1 tablespoon vegetable oil
6 (1-inch thick) boneless pork loin chops
1 ½ cups water
¼ cup margarine
1 (6 ounce) package pork stuffing mix
1 (21 ounce) can apple pie filling with cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat vegetable oil in a large skillet over medium-high heat; brown pork chops in the hot oil, 3 to 4 minutes per side.
  • Bring water and margarine to a boil in a saucepan; add stuffing mix and cover. Remove saucepan from heat and let stand 5 minutes to absorb water. Remove cover and fluff stuffing with a fork.
  • Spread apple pie filling into the prepared baking dish; layer pork chops onto pie filling layer. Spoon stuffing over pork chops. Cover baking dish with aluminum foil.
  • Bake in the preheated oven for 35 minutes. Remove aluminum foil and cook until pork is no longer pink in the center, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 tablespoon Irvine Spices Roasted Garlic Pepper Seasoning
1 (3-pound) pork loin
1 tablespoon vegetable oil (approximately)
2 pounds dry bread cubes
1 pound melted butter
1 quart apple juice
8 apples, small dice
1 1/2 cup fresh cranberries
2 tablespoons poultry seasoning
Salt and freshly ground black pepper
16 ounces prepared brown sauce or gravy

Steps:

  • Preheat oven to 350 degrees F.
  • Rub garlic pepper seasoning into pork loin. Heat a small amount of oil in a pan and sear all sides of meat. Roast covered in oven until fork tender, at least 35 minutes. Combine bread cubes, butter, apple juice, apples, cranberries, poultry seasoning, and salt and pepper in a bowl and mix well. Bake stuffing uncovered in oven until dry and fluffy, 35 to 40 minutes. Let pork rest before slicing. Lay slices of pork loin over stuffing and finish with any type of brown sauce.
  • *Chef's Note: You could also substitute 1 cup of dried cranberries for the fresh, if you'd like, which are a little sweeter and more intense in flavor.

For the Apple Stuffing:
1/2 cup celery (diced)
1/2 cup sweet onion (diced)
2 tablespoons butter (1/4 stick)
1 large apple (Granny Smith, cut into 1/2-inch dice)
1 medium clove garlic (pressed)
1 cup chicken broth
4 cups stuffing mix
1/4 cup apple juice
2 teaspoons fresh sage (minced)
2 teaspoons fresh thyme leaves
For the Pork Roast:
1 large clove garlic (cut into slivers)
1 5 to 7-pound pork shoulder roast (deboned, see Note below)​
Kosher salt
Black pepper (freshly ground)
1 3/4 cups chicken broth
1/2 cup apple juice

Steps:

  • Gather the ingredients.
  • Preheat oven to 375 F. Line a large baking pan with heavy-duty foil or have a large, heavy with a lid ready to go.
  • In a large pot, gently saute celery and sweet onion in butter until onion is translucent. Add and pressed garlic ; cook about 1 minute longer, stirring often. Add chicken broth and apple juice. Bring to a boil. Remove from heat. Stir in sage and thyme . Then add stuffing mix, tossing gently to absorb the liquid. Let rest to cool.
  • Place the deboned pork shoulder roast fat-side up on a cutting board. Sprinkle liberally with kosher salt and freshly ground black pepper . Turn roast over and again sprinkle liberally with salt and pepper. You may need to add a few cuts so that it lies open and flat.
  • Poke holes in the meat with a sharp knife and insert garlic slivers into the pork .
  • Pack cooled stuffing on top of the open pork roast. Roll one side to the other, lengthwise, to enclose the stuffing and secure with kitchen twine. Place roast seam-side down in the baking pan or Dutch oven. Pour chicken broth and apple juice around the bottom. Cover with a layer of heavy-duty foil and seal edges to the rim of the pan or cover with a tight-fitting lid.
  • Bake about 2 hours. Remove foil and bake an additional 30 minutes until skin is browned. Center should read at least 170 F with a meat thermometer. Let rest 15 minutes before slicing to serve.​ Note: Some butchers will debone the pork shoulder roast at no extra cost, while others will charge a higher price. It's easy to debone the roast yourself in about 15 minutes.

