2 cups (500ml) chicken stock / broth (, low sodium)
1 1/2 cups (375 ml) tomato passata OR US 1 can (8 oz) canned tomato sauce (eg Hunts) ((Note 2))

1 tbsp olive oil
2 garlic cloves (, minced)
1 onion (, finely chopped (~1 cup))
1 lb / 500g ground beef ((mince))
400g / 14oz refried beans ((1 can, I use Old El Paso))
400g / 14oz black beans, drained ((1 can, Note 3))
8 tortillas ((or burrito wraps))
1.5 cups (150g) grated melting cheese, or more ((I like Monterey Jack, tasty or cheddar cheese))

This beef enchiladas recipe is made with a delicious (and easy!) homemade red enchilada sauce, and it's guaranteed to be a crowd-pleaser!

1 batch red enchilada sauce (or 15 ounces store-bought red enchilada sauce)
1 tablespoon olive oil
1 small white onion, diced
4 cloves garlic, minced
1 1/2 pounds (24 ounces) lean ground beef
1 teaspoon ground cumin
1 (15-ounce) can pinto beans, rinsed and drained
1 (4-ounce) can diced green chiles
fine sea salt and freshly-cracked black pepper
8 large flour tortillas*
3 cups Mexican-blend shredded cheese
toppings: fresh cilantro, chopped red onions, diced avocado, sour cream, and/or crumbled cotija cheese

Steps:

  • Prepare the enchilada sauce according to recipe instructions.
  • Heat oil in a large sauté pan over medium-high heat. Add the onion and garlic and sauté for 3 minutes, stirring occasionally. Add the ground beef and cumin and sauté for 5 minutes or until completely browned, crumbling the beef with a wooden spoon as it cooks. Stir in the beans and green chiles until combined. Season the mixture with a few generous pinches of salt and pepper, to taste.
  • Heat oven to 350°F (180°C). Spread 1/2 cup of the enchilada sauce evenly along the bottom of a 9 x 13-inch baking dish.
  • . To assemble the enchiladas, set up an assembly line including: tortillas, enchilada sauce, beef filling, and cheese. Lay out a tortilla, and spread two tablespoons of sauce over the surface of the tortilla. Add a generous spoonful of the beef filling in a line down the center of the tortilla, then sprinkle with 1/3 cup cheese. Roll up the tortilla and place it in the prepared baking dish. Assemble the remaining enchiladas. Spread any remaining sauce evenly over the top of the enchiladas, followed by any extra cheese.
  • Bake uncovered for 20 minutes, or until the enchiladas are cooked through and the tortillas are slightly crispy on the outside. Transfer the baking dish to a wire rack.
  • Serve the enchiladas immediately while they're nice and hot, garnished with lots of your favorite toppings. Enjoy!

Steps:

  • Heat oven to 350ºF.
  • Brown meat in large skillet; drain. Stir in half the VELVEETA and 1/2 cup salsa; cook 5 min. or until VELVEETA is completely melted and mixture is well blended, stirring frequently. Stir in beans.
  • Spoon 1/4 cup meat mixture down center of each tortilla; roll up. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.

1 1/2 pounds ground beef
3 tablespoons vegetable or canola oil
10 corn or flour tortillas
1 8-ounce package sour cream
cilantro (optional)
1 cup canned black beans (rinses and drained)
2 cups shredded Monterrey Jack or Cheddar cheese
1 homemade enchilada sauce recipe

Steps:

  • Brown ground beef over medium-low heat. Drain meat to remove any excess drippings. Add 1/4 cup of enchilada sauce into brown meat and stir until well-combined.
  • For the Enchilada Assembly
  • Preheat oven to 350º F.
  • Pour 1/2 cup enchilada sauce into the bottom of a 9x13 oven-safe, casserole dish. Drizzle oil into the bottom of a skillet over a medium-low heat. Add tortillas, one at a time, and cook for about 1 minute each. Do not allow to become crispy.
  • Drain tortilla and then layer on beef, sour cream, cheese, cilantro, and beans. Roll tortilla to keep all ingredients inside. Then place seam side down in the casserole dish. Once all enchiladas have been assembled and placed into casserole dish, pour remaining enchilada sauce over to make sure well covered. Top with remaining cheese.
  • Place in oven and bake 15 minutes, or until cheese has fully melted.
  • Remove from oven and top with additional cilantro, if desired.

