  • Pork Loin Chops. Pork loin chops are portions of the pig that come from the loin. There are a few different cuts that you can get from this area, but regardless, these chops will taste delicious broiled, pan-fried, or grilled.
  • Pork Shoulder Chops. There are also shoulder chops that you can consider if you want a pork chop. This is a fattier cut, but it will also be a bit tougher than loin chops because they come from the shoulder.
  • Pork Cutlets. In some stores, you will find pork cutlets labeled as boneless pork chops. While this is sometimes true, a pork cutlet is typically a bit leaner than a loin chop.
  • Pork Spare Ribs. Spare ribs are the actual ribs that are located on the underside of the pig. These ribs are not the meatiest rib option, but they are very tender, especially if they are cooked over low heat for a long period of time.
  • Pork Country-Style Ribs. Pork country-style ribs are actually the meatiest ribs that you will get at the market, and the reason that these ribs have so much meat is that they are not actually ribs at all.
  • Pork Baby Back Ribs. The baby back ribs are actually the small ribs that you find on the back of the pig. These ribs typically have more meat on them than spare ribs do.
  • Pork Belly. Pork belly is a marbled cut of meat that can be found on the underside of a pig. The full belly can be braised to create a delicious meal, but more often than not, you purchase this portion of the pig after it has been cured, smoked, and cut into much thinner slices.
  • Pork Roast. A pork roast that you find in the store can be several different cuts of meat; in fact, you can find pork rib roasts, pork top loin roasts, pork sirloin roasts, and Boston butt roasts sold as a pork roast.
  • Pork Crown Roast. A pork crown roast is not actually a roast, which can be confusing because it is often cooked low and slow in the oven just like a pork roast.
  • Pork Loin. The pork loin is one of the most tender parts of the pig, which means that there is going to be very little fat in the meat. That being said, it is important that you are careful while you are cooking the loin so that the meat does not become dry because it was cooked too long.

  • Pork chops. Pork chops come from the loin area of the pig. This area stretches from the pork shoulder to the rump and is home to some of the most expensive, leanest and most tender cuts of meat.
  • Pork loin. Also known as the ‘boneless chop’, pork loin is one of the primal cuts that comes from the upper back of the pig, also known as the upper loin area.
  • Pork butt (or shoulder) Pork butt and pork shoulder are commonly confused. Both cuts come from the primal shoulder before being split into two sub primal cuts: pork butt and pork shoulder.
  • Pork Tenderloin. Not to be confused with the pork loin we discussed above, the tenderloin is cut from a different part of the animal. Also known as pork fillet, the pork tenderloin comes from the topside of the pig.
  • Loin chop. Loin chops are cut from the upper part of the pig, unsurprisingly known as the loin area. Also known as the porterhouse chop or center loin chop, this particular cut comes from towards the center-rear of the loin.
  • Cheek. Full of flavor, versatile and cheap, pork cheeks are often overlooked in favor of more expensive back cuts. As their name suggests, they come from the cheek area, found directly under the eyes.
  • Sirloin chop. Sirloin, as the name suggests, comes from the pork loin area. This is the upper section of the pig where you find the most tender and lean cuts.
  • Pork belly. Pork belly comes from the fleshy underside of the pig. It’s a long, continuous cut that has a lot of pork fat running through it. Typically, pork belly is cured or smoked before being finely sliced to make bacon or pancetta.
  • Pork Leg. Pork hock comes from the leg of the pig. They are essentially the pig’s ankles, so they contain a fair amount of connective tissue and bone. When taken from the rear legs these cuts are also called ham hocks or pork knuckles.
  • Spare ribs. Pork spare ribs are located down the side of the pig and reach right down toward the breastbone of the animal (pig’s lower rib cage). They are also referred to as “side ribs” or “spares”.

  • Pork Belly. Pork belly is not, as you may think, the stomach. Rather, it is the flesh that runs on the underside (the belly) of the pig and surrounds the stomach.
  • Pork Loin Chops. Several different cuts can be called pork chops. All are great grilled, broiled, or pan-fried. Note that thicker cut pork chops with the bone still attached cook up the juiciest and most flavorful.
  • Pork Shoulder Chops. Pork shoulder chops, sometimes sold as pork blade chops, are from the blade roast and are fattier and a bit tougher than other "chops."
  • Pork Crown Roast. When the ribs on a rib roast (see "roasts" below) are "Frenched" (trimmed of meat), this cut becomes a rack of pork. A pork crown roast is two racks of pork tied into a circular crown, in the middle of which stuffing can be cooked.
  • Pork Cutlets. Pictured here is a range of boneless cuts that may be referred to as boneless chops or cutlets. Pork cutlets are usually lean steaks similar to sirloin chops, but meatier and boneless.
  • Ham. Ham is from the top of the pork leg (the bottom is the shank, which can sometimes be a hock, see below). It can be sold fresh, boiled, smoked or cured (as pictured).
  • Pork Loin. Cuts from the pork loin are the leanest and most tender pork cuts. Be careful to avoid overcooking any cut of pork from the loin (they usually have the word "loin" in their name, i.e., tenderloin, loin chop, etc.).
  • Pork Back Ribs. Pork back ribs are often called baby back ribs. They are meatier than spare ribs but not as meaty as country-style ribs. Continue to 9 of 18 below.
  • Country-Style Pork Ribs. Country-style pork ribs or loin ribs are the meatiest and fattiest of pork ribs but aren't as easy to pick up and eat with your fingers as are the other pork ribs.
  • Pork Spare Ribs. Pork spare ribs are the least meaty of pork ribs, but popular for the tender-chewy texture (they are the least fatty of pork ribs) they can attain with properly long and slow cooking.
