750 ml whole milk
10 whole cardamom pods
8 tablespoons sugar
2 tablespoons long grain rice
1 egg yolk
2 tablespoons sultanas
2 tablespoons blanched slivered almonds
150 ml whipping cream

Steps:

  • Combine milk, cardamom pods and 6 Tbsp of the sugar in a saucepan. Bring to boil, turn to low and stir in rice. Continure stirring until sugar dissolves. Cover and cook over a very low heat for 1 hour. Remove from heat.
  • Put egg yolk in a cup and beat lightly. Add 2 Tbsp hot pudding to the cup and mix slowly. Pour mixture back into the pan and stir through.
  • Stir in remaining sugar. Bring to a simmer and cook, stirring every so often until pudding is thickened, about 5 to 7 minutes. Remove and discard cardamom pods. Add sultanas and half the slivered almonds. Mix well and let cool completely.
  • Whip cream until stiff. Reserve 3 Tbsp and fold in rest into cooled rice pudding. Transfer to a 1/5 litre gratin dish. Sprinkle remaining almonds on top.
  • Preheat grill (broiler) to maximum and place pudding under it briefly until lightly browned. Leave to cool and refrigerate until ready to serve.

1 3/4 pints rich milk
10 cardamom pods
3 tablespoons finely ground rice
6 to 7 tablespoons sugar
4 tablespoons slivered, blanched almonds
2 tablespoons finely slivered, finely chopped unsalted pistachios

Steps:

  • Pour the milk into a wide, preferably non-stick, pan. Add the caradamom pods and bring to a boil without letting the milk spill over. Quickly turn heat to medium, the milk should simmer as vigorously ass possible without boiling over, and cook, stirring now and then, for about 15 to 20 minutes or until milk has reduced to 1 pint. Sprinkle the ground rice slowly into the pan, stirring as you go. Add the sugar as well. Cook, stirring now and then , for 7 to 8 minutes or until the pudding has thickened to a creamy consistency, turning the heat down a bit towards the end of this cooking time. Turn off the heat. Pick out and discard the cardamom pods. Set a small cast iron frying pan over medium heat. When very hot, put in the almonds. Stir, shake or toss them until they are lightly roasted and turn golden. Set them aside. Put the pistachios into the same hot frying pan and roast them even more briefly until they turn just a shade darker. Set aside. When the pudding has cooled to lukewarm, stir the almonds into it. Ladle the pudding into 4 to 6 small serving cups (the kind used for caramel custard or creme brulee). Sprinkle the top with the pistachios and cover with cling film. Refrigerate for 2 to 3 hours until cold and set.

3 cups cooked basmati rice
1 1/2 cups vanilla soymilk
1 1/2 cups unsweetened coconut milk
1/2 cup sugar
1/4 teaspoon ground cardamom
1 pinch salt
2 teaspoons rose water
1/4 cup slivered almonds
1 tablespoon cornstarch dissolved in 1 tbsp water

Steps:

  • Place the rice, soy milk, coconut milk and sugar in saucepan, bring to a simmer over low heat and simmer gently, stirring occasionally, for 20 minutes or until most of the liquid is absorbed and the rice is very soft.
  • Add cardamom, salt, rose water, almonds and the cornstarch mixture and simmer for 5 minutes longer or until smooth and creamy.
  • Stir, then taste and adjust seasoning in necessary.
  • Serve warm or refrigerate and serve cold.

1/4 teaspoon salt
1/3 cup light brown sugar
1/3 cup golden raisin
1/3 cup chopped almonds, plus more
chopped almonds, for garnish
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
6 drops rose water (optional)

Steps:

  • Bring soymilk, rice and salt to a boil in saucepan. Reduce heat to medium-low, and simmer 15 to 20 minutes, or until rice is tender. stirring frequently.

2 tablespoons butter
1/2 cup arborio rice
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
2 1/2 cups whole milk
2 tablespoons sugar
1/4 cup unsalted shelled pistachio, toasted
2 teaspoons liquid honey

Steps:

  • In a saucepan, melt the butter at medium heat. Add rice, cardamom, cinnamon and stir to coat the rice. Add milk and sugar and bring to boil. Reduce heat, cover and let simmer, stirring often, 25 to 30 minutes or until almost all liquid has absorbed and rice is tender. (You can prepare this step in advance, let cool and put in an hermetic container. It will be good up to the next day in the fridge). Serve the rice pudding warm, sprinkle with pistachios and honey.

1/2 cup short-grain rice
1 1/2 cups water
4 cups whole milk, divided (plus about 6 tablespoons more if serving cold)
1 pinch kosher salt
1/3 cup whole almond, chopped small
1/4 teaspoon ground cardamom
4 -5 tablespoons sugar
1/2 teaspoon rose water
2 -3 tablespoons sliced almonds, lightly toasted for garnish
1 -2 tablespoon dried cranberries, for garnish

Steps:

  • In a medium saucepan, combine rice and water and bring to a boil; cover and cook, over medium-low heat, for 5 minutes, stirring frequently.
  • Uncover, increase heat to medium, and cook, stirring occasionally, until nearly all the liquid has evaporated, about 10 minutes.
  • Add 3 1/2 cups milk and the salt and bring to a boil, over medium-high heat, stirring often; reduce heat to medium-low and cook, uncovered, stirring frequently, until rice is very soft, about 20 minutes.
  • Stir in the remaining 1/2 cup milk, simmering on low heat and stirring; stir in the almonds and cardamom until pudding is thickened to your liking, about 5 minutes (you'll probably want the pudding creamy, not soupy or dry).
  • When the rice is cooked, add 4 tablespoons, or so, of sugar and cook 1 minute to dissolve the sugar; remove from heat and stir in the rosewater.Serve hot or cold, garnished with toasted sliced almonds and dried cranberries.
  • If you are serving cold, cool it to room temperature, cover, and refrigerate (it will thicken as it cools); to serve, stir in a little more milk to achieve the consistency you want.
