1 (4 ounce) log goat cheese
½ cup Italian-style panko bread crumbs, or as needed
6 tablespoons olive oil, divided, or to taste
1 tablespoon minced garlic
6 cups arugula
3 tablespoons balsamic vinegar, or to taste
salt and ground black pepper to taste

Steps:

  • Pull off small pieces of goat cheese and roll into dime-sized balls.
  • Pour panko bread crumbs into a bowl; roll goat cheese balls in crumbs until coated.
  • Heat olive oil and garlic in a saucepan over medium-high heat. Cook and stir goat cheese balls in the hot oil for 15 to 30 seconds. Scoop them back into the bowl of bread crumbs to create a second coating. Arrange on a rimmed baking sheet.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil goat cheese balls, shaking baking sheet every 30 seconds to 1 minute to ensure even browning, about 2 minutes.
  • Toss arugula with remaining 3 tablespoons olive oil, balsamic vinegar, salt, and pepper in a large bowl. Divide among 4 serving bowls; top each bowl with warm goat cheese balls.

2 teaspoons Dijon mustard
3 tablespoons virgin olive oil
salt & pepper
10 ounces baby arugula, washed and dried
3/4 cup red seedless grapes
2 ounces plain goat cheese, crumbled
2 tablespoons capers, rinsed and dried

Steps:

  • Whisk together the mustard, lemon juice & oil (I mixed mine in my mini mixer).
  • Place Arugula in a large bowl and toss with the dressing.
  • Divide between 4 plates.
  • Sprinkle grapes, cheese, cper & hemp heart over the arugula.
  • Serve.

2 tablespoons honey or maple syrup

5 ounces prewashed arugula greens
⅓ cup thinly sliced red onion
1 green or red pear (cored and sliced into 1/4" half-moons)
⅓ cup toasted walnuts*
2 ounces soft goat cheese (crumbled)
2 ounces blue cheese (crumbled)
½ cup mixed microsprouts (optional)
Freshly ground black pepper to taste

Steps:

  • Combine all ingredients in a blender or mini food processor until very smooth.
  • Put the greens in a large bowl or on a platter. Top with the remaining ingredients.
  • Drizzle with 2 or 3 tablespoons of the dressing and toss gently to coat. Serve the salad with additional dressing to taste on the side.

3 tablespoons shallots, thinly sliced
1 tablespoon honey
1/3 cup extra-virgin olive oil
Salt and freshly ground black pepper
6 medium beets, cooked and quartered
6 cups fresh arugula
1/2 cup walnuts, toasted, coarsely chopped
1/4 cup dried cranberries or dried cherries
1/2 avocado, peeled, pitted, and cubed
3 ounces soft fresh goat cheese, coarsely crumbled

Steps:

  • Line a baking sheet with foil. Preheat the oven to 450 degrees F.
  • Whisk the vinegar, shallots, and honey in a medium bowl to blend. Gradually whisk in the oil. Season the vinaigrette, to taste, with salt and pepper. Toss the beets in a small bowl with enough dressing to coat. Place the beets on the prepared baking sheet and roast until the beets are slightly caramelized, stirring occasionally, about 12 minutes. Set aside and cool.
  • Toss the arugula, walnuts, and cranberries in a large bowl with enough vinaigrette to coat. Season the salad, to taste, with salt and pepper. Mound the salad atop 4 plates. Arrange the beets around the salad. Sprinkle with the avocado and goat cheese, and serve.

1 Tbsp. HEINZ Balsamic Vinegar, or to taste
1 tsp. GREY POUPON Dijon Mustard
1 tsp. fresh lemon juice

Steps:

  • After the beets are cooked, when you are ready to make the salad, cut the ends off and slide the skin off (it will come off easily). Rinse the whole beets, and then chop them into bite-sized pieces.
  • Crumble the bacon into bite-sized bits.
  • Place the arugula in a bowl and add the chopped beats, and goat cheese, breaking it into pieces and distributing it over the salad.
  • Whisk the dressing together in a separate bowl, and gradually drizzle it over the salad, tasting as you go (some prefer a more lightly dressed salad).
  • Sprinkle bacon over salad before serving, so it stays crispy and doesn't get soggy.
