6 large portobello mushrooms (4 to 4-1/2 inches), stems removed
1 tablespoon olive oil
1 pound bulk Italian sausage
1 can (15 ounces) pizza sauce
1 medium green pepper, chopped
1 medium onion, chopped
1/2 cup chopped fresh mushrooms
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1 cup shredded part-skim mozzarella cheese
Thinly sliced fresh basil leaves, optional

Steps:

  • Place mushrooms, stem side down, on a greased baking sheet; drizzle with oil. Bake at 350° for 20-25 minutes or until tender, turning once., Meanwhile, cook sausage over medium heat until no longer pink; drain. Stir in the pizza sauce, pepper, onion, mushrooms, Parmesan cheese and garlic. Divide among mushrooms; sprinkle with mozzarella cheese. Broil 2-3 in. from the heat for 1-2 minutes or until cheese is melted. Sprinkle with basil if desired.

4 portobello mushrooms (cleaned and stems removed)
2 tbsp olive oil
1 1/2 tsp garlic (minced)
1/4 tsp salt
pinch black pepper
1/2 cup pizza sauce
1 cup mozzarella cheese (shredded)
2 pepperettes (sliced)
1/2 tsp Italian seasoning
4 fresh basil leaves (whole or rough chopped)

Steps:

  • Preheat oven to 440°F.
  • In a small bowl add 2 tbsp of olive oil, 1 1/2 tsp of minced garlic, 1/4 salt and pinch of black pepper. Mix well. Baste the top of each mushroom cap with the oil mixture and place the mushrooms top side down on a non-stick baking sheet. Bake for 10 minutes and remove from oven.
  • Add 2 tbsp of pizza sauce, 1/4 cup cheese, 1/2 a sliced pepperette and any other desired toppings. Sprinkle with a pinch of Italian seasoning. Bake for another 10 minutes or until cheese is melted.
  • Top with a fresh basil leaf whole or rough chopped and serve.

We've reimagined and super-sized stuffed mushrooms with this flavor-packed Portobello version. Sun-dried tomatoes (we especially love the ones packed in oil), add perfect pizza flavor. And like the mushrooms, they're high in umami, giving this vegetarian dish a satisfying meaty savoriness.

Number Of Ingredients 11

4 portobello mushrooms, stems removed
3 tablespoons extra-virgin olive oil
2 cloves garlic, minced
Kosher salt
1/2 teaspoon dried oregano
1 slice white bread, crust removed and torn into very small (about 1/4 inch) pieces
1/4 teaspoon crushed red pepper flakes
3 tablespoons oil-packed sun-dried tomatoes, finely chopped
4 teaspoons tomato paste
2 ounces part-skim mozzarella, thinly sliced
6 to 8 small basil leaves, torn

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Scrape out the gills of the mushrooms with a spoon, being careful not to break the cap. Rub the mushrooms with 2 tablespoons of the oil and half the garlic. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon oregano. Place the mushrooms, gill-side up, on the prepared baking sheet, and roast until tender, 15 to 25 minutes. (If the mushrooms are thicker than 1 inch, they will take longer to cook.)
  • Meanwhile, toss the bread pieces in a medium bowl with the remaining garlic, 1 tablespoon olive oil and 1/4 teaspoon oregano, 1/4 teaspoon salt and the red pepper flakes. Transfer them to a medium skillet over medium heat, and stir until they turn golden and crisp on the edges, 5 to 6 minutes. Return the croutons to the bowl.
  • While the mushrooms are still hot, pat them dry with a paper towel. Top each with 1 teaspoon tomato paste, spread evenly, and slices of mozzarella to cover. Divide the sun-dried tomatoes and croutons between the 4 mushrooms, and place in the oven to melt the cheese, 4 to 5 minutes. Sprinkle with basil leaves.
  • Cut each mushroom into 4 to 8 pieces, depending on the size of the mushroom.

Originally from Pillsbury, I adapted this recipe to something a bit different than the original. Made them for a party recently, and they disappeared faster than you can say 'Yummy'!

