BRAISED CABBAGE WITH PORK

1 large onion
50g pork dripping or lard
750g white cabbage
1 medium cooking apple (about 200g)
1 tsp juniper berries
1 tsp caraway seeds
500ml dry cider
4 pork chops (each weighing about 200g)
1 tbsp oil
1 chicken stock cube
mashed potatoes , to serve

Steps:

  • Finely slice the onion and put it and the dripping in a heavy-based, flameproof casserole dish. Fry the onion over a medium heat, stirring frequently, for about 5 mins.
  • Cut the core from the cabbage and finely slice the leaves. Add this to the dish and toss everything together, cooking over a low heat while you peel and slice the apple.
  • Crush the juniper and caraway seeds together and add these and the apple slices to the pan. Season and pour in the cider. Stir well and bring to a simmer, cover the dish and cook for 20 mins.
  • Heat oven to 160C/140C fan/gas 4. Season the chops on both sides. Heat a heavy-based frying pan on a medium-high heat with the oil and brown the chops on both sides. Remove from the pan and place in the casserole dish on top of the cabbage, adding the stock cube, crumbling it over. Put the lid back on and cook in the oven for a further 30 mins. If there is a lot of liquid in the dish, place on the hob and simmer until it evaporates a little. Check the seasoning and serve with mashed potato.

Steps:

  • Heat the oil in a large skillet over medium-high heat. Cook the pork chops in the hot oil until well-browned on each side, about 10 minutes per side.
  • Add the cabbage, onion, apple, 2 cups of water, garlic, Worcestershire sauce, salt, and pepper to the skillet; bring to a boil, reduce heat to medium-low, and place a cover on the skillet. Cook at a simmer until the pork chops are completely tender, 45 minutes to 1 hour.
  • Remove the pork and vegetable mixture from the skillet, leaving as much of the liquid in the skillet as possible. Whisk the water and flour together in a small bowl. Raise the heat under the skillet to medium-high. Pour the flour mixture into the remaining liquid in the skillet. Cook, stirring constantly, until the gravy thickens and begins to boil. Reduce heat to low and continue to simmer an additional 5 minutes. Pour the gravy over the pork and vegetable mixture.

4 boneless pork chops (about 1 inch thick)
1/2 cup barbecue sauce
8 slices bacon
4 sprigs fresh rosemary
salt & freshly ground black pepper

Steps:

  • Preheat oven to 400°F.
  • On work surface layer slices of bacon side by side. Place each chop on 2 pieces of bacon (picture 2 slices of bacon as the upright part of an H, and the pork chop as the across section). Season with salt and pepper.
  • Slather the chops with barbeque sauce. Flip the chops and slather the other side as well, until barbeque sauce is used up.
  • Lay a sprig of rosemary on each chop (letting the ends hang over the edge, for easy removal before serving).
  • Wrap bacon slices tightly around each chop.
  • Prepare broiler pan (or any roasting pan with a rack), by spraying surface with cooking spray.
  • Bake for 30 to 35 minutes until a meat thermometer inserted in thickest part of the meat should register about 150°F
  • Turn oven to broil and broil on each side until bacon is crisp.
  • Let chops rest for a few minutes. Remove rosemary sprigs before serving.
  • If desired, serve with additional warmed barbeque sauce.
  • Note: To cook on grill, cook over direct heat for about 5 minutes per side, then transfer to indirect heat and continue cooking until internal temperature is 150°F (about 30 minutes).

