There are three secrets to great popovers: Make sure the pan is hot before you pour in the batter, fill each section not more than half full and no peeking while they're in the oven!

1 1/2 tablespoons unsalted butter, melted, plus softened butter for greasing pans
1 1/2 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 1/2 cups milk, at room temperature

Steps:

  • Preheat the oven to 425 degrees F.
  • Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.

3 large eggs, room temperature
1 1/2 cups whole milk, room temperature
1 1/2 cups all-purpose flour
1 1/4 teaspoons coarse salt
Vegetable-oil nonstick cooking spray

Steps:

  • If eggs and milk are cold, before combining, submerge whole eggs in warm water 10 minutes and heat milk until just warm. Preheat oven to 450 degrees with a nonstick popover pan on rack in lowest position.
  • After you have combined eggs and milk in a large bowl, whisk together until very frothy. This should only take about 1 minute. Have the flour and salt measured out and ready to go.
  • Add flour and salt to egg mixture. We tested out a blender and an electric stand mixer when making the batter, but concluded that whisking by hand produces the most tender, airy popovers.
  • Whisk flour and salt into egg mixture just until batter is the consistency of heavy cream with some small lumps remaining. See those air bubbles? They are what will cause the popovers to rise.
  • Remove popover pan from oven and coat with cooking spray. If you prefer a standard muffin tin, only coat (and fill) the outer cups; they get better circulation in the oven. (Also, reduce baking time by 5 minutes.)
  • Fill popover cups about three-quarters full with batter. Bake 20 minutes, then reduce oven temperature to 350 degrees. Continue to bake until golden brown and dry to the touch, about 20 minutes more.
  • Popovers lose their crunch if they linger in the pan, so turn them out on a wire rack immediately and poke a small opening in the side of each with a paring knife to let the steam escape. Serve right away.

  • Preheat oven to 450 degrees F (230 degrees C). Grease and flour six 6-ounce custard cups.
  • In a medium bowl beat eggs slightly, Beat in flour, milk and salt until just smooth; being careful not to overbeat. Fill custard cups 1/2 full.
  • Bake at 450 degrees F (230 degrees C) for 20 minutes. Decrease oven temperature to 350 degrees F (175 degrees C) and bake for 20 minutes more. Immediately remove from cups and serve piping hot.

7 large jalapeñoes
6 oz cream cheese, room temperature
¾ cup shredded sharp cheddar cheese
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
14 strips bacon

Steps:

  • Preheat the air fryer to 325°F (160°C).
  • Wearing latex gloves, slice the jalapeños in half lengthwise. Carefully scoop out the seeds and membrane.
  • In a medium bowl, mix together the cream cheese, cheddar cheese, salt, and pepper with a rubber spatula. Transfer the cheese mixture to a piping bag fitted with a medium round tip or a resealable plastic bag with a corner snipped off.
  • Pipe the cream cheese filling into each jalapeño half.
  • Wrap each jalapeno in 1 strip of bacon.
  • Working in batches, place half of the poppers in the air fryer and fry for 8-10 minutes, until the bacon is crispy. Repeat with the remaining poppers.

½ cup Amish Friendship Bread Starter
1 cup milk (warm to the touch but not hot)
3 large eggs
¾ teaspoon salt
1 cup flour
2 tablespoons butter (melted)

Steps:

  • Preheat oven to 450° F (232° C). Place muffin or popover tin inside.
  • In a small pan, warm milk.
  • In a medium mixing bowl, combine starter, milk, eggs and salt. Add flour until just incorporated--a few lumps are okay. Be careful not to overmix.
  • Carefully remove muffin or popover tin and brush with melted butter or use a nonstick spray. Quickly pour batter into every other muffin cup (or, if using a popover tin, fill every cup). Fill to ½ full.
  • Return to oven and bake for 10-12 minutes, then reduce heat to 350° F (177° C) . Bake for an additional 10 minutes or until popovers are golden brown and crusty.
  • Remove from oven and make a small slit on the side of each popover. They'll deflate a little bit.
  • Serve immediately and ENJOY!

4 large eggs
1 3/4 cups all-purpose flour
1 1/4 teaspoons salt
1 large bunch fresh chives
1 pound sliced Irish bacon*
about 1/2 cup vegetable oil
*available at many supermarkets

Steps:

  • In a blender blend milk, eggs, flour, and salt until just smooth. Transfer batter to a bowl. Finely chop enough chives to measure 1/2 cup and whisk into batter. Chill batter, covered, at least 1 hour and up to 1 day.
  • Preheat oven to 400°F.
  • Trim fat from bacon. In a large nonstick skillet cook fat over low heat, stirring occasionally, until most of fat is rendered and solids are golden brown. Discard solids and increase heat to moderately high. Heat rendered fat until hot but not smoking and sauté bacon in batches until just golden, about 1 minute on each side. Transfer bacon as cooked to paper towels to drain. Pour rendered fat into a measuring cup and add enough oil to measure 1/2 cup total.
  • In a 12- by 2-inch enameled cast-iron casserole (3 1/2-quart) or a 13- by 9- by 2-inch glass baking dish heat oil mixture in middle of oven 5 minutes. Quickly arrange bacon evenly in casserole or baking dish and pour batter over it. Bake pudding in middle of oven until puffed and golden brown, about 50 minutes.

1/4 cup warmed reserved beef drippings or melted butter

Steps:

  • Preheat the oven to 450 degrees F.
  • Place a popover or large muffin pan in the preheated oven for 10 minutes. In a mixing bowl, beat the eggs until they are foamy. Whisk in the milk. Add the flour, salt and pepper and beat just until the batter is smooth.
  • Pour the beef drippings in the cups of the hot pan, then pour in the batter filling the cups halfway and bake until the popovers are puffy and golden brown, about 30 minutes. Serve immediately.

  • In a large bowl, beat eggs and milk. Combine flour, cheese and salt; add to egg mixture and mix well. Cover and let stand at room temperature for 45 minutes., Preheat oven to 450°. In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. Grease cups of a nonstick popover pan well with some of the bacon drippings; set aside. Stir bacon into batter; fill prepared cups two-thirds full., Bake 15 minutes. Reduce heat to 350° (do not open oven door). Bake until deep golden brown, about 15 minutes longer (do not underbake)., Run a table knife or small metal spatula around edges of cups to loosen if necessary. 4 cups plus 1 tablespoon all-purpose flour, divided
2 tablespoons baking powder
2 teaspoons salt
3/4 pound cold unsalted butter, diced
4 extra-large eggs, beaten lightly
1 cup cold heavy cream
1/2 pound extra-sharp yellow Cheddar, small-diced
1 cup minced fresh dill
1 egg beaten with 1 tablespoon water or milk, for egg wash

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine 4 cups of flour, the baking powder, and salt in the bowl of an electric mixer fitted with a paddle attachment. Add the butter and mix on low speed until the butter is in pea-sized pieces. Mix the eggs and heavy cream and quickly add them to the flour-and-butter mixture. Combine until just blended. Toss together the Cheddar, dill, and 1 tablespoon of flour and add them to the dough. Mix until they are almost incorporated.
  • Dump the dough onto a well-floured surface and knead it for 1 minute, until the Cheddar and dill are well distributed. Roll the dough 3/4-inch thick. Cut into 4-inch squares and then in half diagonally to make triangles. Brush the tops with egg wash. Bake on a baking sheet lined with parchment paper for 20 to 25 minutes, until the outside is crusty and the inside is fully baked.