60 g currants
20 g unsalted butter
olive oil
1 onion
2 cloves of garlic
2 apples
100 g stale rustic-style bread
6 sprigs of fresh thyme
6 sprigs of fresh sage
1.5 kg boneless higher-welfare pork loin
250 ml dry cider
2 leeks
½ a Savoy cabbage

Steps:

  • Preheat the oven to 200°C/425°F/gas 7. Put the currants in a bowl, cover with warm water and leave to soak.
  • Melt the butter and 1 tablespoon of oil in a saucepan over a medium heat. Peel and finely chop the onion and garlic, then add to the pan and sauté for 8 to 10 minutes, or until softened. Meanwhile, peel core and dice the apples, then remove the crusts from the bread and blitz to breadcrumbs.
  • Add the apple to the pan and allow to soften. Pick the thyme and sage leaves straight into the pan, then drain the currants and add to the pan along with the breadcrumbs. Cook for 3 to 4 minutes, until the bread is golden brown, then remove from the pan and set aside to cool.
  • Place the pork loin on a wooden board. Score the skin with a sharp knife in a criss-cross pattern. Next, butterfly the loin by laying it, skin-side down, on your board and making a slice down one side of the pork, where the skin slightly comes away from flesh. Continue to make long slices all the way down the pork and slowly roll it out until the end, almost like unrolling a carpet.
  • Spread the cooled stuffing mixture over the flesh and season well with sea salt and black pepper. Gently roll the loin back into its original form, ending up with the cut side on the bottom and the skin on top.
  • Tightly tie 3 or 4 pieces of string around the pork to make sure no stuffing leaks out. Season the skin.
  • Place in a roasting tin, add the cider and 200ml of water and pop in the oven for 15 minutes, before turning down to 180°C/350°F/gas 4 and cooking for 1 to 1¼ hours. Trim and wash the leeks, then chop into large chunks. Shred the cabbage and add to the roasting tin along with the leek chunks for the last 45 minutes.

3 -4 lbs boneless pork loin
2 apples, peeled and diced
1/2 cup raisins or 1/2 cup craisins
prepared stuffing, homemade (4 servings)
1 cup apple juice
1/2 cup brown sugar

Steps:

  • With a knife sharpener, poke a hole through the roast to make a tunnel.
  • Then take a knife and cut through until the hole is wide enough to stuff.
  • In a large bowl, mix together apple juice and brown sugar.
  • Place roast in bowl and turn a few times.
  • Let sit in fridge fat side up for about an hour.
  • In the meantime, peel and dice apples.
  • Start making stuffing, adding apples and raisins before adding the stuffing mix so they get soft.
  • Let apple stuffing cool while the pork in in the fridge.
  • Preheat oven to 350°F .
  • Line a roasting pan with heavy duty foil.
  • Remove pork from fridge and Pour some of the marinade into the foil lined pan.
  • Just enough to coat the bottom.
  • Discard the rest.
  • Start stuffing the roast.
  • It's easiest to use your hands.
  • Make sure you stuff it way down so you don't forget the middle.
  • Bake about 20 minutes per pound - 170 degrees using a meat thermometer.
  • Remove from oven and let stand 10 minutes.
  • Carve 1 1/2 inches wide.

Steps:

2 unpeeled red baking apples, sliced
2 teaspoons all-purpose flour

4 bone-in pork loin chops, 3/4 inch thick (about 2 lb), trimmed
1 cup apple juice or apple cider

1/4 cup sweetened dried cranberries
1 tablespoon chopped fresh parsley

Steps:

  • Heat oven to 375°F. Brush 1/2 teaspoon butter in bottom of 13x9-inch (3-quart) glass baking dish. Spread apple slices in dish. In small bowl, mix flour, brown sugar and cinnamon; sprinkle over apples. Sprinkle seasoned salt on both sides of pork; place pork over apples.