1 lb ground beef
1 (15 ounce) can black beans or 1 (15 ounce) can texas ranch style beans
1 (14 ounce) can diced tomatoes, drained
1/2 cup finely diced fresh poblano peppers or 1 (4 ounce) can diced green chilies
1/2 cup finely diced white onions or 1/2 cup yellow onion
2 cloves crushed garlic
1 cup shredded Mexican blend cheese or 1 cup monterey jack cheese
salt and pepper
12 -15 8-inch whole wheat flour tortillas or 12 -15 8-inch corn tortillas
2 1/4 cups hot water
1 (6 ounce) can tomato paste
2 tablespoons margarine or 2 tablespoons butter
2 tablespoons flour
5 teaspoons red chili powder
1 teaspoon cumin
2 teaspoons garlic powder
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Combine in large skillet ground beef, onion, garlic, salt and pepper.
  • Cook until beef is browned.
  • Drain grease.
  • Return to skillet and add tomatoes, peppers or canned chilies, and beans (I prefer the Texas beans and fresh pablano pepper here because of the added flavor).
  • Reduce heat, cover and simmer while preparing the sauce, stirring frequently.
  • Prepare the sauce by mixing all ingredients in medium bowl with a wire whisk until butter has melted.
  • Add salt and pepper to taste.
  • Add about 1/2 cup sauce to meat mixture.
  • Turn off heat.
  • Dip each tortilla (the whole wheat are absolutely delicious in this recipe) into the enchilada sauce coating thoroughly.
  • Lay the soaked tortilla in your baking pan and add one serving spoon of the meat mixture lengthwise along one end of tortilla then roll it up from there (Note that there should be about 2 serving spoons of meat left when you are done with filling all tortillas).
  • When done rolling each one make sure to place it so that open end of tortilla is on the bottom to avoid spillage.
  • Repeat with all tortillas.
  • Add remaining meat mixture and remaining sauce evenly on top of enchiladas.
  • Cover with aluminum foil and bake 15 minutes.
  • Remove from oven, remove foil, cover with grated cheese and return to oven for 5 minutes uncovered, or until all cheese has melted.
  • For easiest serving, slice enchiladas in half lengthwise down the pan.
  • Serve with rice, sour cream, guacamole, and your favorite corn chips.

1 can(s) 15 ounce whole kernel corn
8 oz shedded chedder cheese
1 8 ounce can tomato sauce
1 15 ounce black beans
6 flour tortillas
2/3 c salsa (your choice)
1 uncle bens spanish rice (90 second in the envelope kind)
4 tsp chpped green chillies
1-2 can(s) red enchilada sauce

  • 1. Preheat oven to 350 degees: Mix all ingredients together except the enchilada sauce,
  • 2. in 9 x 13 baking dish, pour in enchilada sauce to cover the bottom of the baking dish, Place one flour or corn torilla if you want into pan add enough beef mixture down the center of torilla and roll into tube looking roll.
  • 3. Keep this up until all mixture is gone. pour remaining sauce over enchiladas. Cover with more cheese if you like add more cheese on top. Another option is green onions and black olives on top. I of course put on sour cream and Guacamole before serving. My husband put jalapenos on his.

4 white corn tortillas
¼ cup vegetable oil
4 tablespoons refried beans (see recipe here, or your favorite canned variety)
4 tablespoons canned black beans, drained and rinsed
1 cup Mexican Shredded Beef (see recipe here)
1 ½ cup Monterey or Hot pepper Jack cheese, or a mix of both, divided
2 cups Enchilada Sauce (see recipe here)

Steps:

  • Preheat oven to 375 degrees
  • In a small pan, heat oil to hot. With a pair of tongs, heat tortilla shell in oil one at a time for no more than five seconds per side. Drain on paper towels. You are only heating the shell to soften it up and make it pliable. If you cook it longer, it will crisp up and you won't be able to roll it.
  • Lay out the four shells and divide the refried beans, black beans and beef between each. Divide the ½ cup of Jack cheese between the four shells. Roll each tight ending seam side down.
  • Spray a baking dish large enough to hold the four enchiladas and place the four prepared rolls seam side down in the pan. Pour the 2 cups of enchilada sauce across the surface letting it drip down into the pan. Cover the top with the one cup of the cheese.
  • Bake the dish uncovered for 20 minutes. Move to the broiler and broil just long enough to brown tops.
  • Serve two to a portion with chopped lettuce, tomato, sour cream and Mexican side dishes of your choice.

