1/4 cup brown sugar
2 tablespoons chili powder
Kosher salt and freshly ground black pepper
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 racks baby back ribs
1 cup low-sodium chicken broth
2 tablespoons apple cider vinegar
1 cup barbecue sauce

Steps:

  • Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
  • Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.
  • Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.

My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

5 pounds bone-in country style pork ribs
kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 tablespoons canola oil
2 medium yellow onions (, sliced 3/8" thick)
3/4 cup ketchup
3/4 cup water
1/2 cup granulated sugar
1/3 cup dry sherry wine
2 tablespoons apple cider vinegar
1 1/2 tablespoons soy sauce
1 1/2 tablespoons Worcestershire sauce
2 cloves garlic (, pressed or minced)
1 teaspoon kosher salt
3/4 teaspoon paprika
3/4 teaspoon chili powder

Steps:

  • Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
  • Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
  • Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
  • While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
  • Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
  • Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
  • Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

2 cups soy sauce
1/2 cup light brown sugar, packed
1 tablespoon dark molasses
1 teaspoon salt
5 pounds meaty pork ribs
One 14-ounce bottle ketchup
One 12-ounce bottle chili sauce
1/2 cup light brown sugar, packed
1 teaspoon dry mustard

Steps:

  • For the ribs: In a medium saucepan, combine the soy sauce, brown sugar, molasses, salt and 1 cup water. Bring to a boil and set aside to cool to room temperature.
  • Put the ribs in a large, turkey-sized baking bag or sealable plastic bag. Support the bag in a 12-by-14-inch baking pan. Pour the marinade over the ribs and seal the bag. Marinate the ribs in the refrigerator for a few hours, turning the bag occasionally to thoroughly coat the meat.
  • Preheat the oven to 375 degrees F.
  • Drain and discard the marinade. Cut four slits in the top of the baking bag, if you are using one. Otherwise, remove the ribs, transfer them to the baking pan, and cover the pan with foil or a lid. Bake for 2 hours.
  • For the barbecue sauce: While the ribs are baking, blend the ketchup, chili sauce, brown sugar, dry mustard and 1/3 cup water in a large saucepan. Bring the mixture to a boil, stirring to dissolve the sugar, then remove from the heat.
  • When the ribs are cooked and tender, remove them from the baking bag. Lower the oven temperature to 350 degrees F.
  • Brush the ribs on both sides with the barbecue sauce and return them to the oven to bake, uncovered, for 30 minutes longer. Just before serving, throw the ribs under the broiler to give them a bit of a char.

2 tsp garlic powder ((sub with onion powder))

1 tbsp olive oil
1/2 cup apple cider vinegar ((Note 3))
1 1/2 cups tomato ketchup ((or Aussie tomato sauce))
1/2 cup water ((or use remaining apple cider!))
1 1/2 tbsp molasses (, orginal (not blackstrap, Note 4))
1/3 cup brown sugar
2 tsp mustard powder

2 tsp Worcestershire sauce

Steps:

  • Combine the Rub ingredients and rub onto both sides of the ribs (most on meaty side). Set aside to marinate for 20 minutes (or overnight).
  • Preheat oven to 160°C/320°F (all oven types).
  • Place ribs on a tray in a single layer. Pour apple cider underneath the ribs, cover with foil then bake for 1 hour 30 minutes or until the meat is pretty tender (Note 5).
  • Remove from oven, turn up to 180°C/350°F. Remove foil, drizzle with olive oil, then return ribs to oven for 15 minutes or until rub becomes nice and crusty.
  • Line a new tray with foil then baking / parchment paper (you'll thank me later).
  • Remove ribs from oven, transfer to lined tray. Pour any juices from tray over the ribs.
  • Flip ribs so the bonier side is up. Slather with Barbecue Sauce, then bake 10 minutes.
  • Remove from oven, then turn ribs over so the meaty side is up. Slather with Barbecue Sauce, bake 5 minutes. Repeat 2 or 3 more times until you've got a thick glaze on the ribs.
  • Cut ribs into individual or multiple rib portions and serve with remaining Barbcue Sauce!

Low and slow cooking make these oven-baked ribs fall off the bone tender. Once baked, we like to add our sweet and spicy barbecue sauce to the ribs, but use whatever you love. For the most tender ribs, we remove the thin membrane covering the back of the rack. Depending on where you have purchased ribs, this may already be done for you. If not, instructions are in the notes section below. FAQ: We call for baby back ribs in the recipe, but other types of ribs (spareribs, country-style, St. Louis-style) will work with this recipe. Cook time should be similar, we recommend that you check on the ribs while they cook to see how they are progressing. FAQ: Doubling or tripling the recipe below should not change the recipe method or bake time. You might need to use two pans for baking.

2 to 2 1/2 pounds baby back pork ribs
Salt and black pepper
1 tablespoon olive oil
1/4 cup finely diced onion
1/2 teaspoon ground cumin
1/2 cup ketchup, try our homemade ketchup recipe
1 tablespoon hot chili sauce (suggestion Sriracha)
2 tablespoons light brown sugar
1 tablespoon apple cider vinegar
Salt and ground pepper, to taste

Steps:

