PORK CHOPS WITH SAUERKRAUT AND APPLE
This is a great recipe for people who think they don't like sauerkraut, as it's very mild and sweet prepared this way. I never would have thought of using wine in a sauerkraut dish, but it's great. Source lost in the mists of time.

Steps:
- Salt and pepper the chops and brown them in hot oil or butter, about 3 minutes per side. Set aside.
- Add the apple and onions to the same skillet and cook for about 5 minutes, until the onion starts to look golden.
- Add the wine and stir, scraping up all the browned bits, and cook for an additional 3 minutes.
- Stir in the sauerkraut, and place the chops on top, including any juices that have collected. Cover the skillet, lower the heat and cook until the chops are done, about 7 minutes, depending on thickness. Do not overcook.
- Note1: I've also made this successfully with chardonnay, but riesling is the best.
- Note2: Sauerkraut packed in plastic bags and sold in the refrigerator case tastes much better than the canned.

GERMAN PORK CHOPS AND SAUERKRAUT
As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.
- Mix the sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl until well combined, and spread the sauerkraut mixture over the pork chops. Cover the dish with aluminum foil.
- Bake in the preheated oven until the pork is no longer pink inside, about 45 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

- Heat oil in a large skillet over medium heat. Brown chops on all sides and remove from pan.
- Add the garlic, onion, sauerkraut, caraway seed, apple juice, and salt and pepper to taste to the hot skillet. Saute for 3 to 4 minutes. Lay browned pork chops on top of sauerkraut mixture, cover, reduce heat to low and cook for 20 minutes, stirring occasionally.

Steps:
- Sprinkle pork chops with 1/4 tsp salt and 1/8 tsp pepper.
- Heat 1 teaspoon of oil in a large nonstick skillet over medium high heat.
- Add pork and cook until browned and cooked through, 3-4 minutes on each side.
- Transfer to a plate and keep warm.
- Heat remaining oil in skillet.
- Add apples and cinnamon.
- Cook, stirring occasionally, until apples begin to brown, 3-4 minutes. Add sauerkraut, caraway seeds and remaining salt and pepper. Cook 2-3 minutes.
- Serve with pork.
PORK SAUTEED WITH SAUERKRAUT
I'm not sure if this is authentically German, but with pork, beer and sauerkraut it's close enough for me. This is excellent served over spaetzle.

- Render the fat out of the bacon, then cook until crisp.
- Removed the bacon from the pan, without draining oil.
- Saute the onion in the bacon fat until nicely caramelized.
- Add the pork strips and brown on all sides.
- Add salt and pepper to taste.
- Add garlic about 1 minute before the pork is done.
- Add the sauerkraut and saute about 10 minutes, until the sauerkraut starts to brown and wilt a bit.
- Sprinkle the sugar over the sauerkraut and mix in.
- Mix the paprika into the beer, and add to the pan.
- Cook until most of the beer has evaporated.
- Season with salt and pepper to taste.
- Serve with reserved bacon crumbled on top.

- In nonstick 12-inch skillet over medium heat, in 2 teaspoons hot oil, cook onion until tender. Remove onion to small bowl.
- If using rosemary in place of the thyme, at this point, press one small spring onto one side of each chop. In same skillet over medium-high heat, cook pork chops 5 minutes, sprinkling with 1/2 teaspoon salt. Turn pork chops; sprinkle with thyme if using in place of rosemary, pepper and 1/2 teaspoon salt. Cook 3 to 5 minutes longer or until pork just loses its pink color throughout. Remove pork chops to four warm dinner plates; keep warm.

- Heat the oil in a large skillet over medium-high heat.
- Season the pork with 1/2 teaspoons each of salt and pepper and cook until browned and cooked through, 7 to 9 minutes per side.
- Transfer to a plate and cover with foil to keep warm; reserve the skillet.
- Add the apples and onion to the drippings in the skillet and cook over medium-high heat, tossing frequently, until slightly softened, 6 to 8 minutes.
- Add the broth, vinegar, and sugar and cook, tossing occasionally, until thickened, 3 to 4 minutes.
- Add 1 tablespoons of the butter.
- Return the pork chops to the skillet and cook until warmed through, 1 to 2 minutes.

- In a heavy saucepan cook the bacon over moderate heat, stirring, until it is crisp, add the onion, and the caraway seeds, and cook the mixture, stirring, until the onion is golden. Add the sauerkraut and the apple juice and simmer the mixture, covered, for 20 minutes.
- While the sauerkraut mixture is the simmering, sprinkle both sides of the chops with salt, let the chops stand between layers of paper towel for 10 minutes, and season them with pepper. In a heavy skillet heat the oil over moderately high heat until it is hot but not smoking and in it sauté the chops for 5 to 6 minutes on each side, or until they are just cooked through. Stir 1 tablespoon of the dill into the sauerkraut mixture and transfer the mixture to a heated platter. Top the sauerkraut mixture with the chops and sprinkle the chops with the remaining 1 tablespoon dill.
