- Cook potatoes in boiling salted water for 2 minutes, or until just tender. Drain and transfer into a mixing bowl.
- Stir in the remaining ingredients except for the breadcrumbs and 1 tablespoon of the butter.
- Grease a 9-inch pie plate with butter then fill with the potato mixture, smoothing out the top.
- Sprinkle the breadcrumbs and add the remaining butter in small chunks on top.
- Bake for 30 minutes until the pie is puffed and golden. Serve!

Steps:
- Cook potatoes in boiling salted water for 25-30 minutes, until tender. Drain, peel and mash, using a potato masher, ricer or food mill.
- Stir in remaining ingredients except bread crumbs and 1 tablespoon butter.
- Heat oven to 400 degrees.
- Butter a 9 inch pie plate and sprinkle with half the crumbs.
- Fill plate with the potato mixture, smoothing top.
- Sprinkle with remaining crumbs and dot with the remaining butter.
- Bake 30 minutes until pie is puffed and golden.

- In a large bowl, combine the hash browns, egg, onion, Parmesan and salt. Press onto the bottom and up the sides of a 9-in. pie plate. - Place potatoes into a glass bowl, coat lightly with about 2 tablespoons of extra-virgin olive oil. Mix to coat.
- Trim the ends of the zucchini, then cut lengthwise into 1/4-inch-thick slices. Put in a separate bowl. Top with 3 tablespoons of extra-virgin olive oil, and season with salt and pepper, to taste.
- Preheat the oven to 375 degrees F. Lightly oil a deep 2 1/2 to 3-quart baking dish (about 9 by 12 inches). Then place about 1/4 cup of tomato puree and spread out to coat the bottom of the pan.
- In zucchini and potato bowls, add 2 tablespoons of garlic each and mix in well with a rubber spatula. Using the potatoes and zucchinis, make a layer in the prepared baking dish, alternating between the potato and zucchini, filling in any gaps with small pieces. Spread 1/2 cup of the tomato puree on top, then sprinkle 2 tablespoons of the Parmesan and 2 tablespoons of the bread crumbs. Top with some of the basil. Repeat the layering of the vegetables, tomato puree, Parmesan, bread crumbs and basil using all the vegetables. Cover the top with the remaining bread crumbs and Parmesan.
- Bake, uncovered, for about 1/2 an hour, then cover for the next 45 minutes of baking, finally uncovering for the last 15 minutes, until tender and bubbling, about 1 1/2 hours total cooking time. Remove from the oven and let cool to room temperature to allow the dish to settle and deepen in flavor.
- Tiella may be served hot, warm, or at room temperature. Reheat in a low oven, if desired. To serve, cut into squares and carefully lift out of the pan with a spatula.
- Bring 2 large pots of water to a boil. Lower the tomatoes into the water, blanch for 45 seconds to 1 minute. Place blanched tomatoes on a baking sheet, and peel the loosened skins. With a colander over a bowl, squeeze the seeds and innards out of each tomato. Set aside and refrigerate the clear strained liquid for other uses. Slice the peeled tomatoes into 1-inch chunks, and place chunks into blender. Puree thoroughly. Pour into bowl.
- Yield: 10 to 12 cups

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and cut into 1-inch chunks.
- Heat oil in an oven-safe skillet pan over medium heat. Add onion and cook until soft, about 5 minutes. Add zucchini and cook for 5 minutes. Stir in potato chunks and continue to cook until zucchini is soft, about 3 more minutes.

- Combine cubed zucchini, cubed potatoes, turmeric and garlic salt, and set aside for 5-10 minutes.
- Heat oil in a large heavy skillet, and sauté zucchini and potatoes mixture on medium-high heat for approximately 5-6 minutes, allowing them to become slightly golden.
- Remove potatoes with a slotted spoon, allowing oil to drain off and place in another dish for later use.
- Turn your heat down to a low heat and add the garlic paste, ginger powder, and curry powder, and allow to sauté for approximately 2-3 minutes.
- Add chopped tomatoes, sugar, salt, pepper, and water, and then turn the heat up to around medium high.
- Add the zucchini and potatoes mixture and allow to cook until the potatoes are tender but not mushy!
- Serve with chappatis!
- If you feel that you've made it too thick, you can always add a tiny bit of water to thin it out a little.
- If you find that adding a little water makes it too bland, you can always add some curry powder and some salt and pepper and heat for a few minutes.
- You will just need to taste test for your preferred flavor and thickness-- ENJOY!

- Pastry Crust: In the bowl of a food processor, place flour, butter and salt. Pulse a few seconds at a time until the mixture has a grainy texture. Add the egg, oil and water. Pulse again a few seconds at a time until the dough begins to form a ball. Add a little water if necessary. Remove the dough from the processor. Form a ball with your hands. Cover with plastic wrap. Refrigerate for 30 minutes.
- Mashed Sweet Potatoes: In a saucepan, sauté the onion and sweet potatoes in the butter for 2 minutes. Add the water and bring to a boil. Season with salt and pepper. Cover and simmer gently for about 25 minutes or until the potatoes are tender.
- Meanwhile, roll out the dough on a floured work surface. Line a 25-cm (10-inch) quiche plate. Refrigerate for 30 minutes.
- With the rack in the lowest position, preheat the oven to 180 °C (350 °F).
- In a food processor, puree 750 ml (3 cups) of sweet potatoes, the flour and cloves until smooth. Blend in the eggs. Season with salt and pepper.
- In a bowl, gently blend the mashed sweet potatoes with the remaining potatoes cubes. Adjust the seasoning. Spoon into the crust. Bake for 30 minutes.

ZUCCHINI AND POTATO BAKE
I found this recipe on Allrecipes.com, and changed it up a bit. I use a whole wheat Zesty breadcrumb my store has, but Italian seasoned are also really good too. Also, I sometimes change up the veggies according to what is seasonal: broccoli, carrots, onions, parsnips, or quartered fresh mushrooms. I love this cause it is really easy to throw together and change with what I have in the fridge. Just remember the cooking times of the veggies - squash and peppers cook faster than potatoes. Either cut the faster cooking veggies larger.....or cut the slower cooking veggies a bit smaller. This way everything can cook together and come out tasty!