  • Heat oven to 275° Fahrenheit (135C).
  • If the ribs still have the thin membrane covering the back of the rack, remove it. See how in the notes section below.
  • Season both sides of the ribs with a generous amount of salt and pepper. If you are using a spice rub, add season the ribs with it now. Place the ribs, meat-side up, into a large roasting pan or rimmed baking sheet. (It may be necessary to cut the ribs in half for them to fit into the pan).
  • Cover the pan or baking sheet tightly with aluminum foil, and then bake until the meat falls easily from the bones, 2 ½ to 3 ½ hours. We like to check the ribs after 2 hours to see how they are progressing. The ribs are done when the meat is cooked through and tender.
  • While the ribs bake, make the barbecue sauce. Heat the olive oil in a saucepan over medium heat.
  • Add the onions and cook until soft and translucent, 5 to 8 minutes. Stir in the cumin and cook for an additional 30 seconds.
  • Add the ketchup, hot chili sauce, brown sugar, and apple cider vinegar. Stir to combine, season with salt then cook for 2 minutes. Set aside in preparation for the ribs to finish roasting.
  • Remove the ribs from the oven, discard the aluminum foil and generously brush both sides with barbecue sauce.
  • Optional: Move an oven rack near the top of the oven. Turn broiler to high and broil the ribs for 3-4 minutes, just until the barbecue sauce begins to caramelize. (Keep a close eye on the ribs while they broil so the sauce does not burn.)
  • Store baked ribs, in an airtight container, in the refrigerator for up to 3 days. Freeze, wrapped in foil or freezer paper and in an airtight container, for up to 3 months. Thaw in the refrigerator, and then reheat.
  • To reheat the ribs, wrap in foil or parchment paper and place into a 300°F oven until warmed through, about 30 minutes. If you have some leftover, slather some extra sauce that's been warmed over the ribs before serving.

2 slabs pork spare ribs, 3 pounds each
Kansas City Barbeque Sauce, recipe follows
2 cups brown sugar
1/2 cup dry mustard
1 tablespoon cayenne pepper
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon salt
2 teaspoons freshly ground black pepper
2 tablespoons vegetable oil
1 (about 2/3 cup)small onion, finely diced
3 cups water
1 cup (2 (6-ounce) cans) tomato paste
1/2 cup brown sugar
2/3 cup apple cider vinegar
1/4 cup molasses
1/2 teaspoon cayenne pepper
1/4 teaspoon smoked paprika
1 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Remove the thin white membrane off of the bone-side of the ribs. Mix together the brown sugar, dry mustard, cayenne, paprika, garlic powder, onion powder, salt and pepper in a small bowl. Massage the rub into the ribs and let sit for 1 hour or up to overnight.
  • If cooking on the grill, place the ribs meat-side down next to medium-hot coals that are about 225 degrees F. The indirect heat will cook them slower, making them tender. Allow to cook for 1 hour. Turn ribs every half hour and baste with the Kansas City Barbeque Sauce. Cook until the ribs are tender, about 3 to 4 hours.
  • If cooking indoors, place in a roasting pan with a rack. Slather the ribs with the Kansas City Barbeque Sauce and tent a piece of aluminum foil over them. In a preheated 350 degrees F. oven, place the ribs, basting with the sauce every 30 minutes and removing the foil for the last 30 minutes and cooking until fork tender, about 2 1/2 to 3 hours.
  • In a small sauce pot on medium-high heat, heat the oil and add the onion, cooking until translucent.
  • Add the remaining ingredients in a large bowl and mix together. Add to sauce pan and let simmer for 30 to 45 minutes. Use to baste the pork spare ribs.

3 lbs country-style pork ribs, cut into individual ribs
2 tablespoons olive oil
salt
fresh ground pepper
2 medium onions, halved and thinly sliced
1 cup tomato puree
3 large garlic cloves, minced
2 tablespoons tomato paste
1/2 teaspoon herbes de provence
ground allspice, a pinch
8 -10 ounces white button mushrooms, halved (or quartered)
chopped fresh flat leaf parsley

Steps:

  • Pat the ribs dry with paper towels.
  • In a large skillet, heat the oil over medium heat.
  • Add as many of the ribs as will fit in the pan without touching.
  • Cook them in batches, turning occasionally, until nicely browned on all sides, about 20 minutes total.
  • Place the browned ribs in a large slow cooker.
  • Sprinkle with salt and pepper to taste.
  • Spoon off all but 2 T of the fat from the skillet.
  • Add the onions to the skillet and cook for 10 minutes, or until tender.
  • Stir in the tomato puree, garlic, tomato paste, herbes de Provence, and allspice.
  • Bring the sauce to a simmer, stirring well.
  • Scrape the contents of the skillet into the slow cooker.
  • Cover and cook on LOW for 8 hours, or until the meat is tender and coming away from the bones.
  • When the ribs are almost done, stir in the mushrooms.
  • Cover and cook for 30 minutes more.
  • Discard any loose bones and skim off the fat.
  • Sprinkle with parsley and serve hot.

Fall off the bone ribs that have a sweet but spicy flavor. Overall easy to make, majority of the work done ahead of time and then just let them cook away on the barbe'. Got this recipe from a friend about 30 years ago and have kept it for all this time cause it is the best flavor I've ever had.

3 -3 1/2 lbs baby back pork ribs
1/4 cup soy sauce
1/3 cup lemon juice
1/3 cup white Karo syrup
2 -3 garlic cloves (crushed or finely diced)
1/4 teaspoon dry mustard

1/4-1/2 teaspoon Tabasco sauce

Steps:

  • Prepare Marinate by combining all the ingredience together - Pour over the ribs and marinate at least one day -- overnight is perfect.
  • Next day sear ribs on barbe until very brown, place them in a large pan and pour the remaining marinade over the ribs and cover with foil. Cook pan directly on barbe for approximately 45 minutes to one hour removing the foil for about the last 15 - 20 minutes.

This was my favorite dish when I was a kid. I also made it often when we were first married, and my husband still requests it! It's great with chicken breast, too. Just cut the baking time to 30 minutes. Serve with rice. UPDATE: I'm editing the amount of water in this recipe to 1/4 cup. If you're NOT using very lean chops, you can omit it all together.
