QUICK SALMON SALAD



Quick Salmon Salad image

This is a very quick and tasty great salmon salad that can be eaten as a sandwich on thickly sliced specialty bread (fantastic on foccacia). To serve as a salad, mound mixture on a bed of lettuce, or on an avocado half.

2 (6 ounce) cans pink salmon, drained
½ cup finely sliced green onions
½ cup finely chopped celery
¼ cup mayonnaise
¾ teaspoon lemon juice
¾ teaspoon dried dill
¾ teaspoon seasoned salt

Steps:

  • In a bowl, combine salmon, green onions, celery, mayonnaise, and lemon juice. Season with dill and salt. Mix well.

3 california avocados
lettuce
1 (15 ounce) can salmon, chilled
2 tablespoons finely chopped green onions
2 tablespoons finely chopped celery
1/3 cup olive oil
1 1/2 tablespoons lemon juice
1 garlic clove, minced
1/8 teaspoon dry mustard
1/4 teaspoon salt
1 dash pepper
1 1/2 teaspoons minced parsley

Steps:

  • Halve, pit and peel avocados.
  • Arrange on lettuce-lined chilled plates.
  • Drain salmon and separate into chunks.
  • Toss salmon lightly with green onion and celery.
  • Fill avocados with salmon mixture.
  • Combine remaining ingredients in a jar with tight fitting lid.
  • Cover and shake vigorously.
  • Drizzle over salmon mixture.
  • Serve immediately.

2 tablespoons fat-free mayonnaise
2 tablespoons plain low-fat yogurt
1 cup chopped celery
2 tablespoons capers
⅛ teaspoon ground black pepper
8 leaves lettuce

Steps:

  • Crumble the salmon into a 1 quart bowl, removing any bones or skin.
  • In a small bowl combine the mayonnaise, yogurt, celery, capers and pepper. Mix well and then add to salmon and toss. Serve on a bed of lettuce leaves.
