softened butter
3/4 cup firmly packed dark brown sugar
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla
1 1/2 teaspoons baking powder
2 -2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup crushed toffee pieces, candy (such as Heath, Skor, etc.)
1 1/2 cups shredded coconut
1 1/2 cups semi-sweet chocolate chips
1 cup chopped pecans, toasted

Steps:

Cream butter until fluffy.
Add the sugars slowly and beat well.
Add the eggs and vanilla and beat well.
On a sheet of waxed paper thoroughly combine the flour, baking powder, soda, and salt.
Add to the butter mix, stirring just until blended.
Stir in toffee bits, coconut, chips, and pecans.
Drop the dough by tablespoons onto ungreased cookie sheets.
Bake 10-12 minutes in a preheated 350 degree oven until lightly brown around the edges.
Let them cool on the sheets a bit before removing to wire racks.
