BEST SQUASH CASSEROLE WITH GREEN CHILE-SUMMER SQUASH RECIPES
Sliced yellow squash and onions baked in a cheesey sauce and topped with a parmesan bread topping.

Steps:
- Preheat oven to 350 degrees F
- Melt butter in a large skillet or wok over medium heat
- Add squash and onions, saute' until onions are translucent
- Place cooked squash and onions in a large mixing bowl, add cheddar cheese, parmesan cheese, sour cream, green chiles, salt and pepper
- Gently mix until well combine
- Pour the ingredients into a lightly oiled 2-quart baking dish ( or it can be sprayed with a cooking spray)
- Mix the breadcrumbs, parmesan cheese, and 1 tbsp melted butter in a small dish and sprinkle the crumb mixture on top of the casserole
- Bake, uncovered for 20 minutes until golden
- Remove from oven, let cool 5-10 minutes prior to serving.
- Garnish with chopped fresh parsley

- Combine eggs, oil, and biscuit mix.
- Stir in chillies, onion, garlic and half of the cheese. Stir in squash. pour into a greased 9X13 inch baking dish.
- Bake at 350 degrees for 40 minutes; sprinkle with remaining cheese and bake 5 minutes more.

- PREHEAT OVEN to 350. In a 14-inch pan, sauté onion in butter. Add squash and cook until slightly softened. Squash will release a lot of water, which must be drained. Mix squash and onion with cheese, soup, and green chilies and place in oiled casserole dish. Cover with bread crumbs and bake about 30 minutes or until hot throughout. Makes 10 servings.

I found this recipe in a magazine. John Wayne was my Daddy's favorite cowboy, so this quickly became one of his favorite dishes for me to make for him. I like to serve it when I make a pot of pinto beans, fried potatoes, and cornbread. Add some slices of onion, some chow chow and you have a good old "country dinner"! - Lightly grease the bottom of a 8x8 baking dish.
- Heat oven to 375 degrees.
- Spilt and seed green chilies and arrange chiles over the bottom of the baking dish.
- Sprinkle cheese over the chilies.
- Beat eggs, salt and milk together.
- Pour over the top of the cheese.
- Bake in the oven for about 20 minutes or until bubbly and set.
- Take out of oven and arrange tomato slices in a single layer on top.
- Return to the oven for 5 to 10 minutes.
