PORK CHOPS WITH APPLES

Pork Chops with Apples image

These moist tender chops get delicious flavor from Dijon mustard, onions and apple slices. Or try replacing the apples with pineapple rings for an appealing variation. I like to serve mashed sweet potatoes with this main course, along with a simple salad.

PORK CHOPS WITH APPLES AND ONIONS

Pork Chops with Apples and Onions image

Sauteed apples and onion combine with pork chops for a tastiness that never disappoints.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 7

6 bone-in pork chops (loin or shoulder), cut 3/4 inch thick
Coarse salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil or vegetable oil
2 tablespoons unsalted butter
1 large white onion, sliced
2 to 3 apples, cored and sliced (about 3 cups)
1 cup beer, white wine, cider, or chicken broth

Steps:

  • Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
  • Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
  • Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

SMOTHERED PORK CHOPS WITH CIDER AND APPLES

Smothered Pork Chops With Cider and Apples image

Braise thin pork chops in an apple-based gravy to keep them juicy and flavorful. I had trouble indicating the amount of apple, it's one large granny smith or 2 small.

Provided by SweetSueAl

Categories     Pork

Time 1h40m

Yield 4 serving(s)

Number Of Ingredients 14

3 ounces bacon, cut into 1/4-inch pieces (about 3 slices)
2 tablespoons unbleached all-purpose flour
1 3/4 cups apple cider
vegetable oil
4 pork chops (bone-in, rib-end 1/2 to 3/4 inch thick)
ground black pepper
1 medium yellow onion, halved pole-to-pole and sliced thin (about 1 3/4 cups)
1 large granny smith apples or 2 small granny smith apples, peeled, cored, and cut into 3/8-inch wedges, large apple
table salt
2 tablespoons water
2 teaspoons garlic cloves, minced
1 teaspoon thyme leaves, minced (fresh if possible)
2 bay leaves
1 tablespoon fresh parsley leaves, minced (fresh if possible)

Steps:

  • Fry bacon in small saucepan over medium heat, stirring occasionally, until lightly browned, 8 to 10 minutes.
  • Using slotted spoon, transfer bacon to paper towel-lined plate, leaving fat in saucepan (you should have 2 tablespoons bacon fat; if not, supplement with vegetable oil).
  • Reduce heat to medium-low and gradually whisk flour into fat until smooth. Cook, whisking frequently, until mixture is light brown, about the color of peanut butter, about 5 minutes.
  • Whisk in apple cider in slow, steady stream; increase heat to medium-high and bring to boil, stirring occasionally; cover and set aside off heat.
  • Heat 1-tablespoon oil in 12-inch skillet over high heat until smoking, about 3 minutes. Meanwhile, dry pork chops with paper towels and sprinkle with 1/2-teaspoon pepper.
  • Brown chops in single layer until deep golden on first side, about 3 minutes. Flip chops and cook until browned on second side, about 3 minutes longer. Transfer chops to large plate and set aside.
  • Reduce heat to medium and add 1 tablespoon oil, onions, apples, 1/2 teaspoon salt, and water to now-empty skillet.
  • Using wooden spoon, scrape browned bits on pan bottom and cook, stirring frequently, until onions are softened and browned around the edges, about 5 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds longer.
  • Return chops to skillet in single layer, covering chops with onions. Pour in warm sauce and any juices collected from pork; add bay leaves.
  • Cover, reduce heat to low, and simmer until pork is tender and paring knife inserted into chops meets very little resistance, about 30 minutes.
  • Transfer chops to warmed serving platter and tent with foil.
  • Increase heat to medium-high and simmer sauce rapidly, stirring frequently, until thickened to gravy-like consistency, about 5 minutes. Discard bay leaves, stir in parsley, and adjust seasonings with salt and pepper.
  • Cover chops with sauce, sprinkle with reserved bacon, and serve immediately.

ONE PAN PORK CHOPS WITH APPLES AND ONIONS

One Pan Pork Chops with Apples and Onions image

This pork chops with apples and onions dish is a deliciously light and flavorful meal that's perfect for Fall. Plus, it's all made in ONE pan!

Provided by The Chunky Chef

Time 26m

Number Of Ingredients 12

2 Tbsp olive oil (divided)
3-4 oz bone-in pork chops (whatever with comfortably fit in your pan)
Kosher salt and black pepper (to taste)
3/4 cup low sodium chicken stock
1 tsp Dijon mustard (or whole-grain Dijon)
1 Tbsp fresh sage (chopped)
1 1/2 tsp fresh rosemary (chopped)
1/2 tsp fresh thyme (chopped)
1/2 tsp kosher salt
1/4 tsp black pepper
2 medium apples (thinly sliced (I used Gala))
1 small red onion (thinly sliced)

Steps:

  • Season both sides of pork chops with kosher salt and black pepper. Add 1 Tbsp olive oil to large heavy bottomed pan (or skillet), and heat over MED-HIGH heat. Add pork chops to pan, leaving at least an inch between the chops to ensure even cooking and browning. Sear 3-5 minutes per side, or until pork chops are mostly done. Chops will continue cooking in the sauce later.
  • Remove pork chops to a plate.
  • In a small mixing bowl, whisk together chicken stock and mustard, set aside.
  • Add remaining 1 Tbsp oil to the pan, then add apples and onions. Cook 4 minutes, stirring occasionally. Season with salt, pepper, sage, rosemary, and thyme. Stir to combine.
  • Pour in stock mixture, using a wooden spoon to gently scrape the bottom of the pan to release any brown bits (those are full of great flavor).
  • Slide pork chops back into the pan, nestling them down in between the apples.
  • Cook 2-3 minutes, until pork chops are finished cooking and liquid has reduced by half.

Provided by Anne Burrell

Categories     main-dish

Time 1h5m

Yield 2 servings

Number Of Ingredients 9

4 bone-in pork loin chops, 1- inch thick
Kosher salt
Extra-virgin olive oil
2 onions, thinly sliced
1 pinch crushed red pepper
2 Granny Smith apples, peeled, cored, and sliced
Pinch cinnamon
2 sprigs fresh rosemary, leaves finely chopped
2 cups apple cider

Steps:

  • Preheat the oven to 375 degrees F.
  • Season the pork chops generously with salt. Coat a large saute pan with olive oil and bring it to a high heat. Sear the pork on both sides and on the fat edge, working in batches if the chops don't all fit in the pan at the same time. Be sure not to crowd the pan. Remove the pork from the pan and place on a cookie sheet. Finish the pork in the oven for about 10 to 12 minutes. Remove from the oven and let rest for 10 minutes before serving.
  • Ditch the excess fat from the saute pan. Give a drizzle of fresh olive oil and add the onions and crushed red pepper and season with salt. Cook until the onions become soft and aromatic. Add the apples, cinnamon and rosemary and toss to coat with the oil. Add the cider and cook until the cider has reduced by two-thirds and the onion-apple mixture is very soft and saucy. Serve over the pork chops.
  • Porky deliciousness!

PAN-SEARED PORK CHOPS WITH CARAMELIZED APPLES

Pan-Seared Pork Chops with Caramelized Apples image

Pork Chops with Apples is a simple dinner recipe perfect for any time of year! The apples are caramelized in butter with brown sugar, cinnamon, and honey. The pork chops are pan-seared to a beautiful golden-brown crust and are tender, juicy, and moist.

Provided by Julia

Categories     Main Course

Time 40m

Number Of Ingredients 14

1 green apple (Granny Smith)
1 red apple (Gala)
2 tablespoons brown sugar
½ teaspoon cinnamon
2 tablespoons butter (divided)
1 tablespoon olive oil
3 tablespoons honey
1.5 lb pork loin chops (boneless (4 pork chops))
1 tablespoon olive oil
½ teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons olive oil
fresh thyme

Steps:

  • Pat dry pork chops with paper towels.
  • Brush pork chops with 1 tablespoon of olive oil and season with salt and freshly ground black pepper, and Italian seasoning.
  • Allow the pork chops to rest while you prepare the apples as follows below. This brings pork chops closer to room temperature which will help them sear better.
  • I used 2 apples (1 red Gala apple and 1 green Granny Smith apple, for presentation purposes). Core the apples and slice each one length-wise.
  • Place sliced apples into a large bowl, add brown sugar, cinnamon, and mix. Let apples sit for about 10 minutes to release juices.
  • In a large pan (I used a large stainless steel skillet), heat 1 tablespoon of butter and 1 tablespoon of olive oil on high heat. Add sliced apples (without juice at the bottom of the pan) and cook on high heat for about 3 minutes on one side, checking periodically. After 3 or 5 minutes, flip sliced apples to the other side, reduce heat to medium and cook the apples for another 3 or 5 minutes. Remove from heat.
  • Cook the apples in a single layer, without overcrowding to get a slightly "roasted" appearance. That means you might have to cook apples in 2 batches. Use the remaining 1 tablespoon of butter for the second batch.
  • Depending on how hot your stove gets, it might take you less or more time to cook apples, the key is to brown them or even get a slightly "burned" effect. But don't overdo it, remove the cooked apples from the skillet once the apples have this "roasted" appearance.
  • Right after you remove the pan with roasted sliced apples from the heat, immediately add honey to the hot skillet - it will make apples sizzle and will caramelize them beautifully, off the heat.
  • For best searing results, use a cast-iron skillet. Heat a large skillet over medium-high heat for about 3 minutes to heat it through.
  • Add 2 tablespoons of olive oil - the oil should shimmer. Add the pork chops, and cook them on one side for 5 minutes, without moving.
  • Reduce the heat to medium, flip the pork chops over to the other side, and cook them on medium heat for about 5 minutes. Cook longer (depending on the thickness of your pork chops) until the pork chops are cooked through.
  • Spoon the cooked apples, together with the sauce from cooking the apples, over the pork chops. Top with fresh thyme.