Steps:

  • Season both sides of the pork chops with the Essence and kosher salt. Lightly dredge in the flour.
  • Heat the olive oil in a large Dutch oven or heavy pot over high heat. Add the pork chops 2 at a time, and cook until lightly browned, about 2 minutes per side. Remove the pork chops and transfer to a platter. Repeat with the remaining pork chops and set aside.
  • Reduce the heat to medium-high, and add the apples and onions. Cook, stirring occasionally, until the apples and onions are golden brown, 3 to 4 minutes. Steps:

  • Preheat the oven to 400. Take a large roasting pan and set it over two burners. Heat the oil on high to medium high. Season the chops with salt and pepper and add to the pan. 8 oz mushrooms (, sliced)

2 tablespoons flour ((use gluten free flour for gluten free version, omit flour to make it KETO friendly))

Steps:

  • Chop bacon into smaller bites. In a large skillet, cook on medium heat until the bacon is cooked. Remove bacon from the pan to a plate, leaving the fat in.
  • Season pork chops with salt and pepper. In the same pan, on high-medium heat, cook pork chops 4 minutes on each side in bacon fat, until nicely seared. Reduce heat to medium midway through cooking. Remove the pork chops to a plate from the pan.
  • Add sliced mushrooms and minced garlic to the same pan. If needed, add 1 tablespoon olive oil. Season with salt. Sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring, until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms, and stir the flour in on medium heat.
  • Add chicken broth and raise the heat to bring to boil, constantly stirring. You should have a smooth slurry from the flour and the chicken broth. Add heavy cream and stir it in while boiling until everything is smooth. Then reduce heat to low.
  • Add back the pork chops and the bacon. Cook on low heat, covered, until the pork chops are cooked through.
  • To serve, top pork chops with mushroom and bacon mixture and with more fresh thyme leaves.

2 large or baking potatoes, cut into thin wedges
2 tbsp olive oil
½ red cabbage (approx 350g/12oz), core removed and finely sliced
1 onion , halved and sliced
2 tbsp cranberry sauce
1 apple , peeled, cored and chopped
2 tsp wholegrain mustard
4 pork loin chops, approx 140g/5oz each

Steps:

  • Heat oven to fan 200/fan 180C/gas 6. Put the potato wedges in a large roasting tray and toss in 1 tbsp of the oil. Roast for 10 mins until golden.
  • Meanwhile, heat the rest of the oil in a wok or large pan and tip in the red cabbage and onion. Stir-fry for 5 mins then stir in the cranberry sauce, apple and 4 tbsp water. Cover with a lid and leave to cook for 10-15 mins, depending on how thinly you shredded the cabbage.
  • Spread the mustard over the top of the chops and add to the roasting tray. Roast for another 15 mins until the chops are browned and cooked through. Season the cabbage to taste and serve with the mustardy pork chops and potato wedges.

Steps:

  • Heat oven to 425°F.
  • Spray baking sheet with cooking spray. Whisk egg and 1 Tbsp. mustard in shallow dish until blended. Empty coating mix onto plate. Dip chops, 1 at a time, into egg mixture, then coating mix, turning to evenly coat both sides of each chop with each ingredient; place on prepared baking sheet. 5 slices smoked bacon
2 tablespoons olive oil
4 pork chops
3/4 teaspoon black pepper
1 1/4 teaspoons salt

1 large onion
3 minced garlic cloves
2 large carrots
1 medium cabbage
3 small bay leaves
1/2 cup cider or 1/2 cup dry vermouth
2 large apples

Steps:

  • In a large skillet cook the bacon over medium heat until browned and crisp. Drain bacon on paper towels. Pour out all but 2 tablespoons of bacon drippings and add olive oil to skillet. Set pan aside.
  • Season the pork chops with 1/4 teaspoon pepper and 1/4 teaspoon salt; dredge pork chops in flour. Heat skillet over medium heat. Add pork chops and cook on both sides until browned. About 8 minutes. Remove chops from the skillet and set aside.
  • Slice the onion thinly. Mince the garlic. Add onion and garlic to skillet. Cook, stirring until onions soften, about 3 minutes.
  • Slice the carrots thinly on the diagonal. Cut the cabbage lengthwise in half, cored, and sliced into shreds. Peel, core and thinly slice the apples.
  • Add carrots, cabbage, bay leaves, hard cider, apples, remaining 1 teaspoon salt and remaining 1/2 teaspoon pepper. Stir well to combine, cover and bring mixture to a boil. Uncover pan and place chops on top of cabbage mixture. Recover and return to a boil. Reduce heat to medium and cook until chops are tender, about 25 to 30 minutes.
  • Chop reserved bacon coursely and sprinkle over pork and cabbage. Before serving, remove the bay leaves.