1 tablespoon unsalted butter and 1/4 cup olive oil
1/2 cup finely chopped onion, and 3/4 cup chopped celery
1/4 cup plus one tablespoon mixed chopped parsley and thyme
2 1/4 teaspoons ground coriander
1/2 cup plus 3 tablespoons chicken stock
Coarse salt and freshly ground pepper
4 bone-in pork chops (9 ounces each), cut horizontally to the bone
2 garlic cloves, minced
1/4 cup dry sherry
1/4 cup olive oil
3/4 cup chopped celery

Steps:

  • Preheat oven to 350 degrees. Toast bread cubes on a baking sheet until golden, about 7 minutes. Heat butter and 1 tablespoon oil in a 12-inch ovenproof skillet over medium heat. Cook onion, stirring, until soft, about 3 minutes. Add celery; cook 1 minute. Transfer to a bowl. Reserve skillet. Toss bread, herbs, 1/4 teaspoon coriander, and 3 tablespoons stock with onion mixture. Season with salt and pepper.
  • Stuff chops. Using a fork, mix and mash garlic, 2 teaspoons coriander, 1/2 teaspoon salt, and 1 tablespoon oil; rub onto pork. Heat 2 tablespoons oil in skillet over medium-high heat. Cook pork until golden brown, 2 to 3 minutes; flip, and transfer skillet to oven. Cook until pork registers 155 degrees, about 15 minutes. Transfer to a plate; cover.
  • Add sherry and 1/2 cup stock to skillet. Cook over medium-high heat, stirring, until reduced by half. Serve with pork.

Why anyone would make Stove Top after making this, I just wouldn't understand. I made this recipe over 6 years ago and couldn't believe the ease or how it tastes! It's a Thanksgiving tradition now. I'm not a fan of apples baked in foods, but the sweetness of them is so good and gives the dish a great color. The recipe is from a cookbook called "Treasury of Christmas."

1 tablespoon chopped parsley
2 teaspoons poultry seasoning

  • In large skillet, cook celery and onions in margarine until tender.
  • Add water and bouillon; cook until bouillon dissolves.
  • In large bowl, combine remaining ingredients.

800 g pork tenderloin
1 teaspoon sea salt
1 teaspoon pepper
1/2 tablespoon butter
1 apple, peeled, cored and sliced
150 g smoked bacon or 150 g pancetta, chopped
1 onion, chopped
1 garlic clove, chopped
1 teaspoon dried thyme
1/2 cup breadcrumbs
2 tablespoons olive oil
100 ml balsamic vinegar
1/4 teaspoon smoked red paprika
1/2 teaspoon redcurrant jam (or similar jam)
100 ml chicken stock (from a quarter cube)

Steps:

  • Season the pork on both sides with sea salt and freshly ground black pepper and set aside.
  • Cook the apple in butter, without stirring for a few minutes until it starts to caramelise. Toss and cook for a few minutes more until caramelised all over. Remove from the pan and set aside.
  • Add the chopped bacon or pancetta to the same pan and fry for 3-4 minutes. Add the onion and garlic and gently fry with the pancetta until soft.
  • Add caramelized apples, thyme and bread crumbs, mix and combine, fry for 1-2 minutes. Set aside to cool slightly.
  • Make a 2.5 cm deep incision down the length of the tenderloin; do not cut all the way through. Open the meat like a book so the tenderloin lies flat. Pound with the flat side of a meat mallet until about 1 cm thick.
  • Spread the apple mixture evenly along the middle and starting with a long side, tightly roll up the tenderloin. Secure with metal or wooden toothpicks.
  • Heat the olive oil in a frying pan and brown the pork on all sides for 4-5 minutes. Then place the pork in the oven and cook for about 50 minutes on 160°C, basting with its juices from time to time. When the pork is cooked, remove the meat from the pan and rest in a warm place for 15-20 minutes, covered with foil.
  • Meanwhile, for the balsamic reduction, heat the balsamic vinegar in a small pan and simmer to reduce to about half. It will have a syrupy consistency. Add smoked paprika, jam and meat broth, stir to combine. Cook some more to obtain the desired consistency.
  • Serve the pork loin in slightly overlapping slices, with a little of the sauce poured over along and with the rest of the sauce served in a warm jug.

The pork chops turn out juicy and are complimented by the stuffing flavored with apples, garlic, onions and savory seasonings. In my opinion, homemade stuffing rivals any store-bought mix. The stuffing under the pork chops is moistened and flavored by the meat juices while the stuffing on the surface is crispy and buttery--my favorite part! If you desire all of your stuffing to be moist, cover the baking pan with aluminum foil while in the oven. Enjoy!

  • Spoon remaining stuffing atop each pork chop, covering each evenly.
  • Bake for 35-40 minutes or until chops are done or juices run clear when pierced with a fork.