My favorite enchilada filling- ground beef and refried beans!

1 lb ground beef
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1 teaspoon kosher salt
24 oz enchilada sauce, divided
24 corn tortillas
2-3 tablespoons coconut oil
3/4 cup refried beans
3 cups shredded cheddar cheese, divided

Steps:

  • Preheat oven to 35oF degrees.
  • Line 1 large or 2 medium pans with a thin layer of enchilada sauce- about 1/2 cup in each. I like to make 2 pans- a 9×13 pan and a 9×9 pan- this seems to fit 24 enchiladas perfectly.
  • Heat a medium sauté pan over medium heat. Add ground beef and cook, breaking up, until cooked through. Add cumin, garlic powder, onion powder, chili powder, kosher salt, and 1/3 cup of the enchilada sauce. Cook 1-2 minutes more. Remove from heat and set aside.
  • Make an assembly line with the ground beef, refried beans, and 2 cups of cheddar cheese.
  • Heat a large pan (I use me electric griddle to speed up the process) to medium heat. Spread a tiny bit of coconut oil onto one side of each corn tortilla. Place corn tortilla- coconut oil side down- on griddle. Cook for 30-45 seconds and then flip. No need to put more coconut oil on the other side. Cook 30-45 seconds longer.
  • Working one at a time, remove tortilla from griddle. Spread with a tablespoon of refried beans, a couple tablespoons of ground beef, and a pinch of cheese. Roll corn tortilla up and place seam side down in one of the dishes lined with enchilada sauce.
  • Repeat until all tortillas have been filled, rolled and placed into baking dish(es).
  • Pour the rest of the enchilada sauce evenly over the enchiladas and sprinkle with the remaining shredded cheese. Cover dish(es) with tinfoil and bake for 30 minutes until heated through and enchilada sauce is bubbly and shredded cheese is melted. Serve with sour cream, a pinch of cilantro and a slice of lime if desired.

  • For filling: Brown ground beef in large skillet over medium heat; drain fat. Add 1/3- 1/2 cup of the sauce, black beans, and cheese. Heat through.
  • Spread a thin layer of sauce in the bottom of a greased 9x13" pan.

1 cup salsa
1 cup enchilada sauce, (divided)
1 (1 ounce) packet taco seasoning
Cooking spray
8 Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps, (or other 1 WW SP tortillas)
1/2 cup reduced-fat shredded cheddar cheese

Steps:

  • Preheat oven to 350°F.
  • In a large skillet, cook the beef, jalapeño, and onion over medium heat until fully cooked, breaking up the meat as it cooks.
  • Mix the black beans, cream of mushroom soup, salsa, 1/4 cup of the enchilada sauce, and taco seasoning in with the beef mixture. Cook for 3-5 minutes, allowing the sauce to thicken a little bit.
  • Spray a 13 x 9 inch baking dish with cooking spray. Spread 1/4 cup enchilada sauce in the bottom of the baking dish.
  • Scoop 2/3 cup beef mixture in the center of each tortilla. Roll up the tortillas and place them seam-side down in baking dish. Enchiladas will slightly overlap. Pour remaining enchilada sauce over the tortillas. Use a basting brush to brush the sauce evenly over the enchiladas. Sprinkle with cheese.
  • Bake in preheated oven for 20-25 minutes.

