BUSIA'S POLISH COFFEE CAKE
This recipe was handed down from my Busia (Grandma) to my mom and aunts, who in turn gave it to my cousins and me. Now my daughters and son have the recipe to hand down to their children.

Steps:
- 1. Dissolve 2 pkgs. dry yeast in the warm water until foamy.
- 2. Heat milk to scalding and remove from heat. Add sugar, salt and butter to the milk. Mix well to blend and cool to lukewarm.
- 3. Beat in eggs, one at a time, mixing thoroughly after each. Add yeast mixture, vanilla, cinnamon and nutmeg. Mix in raisins.
- 4. Start adding flour, a cup or two at a time, mixing well for about 5 minutes. Dough will be sticky and wet. Cover dough and raise in a warm spot till double in size.
- 5. While dough is raising mix streusel topping ingredients until crumbly.
- 6. Punch dough down. Grease 2 9x5" loaf pans or 3 smaller ones. Divide dough between the pans, patting down to even out.
- 7. Sprinkle topping over the loaves and let rise in pans until the dough reaches the top of the pans. Bake at 350 degrees for 35 minutes, until loaves are golden brown. (Place pans on a baking sheet to avoid sugar spilling over and making a mess in your oven. Remove pans from oven. Take loaves out of pans and place on a rack to cool.
POLISH COFFEE CAKE
This recipe makes 3 deliciously simple yeasted coffeecakes.

- In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1 cup butter until melted. Let cool until lukewarm.
- In a large bowl, beat together the eggs and 1 1/2 cups sugar. Mix in the nutmeg, orange extract, vanilla extract, and the yeast mixture. Stir in 3 cups flour and the salt. Stir in 1/3 of the milk mixture. Mix in the remaining flour and milk mixture in two alternating additions. Cover bowl, and let rise until doubled, about 45 minutes.
- In a small bowl, prepare the topping by cutting together 1/2 cup butter and 2/3 cups sugar until mixture resembles coarse crumbs.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 3 10-inch Bundt pans.
- Divide dough into the prepared pans, and sprinkle with the topping mixture.
- Bake in preheated oven for 30 to 40 minutes, until a toothpick inserted into center comes out clean.

GRANDMA'S BUTTERMILK COFFEE CAKE
This is the best coffeecake I've ever had! So easy to make and always a hit. Not sure if it is really grandma's recipe or if she got it somewhere.

Steps:
- Preheat oven to 350 degrees.
- Mix flour, salt, and 1/2 teaspoon of cinnamon into a large mixing bowl. Add sugar and oil and mix on medium speed until well blended and feathery.
- Remove 3/4 cup of this mixture and put in a smaller mixing bowl for the topping. Add walnuts and remainder of cinnamon to the contents of the smaller bowl for the topping, mix well and set aside for later.
- To remaining mixture (not the topping) add baking soda, baking powder, egg and buttermilk. Mix until smooth, this is the coffeecake batter.
- Spoon the cake batter into a buttered 9 x 13 baking dish. Sprinkle the topping over the cake batter and press lightly with fingers. Bake at 350 degrees for 25 - 30 minutes.

- Mix oil, buttermilk, egg and vanilla.
- Add flour, sugar, soda, cocoa and salt.
- Mix all together well and add coffee.
- Pour into lightly greased and floured 8X13X2 sheet pan (I have made it in a bundt pan too).
- bake 350F degrees for 30 minutes.

GRANDMA'S PLACEK
Placek (plah-sek) in Polish just means cake, but placek around back home (and probably other cities with a high Polish population) refers to a sweet yeast bread topped with sugary crumble, with golden raisins served on Easter. You hardly see placek, which is a shame! This bread can also be wrapped well and frozen, then taken out as necessary for eating and giving away, meaning it can be made ahead of time! Placek is the kind of bread that begs to be spread with butter - it's not like a moist sour cream coffee cake. It has a drier crumb, making it an even better partner to coffee or tea.

- Warm milk over low heat until scalded (soft bubbles form around edge of pot) but not boiling.
- Add butter and remove from heat.
- Mix in sugar, salt, nutmeg and vanilla. Let cool.
- Meanwhile, sprinkle yeast into water in 2 cup measure,
- stir in 1/2 teaspoon sugar.
- Let stand undisturbed to "proof" about 10 minutes.
- Add eggs to milk mixture, one at a time, beating well.
- Add yeast-in-water mixture.
- Add flour with raisins.
- Knead dough 5 minutes, adding extra flour as needed.
- Placed kneaded dough into greased pan and grease top of dough to prevent it from drying out. Keep warm to rise until double, about 1 to 2 hours.
- Knead dough again (for 5 minutes) and put into greased loaf pans. Let rise 1 to 2 hours again.
- This recipe makes approximately 1 bunt, 2 large and 2 small loaf pans.
- Crumble topping ingredients together.
- Add topping to bread in loaf pans.
- Preheat oven and bake at 350 for 30-40 minutes.
- Bread is done when tester comes out clean.

- For coffee cakes: Combine the warm milk, softened butter, sugar, eggs, salt, lemon zest, and nutmeg in a large Dutch oven. Whisk until smooth.
- Sprinkle the yeast over the milk mixture. Whisk until smooth again, then allow to sit for 5 minutes.
- Gradually add the flour to the milk mixture, stirring with a wooden spoon until combined. In between additions of the flour mixture, stir in an egg. I do this is three parts: flour mixture, first egg, flour mixture, second egg, flour mixture, then the last egg. Once finished mixing, the dough should pull away from the sides of the pot, and be very sticky.
