- Process or blend the shrimp with the garlic, scallions, salt, flour, sherry, and enough water to make a thick batter. Let stand, covered with plastic film, for 1 hour. Then fry, in drops of 1 heaping teaspoon, into the oil poured to a depth of 2 inches in a pan, for about 1 minute each side, or until golden brown. Drain on paper towels.
EASY FRIED SHRIMP AND TARTAR SAUCE

- Pour the oil into a heavy-bottomed pot fitted with a deep-frying thermometer. Heat over medium-high heat to 375 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
- In a medium mixing bowl, whisk together the rice flour and beer until a smooth batter is formed. Season with 1/2 teaspoon salt and pepper.
- Lightly salt the shrimp. Holding the tails, dip the shrimp into the batter to evenly coat on both sides.
- One by one, gently drop the battered shrimp into the hot oil. Fry, flipping once if necessary, until golden brown on both sides, 1 to 2 minutes. While frying the shrimp, be sure to monitor the temperature of the oil and maintain it at 375 degrees F. Transfer the fried shrimp to the cooling rack and sprinkle generously with salt.
- Serve the fried shrimp with Tartar Sauce for dipping.
- Mix the mayonnaise, dill, cornichons, vinegar, capers, mustard and some salt and pepper in a small bowl. Refrigerate until serving.

- Add remaining ingredients except oil for frying and stir until well blended.

- Remove with slotted spoon; drain on paper towel.
- Add a 1/2 teaspoon of baking powder to batter to make a much lighter crust, or use beer instead of milk for a barley flavor.

- Combine the cornstarch and flour in one bowl, then beat the eggs and 1/2 cup water in a second bowl. In a third bowl, combine the panko and seasoned breadcrumbs. Bread the shrimp by dipping them first in the flour mix, then the egg wash, then the breadcrumbs.
- Heat about 1/2 inch of oil in a nonstick skillet over medium heat to 350 degrees F.
- Fry the shrimp in batches until golden and crispy, approximately 2 minutes per side. Drain on a paper towel-lined plate and season with salt and pepper. Serve with Cocktail Sauce.
- Stir together the ketchup and horseradish in a bowl. Chill until ready to serve.
MORRISON'S CAFETERIA FRIED SHRIMP
Dunno where Morrison's Cafeteria is but this makes some mighty nice fried shrimp. Adapted from the Miami Herald. I like to use my deep fat fryer outside on the deck - all the crunchy shrimpy goodness outside & no greasy kitchen cleanup! Shrimp are coming in here fast & furious for a while longer - this is a great way to use them.

- Blot shrimp dry with paper towels and set aside. Heat several inches of oil to 350 degrees in a deep, heavy pot or deep fryer.
- Combine the dredging mixture in a shallow dish.
- Meanwhile, whisk the baking powder, salt and paprika into the flour. Whisk in the egg and water, blending well.

- Prepare shrimp by cleaning thoroughly and removing shell, legs and devein.
- Mince the shrimp.
- Combine all of the ingredients except oil Use a teaspoon of the mixture and shape into balls.

- Remove from oil and place onto paper towells to drain excess oil.

- Boil shrimp in crab boil
- Peel and devein.
- Chop into small pieces.
- Divide biscuits into layers. (Flaky biscuits pull apart easier) Spray muffin tins and line with dough.
- Mix shrimp, cheeses, mayonnaise, worcestershire sauce and tabasco.
- Fill each dough lined muffin tin with mixture.
- Bake at 350 degrees for 12-15 minutes.
- To reheat from freezer- 350 degrees for 20-25 minutes until frozen center is warm.
- Mini muffin tins can be used and biscuit layers can be cut in half for smaller servings.