Cabbage
2 teaspoons olive oil
1 small head red cabbage, thinly sliced
1 onion, thinly sliced
2 garlic cloves, thinly sliced
1 teaspoon dried marjoram, crumbled
2 tablespoons balsamic vinegar*
Pork
1 teaspoon olive oil
4 5-ounce 1/2-inch-thick pork loin chops, well trimmed
1 teaspoon dried marjoram, crumbled
1/4 cup plus 2 tablespoons canned unsalted chicken broth
1 tablespoon balsamic vinegar*
Balsamic vinegar is available at specialty foods stores, Italian markets and some supermarkets.

Steps:

  • For cabbage:
  • Heat oil in heavy large skillet over medium heat. Add cabbage, onion, garlic and marjoram and cook until cabbage and onion are tender, stirring occasionally, about 50 minutes. Stir in balsamic vinegar. Season to taste with salt and pepper. (Can be prepared up to 3 hours ahead. Cover skillet and let stand at room temperature. Bring to simmer before continuing with recipe.)
  • For pork:
  • Heat oil in another heavy large skillet over medium-high heat. Season pork chops with salt and pepper. Rub with marjoram. Add pork chops to skillet and fry until cooked through, turning once, about 6 minutes. Transfer cabbage to platter. Place pork chops atop cabbage. Remove skillet from heat. Add chicken broth and balsamic vinegar to skillet. Stir with wooden spoon, scraping up any browned bits from bottom of skillet. Pour sauce over pork and serve.

1 1/2 cups red wine vinegar
1/4 cup sugar
2 bay leaves
Kosher salt
2 large red onions, halved and sliced into 1/4-inch-thick half-moons
1 head red cabbage, thinly shredded
2 tablespoons chopped fresh parsley
2 cups buttermilk
4 teaspoons hot sauce
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
Four 1-inch-thick bone-in pork chops
2 cups all-purpose flour
4 large eggs, beaten
2 cups Italian breadcrumbs
Canola oil, for frying
Stone-ground Dijon mustard, for serving

Steps:

  • For the pickled red cabbage slaw: In a small saucepan, add the vinegar, sugar, bay leaves, 1 teaspoon salt and 1/2 cup water and bring to a boil. Put the onions and cabbage in a large heatproof bowl or container and pour the boiling liquid over them. Toss to coat. Let the mixture sit for at least 30 minutes in the refrigerator and up to overnight. Right before serving, add the parsley.
  • For the pork chops: In a large bowl, combine the buttermilk, hot sauce, granulated garlic, 2 teaspoons salt and 1 teaspoon pepper. Add the brine and pork chops to a large ziptop bag, making sure the pork chops are evenly coated. Close tightly. Allow the chops to sit for 2 hours on the counter and up to 4 hours in the refrigerator.
  • Set up a breading station with one plate of the flour, one bowl of the eggs and one plate of the breadcrumbs.
  • Remove the pork chops from the brine and allow any excess to drip off. Bread the pork chops by evenly coating them in the flour, followed by the egg and finishing with the breadcrumbs.
  • Fit a rimmed baking sheet with a wire rack. Pour enough oil into a 12-inch cast-iron skillet to come halfway up the sides of the pork chops and heat over medium heat. Once the oil is shimmering, add the pork chops to the skillet in batches and shallow-fry until golden brown or a thermometer reads 135 degrees F, 3 to 5 minutes per side. (If the pork chop breading is getting too dark while cooking in the oil, finish the pork chops in the oven at 350 degrees F until an internal temperature of 135 to 140 degrees F is reached.) Remove the chops to the baking sheet and season with salt.
  • Serve the chops with the slaw and mustard.