6 ounces fresh mushrooms (portobello, crimini)
1 tablespoon butter
2 tablespoons white wine
2 garlic cloves, minced
3/4 teaspoon dried thyme
1/4 teaspoon dried parsley
1 dash cayenne pepper
1/4 cup sliced green onion
1 teaspoon Dijon mustard
1 (8 ounce) can refrigerated crescent dinner rolls
6 ounces brie cheese

Steps:

  • Preheat oven to 375°F Spray 24 mini muffin cups with cooking spray.
  • Clean mushrooms if needed and chop finely.
  • In a small skillet, combine chopped mushrooms, butter, wine, garlic, thyme, parsley and cayenne. Cook over medium heat for 5-6 minutes or until mushrooms are tender. Stir in green onions and mustard.
  • Unroll crescent dough into 4 rectangles. Press perforations firmly to seal. Cut each rectangle into 6 pieces (for a total of 24).
  • Press 1 square of dough into each muffin cup, letting the corners stick up above the edges.
  • Divide mushroom mixture evenly among cups, about 1 1/2 tsp per cup.
  • Bake for 10-12 minutes or until light golden brown. While baking, cut brie into 24 pieces.
  • Remove cups from oven and place 1 piece of brie over each cup.
  • Return to oven and bake an additional 2-4 minutes or until dough is golden brown and cheese is softened.
  • Cool slightly before serving.

12 large portobello mushrooms, stemmed and gills removed
6 tablespoons balsamic vinegar
1/2 cup extra-virgin olive oil, divided
Sea salt, preferably gray salt and freshly ground black pepper
1 cup fresh bread crumbs
1 cup grated Parmesan
4 tablespoons freshly chopped parsley leaves
4 tablespoons freshly chopped basil leaves
12 (1/2-inch) slices fresh mozzarella, roughly 1 to 1 1/2-ounces per slice

Steps:

  • Preheat oven to 425 degrees F.
  • Toss the portabellas in the balsamic vinegar, 1/4 cup of olive oil, gray salt and pepper, to taste. Arrange the mushrooms on a baking sheet and roast in the oven for about 10 minutes. Remove from the oven and let cool to room temperature.
  • While the mushrooms are cooling mix together the bread crumbs, Parmesan, herbs and the remaining 1/4 cup olive oil.
  • Place 1 slice (2 if the mushrooms are large) of mozzarella in the cupped side of each mushroom. Distribute the bread and herb mixture evenly over the mushrooms and return to the oven to roast for 5 to 6 minutes or until the mozzarella is molten and the bread and herb topping a nice golden brown. Serve either hot or at room temperature and enjoy.

1 tablespoon extra-virgin olive oil, plus more for the dish
3 portobello mushroom caps
1/4 teaspoon red pepper flakes
3 cloves garlic, smashed
1 28-ounce can diced tomatoes
4 fresh basil leaves
Kosher salt and freshly ground pepper

2 cups panko (Japanese breadcrumbs)
1 cup grated parmesan cheese
2 tablespoons chopped fresh parsley
4 large eggs
1 cup all-purpose flour
Peanut oil, for frying
4 ounces buffalo mozzarella cheese, sliced

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil a 9-by-13-inch baking dish. Scrape out the gills of the portobellos with a spoon, then halve the mushrooms horizontally to make 6 thin rounds.
  • Heat the olive oil in a saucepan over medium-high heat. Add the red pepper flakes and garlic; cook 1 minute. Reduce the heat to low, add the tomatoes and basil and cook until the garlic is soft, about 15 more minutes. Transfer to a food processor and puree until smooth. Season with salt and pepper.
  • Combine the panko, 1/2 cup parmesan, 1 tablespoon parsley, 1 teaspoon salt and 1/2 teaspoon pepper in a shallow bowl. Whisk the eggs and 2 tablespoons cold water in another bowl. Put the flour in a third bowl.
  • Dredge the mushrooms in flour, shaking off the excess. Dip in the eggs and then in the panko mixture, pressing to coat both sides. Heat 1/2 inch peanut oil in a large skillet over medium-high heat. Working in batches, fry the mushrooms until golden, about 2 minutes per side. Drain on paper towels.
  • Spread a layer of the tomato sauce in the prepared baking dish. Add the fried mushrooms, then cover with the remaining tomato sauce. Top with the mozzarella and the remaining 1/2 cup parmesan. Bake until browned, 20 to 25 minutes. Sprinkle with the remaining 1 tablespoon parsley.