  • In a large, shallow dish, combine 1/4 cup of the olive oil with the thyme sprigs and garlic. Add the pork chops and turn to coat with the marinade. Refrigerate overnight.
  • In a large skillet, cook the bacon over moderate heat, stirring a few times, until browned, about 4 minutes; pour off the fat. Add the butter and cabbage to the skillet, cover and cook over moderate heat, stirring occasionally, until the cabbage is tender, about 7 minutes. Add the apple and vinegar, cover and cook, stirring occasionally, until the apple is tender, about 5 minutes. Stir in the mustard and cream and simmer uncovered over moderate heat until the cream has thickened, about 3 minutes. Season with salt and pepper, cover and keep warm.
  • Preheat the oven to 325°. In a large ovenproof skillet, heat the remaining 1 tablespoon of olive oil until shimmering. Remove the pork chops from the marinade; discard the thyme sprigs and scrape off the garlic. Season the chops with salt and pepper and add to the skillet. Cook over moderately high heat until richly browned, about 3 minutes per side. Transfer the skillet to the oven and roast the chops for about 12 minutes, turning once halfway through, until just pink in the center. Transfer the pork chops to plates and serve with the cabbage.

  • Tear or cut the bread into the ½-inch pieces until you have about 2 cups.If working a day ahead, lay the pieces of bread out on a rack and leave them uncovered on the counter to dry overnight. Otherwise, spread the pieces of bread out on a rimmed baking sheet. Bake in a 275 degrees F oven, stirring every 10 minutes until the bread is crisp and mostly dry.Depending on how moist the bread is, to begin with, oven-drying takes 15 to 45 minutes. Keep in mind the bread will continue to dry a bit after you take it out of the oven and it begins to cool. After the breadcrumbs have been removed from the oven. Increase the oven temperature to 400 degrees F.
  • Meanwhile, dice up the bacon and transfer it into a large oven-proof skillet, over medium heat. Cook the bacon stirring occasionally, until browned and fully cooked through; about 5 to 6 minutes.Remove the bacon bits from the pan and drain them on some paper towels, reserving the fat in the pan.
  • Add the apple, celery, onions, and thyme to the pan. Cook, stirring occasionally until the apples, celery and onions have softened slightly but still have some crunch; about 5 to 7 minutes.Stir the bacon back into the skillet, before transferring the mixture to a large mixing bowl.Add the bread to the large mixing bowl, along with the fresh flat-leaf parsley. Season with salt and pepper, to taste and toss the stuffing mixture well. Pour ¼ cup of broth over the apple-bacon stuffing at a time. Add until the liquid isn’t being absorbed and it starts to pool at the bottom of the bowl.Toss the mixture occasionally for a few minutes until the liquid is absorbed. The bread should be moist but not soggy. Add up to another ¾ cup of broth if necessary, but do not saturate the bread.
  • Using a sharp knife, remove the bone (if the pork chop has one). Carefully slice down the length of the chop without cutting all the way through. Spread and flatten out to form a butterfly shape. Repeat for each pork chop.Next, add a couple of spoonfuls of the apple-bacon stuffing mixture into the middle of the butterflied pork chop, but make sure it will somewhat close up.You can use toothpicks to help keep the pork chop closed up around the stuffing mixture, but it isn’t necessary. You will have a little stuffing leftover. Just add it to the pan with the pork chops before placing the pan into the oven.

  • Cut the top off of the bulb of garlic, drizzle with olive oil, and wrap in foil. Place the wrapped garlic in the oven, and allow it to roast until cloves have softened and turned golden-brown, about 30 to 40 minutes.
  • Heat a cast iron skillet on the stove top to medium and add the bacon. Cook bacon until it reaches desired level of crisp. Remove the bacon, set it on a plate, and reserve the bacon drippings for searing the pork chops.
  • Sprinkle the pork chops with salt, pepper, and paprika. Placing the pork chops in the hot bacon drippings, sear pork for about 4 minutes on each side (depending on thickness of pork) over medium-high heat, or until the outside is deep golden brown and crispy.

  • Start by preheating the oven to 400°F. Sprinkle both sides of the pork chops with salt, pepper, onion powder, garlic powder, and cinnamon. Set aside.
  • For the chutney, in a large non-stick frying pan (I used a cast iron), add the butter and let it melt over medium heat. Once melted, add the diced onions, apple, and sliced bacon. Sauté until the onions are caramelized and the bacon is crispy. This will take approximately 20 minutes.
  • Transfer the bacon, apple and onion mixture to a bowl and return the pan to the burner, turn up the heat to medium/high. You want the pan to be hot. You can test this by adding a drop of water to the pan, if it loudly sizzles, it's ready for the pork chops.
  • Add the pork chops to the pan and fry for two minutes on each side. If using a cast iron, keep them in the pan, or transfer to a baking dish and cover with the chutney, spreading it evenly over top of the pork chops. Place in the oven and cook for 10 minutes.