16 oz can refried beans
2 15 ounce cans red enchilada sauce
8 flour tortillas
2 cups cheddar cheese, (shredded and divided)

Steps:

  • Preheat oven to 375° and spray a 13x9 casserole dish with cooking spray.
  • In a large skillet, brown ground beef and add seasonings. Drain grease and return to pan.
  • Add refried beans and stir until meat and beans are combined.
  • Pour 1/4 cup of enchilada sauce on the bottom of the prepared baking dish.
  • Pour 1/2 can of enchilada sauce onto a large tray or plate. One at a time, coat both sides of tortillas in sauce.
  • Place meat and bean mixture into the center of tortilla and top with cheese. Roll up and place seam side down in the casserole dish.
  • Continue dipping tortilla in sauce, filling with meat mixture, and cheese until meat is gone.
  • Pour the remaining enchilada sauce on top of the enchiladas and top with the remaining cheese.
  • Cover with foil and bake for 25-30 minutes. Uncover and bake for an additional 10 minutes until cheese is melted and bubbly.

1/2 teaspoon chili powder
1/2 teaspoon ground oregano
2 cloves garlic
10 oz can S&W low sodium black beans rinsed and drained
10 oz can enchilada sauce
12 6" corn tortillas
1 1/2 cups shredded reduced fat cheddar cheese divided
3/4 cup salsa
1 lb of lean ground hamburger or 1 12 oz bag soy crumbles
4 oz fat free cream cheese

Steps:

  • Spray a 9 X 13 pan with cooking spray.
  • Preheat oven to 350 degrees.
  • Heat a large skillet coated with cooking spray over a medium high heat. If using ground beef, brown and drain fat, then saute onions in side of the skillet, stir in cumin, chili powder and oregano, garlic, beans, and soy crumbles (if using) cook several minutes stirring ingredients.
  • Stir in salsa, and cook 1 minute. Remove from heat and add cream cheese and 1/2 of the cheese, stirring until melted.
  • Warm tortillas. Spread 1/3 of enchilada sauce in bottom of pan. Spoon 1/3 cup bean mixture into the middle of each tortilla and wrap seam side down. Pour remaining sauce on top of enchiladas and add remaining cheese. Bake for 20 minutes.
  • Add Sour Cream, Avocado and Black olives (Optional).

This recipe is from a friend of mine who made a family cookbook of their favorite recipes. We have really enjoyed the cookbook and I will be posting more of her recipes. For the enchiladas, I have made them with the original recipe (listed below) and then last night I didn't have all the right ingredients, so I used a can of RoTel that had the lime and cilantro in place of the can of green chilies. I also used recipe #66591 instead of a packet from the store (I didn't have any on hand). I also always use the flour tortillas that you can buy at Costco that you cook yourself. These enchiladas have a bit of spice to them. They might be too spicy for some and not enough for others, they are perfect for us!!

Steps:

  • Brown the ground beef and onion.
  • Stir in taco seasoning mix, refried beans, green chilies, beef broth, and 1/2 cup enchilada sauce.
  • Cook on medium heat until thick.
  • Stir occasionally for 10-15 minutes. Remove from heat.
  • Fill each tortilla with about 1/3 cup of the mixture and a small handful of cheese.
  • Roll tight and place them seam side down, side by side in a 13x9-inch baking pan.
  • Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  • Bake on 350°F for 15-20 minutes.

These enchiladas are quick and easy. I believe I found this recipe on Kraft Foods. The velveeta makes them so creamy. The recipe calls for chopped cilantro on top, but I'm not a fan, so I leave that off. We serve with sour cream on top.

Steps:

  • Preheat oven to 350. Brown the hamburger, drain. Stir in half the velveeta and 1/2 cup of salsa. Cook until velveeta is melted.

They're technically easier-to-assemble burritos smothered in a delicious sauce (but they're really so much more than that). These are filled with a combo of flavorful stewed and mashed black beans, topped with tangy red enchilada sauce and Mexican cheese, then baked until bubbly and melty. Hot out the oven, the 'ladas are topped with pico de gallo and cooling lime crema. The only thing missing? A cold, tasty beverage!

  • • Adjust rack to top position and preheat oven to 475 degrees. Wash and dry all produce. • Dice tomato. Roughly chop cilantro. Halve, peel, and finely dice onion. Quarter lime. Core, deseed, and dice green pepper. Drain beans over a small bowl, reserving liquid.
  • • In a second small bowl, combine tomato, cilantro, 2 TBSP onion (4 TBSP for 4 servings), and a squeeze of lime juice to taste. Season with salt and pepper. • In a third small bowl, combine sour cream with a squeeze of lime juice to taste. Season with salt and pepper. Add water 1 tsp at a time until mixture reaches a drizzling consistency.
  • • Heat a drizzle of oil in a large pan over medium-high heat. Add green pepper; cook, stirring, until slightly softened, 2-3 minutes. • Add remaining onion; cook until just softened, 2-3 minutes. • Add Southwest Spice, half the beans, and 2 TBSP reserved bean liquid (you'll use more of each in the next step). Cook, stirring, until fragrant and warmed through, 2-3 minutes more. • Season with salt and pepper. Turn off heat.
  • • Meanwhile, heat a drizzle of oil in a small pot over medium-high heat. Add remaining beans; cook, stirring, until slightly softened, 2-3 minutes. • Add 3 TBSP remaining bean liquid (1⁄3 cup for 4 servings). (You may have some bean liquid left over.) Simmer until warmed through, 1-2 minutes. • Lower heat, then stir in 1 TBSP butter and salt (we used ½ tsp). (For 4, use 2 TBSP butter and 1 tsp salt.) • Turn off heat; mash with a potato masher or fork until mostly smooth. Season with pepper.
  • • Spread tortillas with mashed beans. Place a small amount of filling on one half of each tortilla. Roll up tortillas, starting with filled sides, to create enchiladas. Place seam sides down in an 8-by-11-inch baking dish or large ovenproof pan. (For 4 servings, use a 9-by-13-inch dish or two smaller ones.)
  • • Pour enchilada sauce over enchiladas to thoroughly coat. (TIP: You might not need all the sauce.) Top with Mexican cheese. • Bake on top rack until sauce is bubbly and cheese melts, 5-7 minutes. • Top enchiladas with lime crema and pico de gallo. Serve directly from baking dish with any remaining lime wedges on the side.

  • reheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.

1 cup finely chopped yellow onion
1 pound ground beef
3 cloves garlic (minced)
1 ½ teaspoons chili powder

19 ounces red enchilada sauce (about 2 ½ cups, divided)
15 ounce can black beans (rinsed and drained)
1 cup frozen corn or canned corn (drained)
¼ cup chopped fresh cilantro
12 ounces shredded cheddar, Monterey jack, Colby jack or Mexican cheese blend cheese (about 3 cups, divided)
10 medium-large flour tortillas (8-inch, soft taco size)
Optional, for serving: sour cream, sliced avocado, chopped red or green onion, chopped cilantro, etc.

Steps:

  • Preheat oven to 350° F.
  • Heat the olive oil in a large skillet over medium high heat. Add the onion and cook until softened, 2-4 minutes. Add the ground beef and cook, crumbling, until until the beef is browned. If there is a lot of excess grease from the beef, drain it off.
  • Add the garlic, chili powder, cumin, dried oregano, salt and pepper and cook, stirring, for 30 seconds. Remove the pan from the heat.
  • Stir in ½ cup of the enchilada sauce, the black beans, corn and cilantro.
  • Spread ½ cup of the enchilada sauce in the bottom of a greased 13x9-inch baking dish and ⅓ cup of sauce in the bottom of a greased 8x8-inch baking dish.
  • To assemble each enchilada, take one of the tortillas and put ½ cup of the meat filling down the middle of the tortilla, slightly to the side of the center. Sprinkle ¼ cup shredded cheese over the meat filling. Roll up the tortilla as tightly as you can and place it, seam side down, in one of the prepared baking dishes. Repeat with remaining tortillas and enchilada filling.
  • Spread the remaining sauce over the tops of the enchiladas. Sprinkle on the remaining cheese.
  • Bake for 25-30 minutes, or until hot and bubbly. Serve with toppings as desired.

Arrange enchiladas, seam-side down, in prepared dish. Pour remaining sauce over enchiladas. Top with cheeses. Bake at 400° for 20 minutes or until lightly browned and bubbly. Let stand 10 minutes.
