SWEET POTATO MUFFINS

These tasty muffins are the perfect brekkie, and sure to keep you feeling full till lunch.

olive oil
600 g sweet potatoes or ½ a butternut squash
4 spring onions
1-2 fresh red chillies
6 large free-range eggs
3 tablespoons cottage cheese
250 g wholemeal self-raising flour
50 g Parmesan cheese
1 tablespoon sunflower seeds
1 tablespoon poppy seeds

Steps:

  • Preheat the oven to 180°C/350°F/gas 4. Line a 12-hole muffin tin with paper cases or 15cm folded squares of greaseproof paper, then lightly wipe each one with oiled kitchen paper.
  • Peel the sweet potatoes or squash and coarsely grate into a large bowl. Trim the spring onions, then finely slice with the chilli and add to the bowl, reserving half the chilli to one side.
  • Crack in the eggs, add the cottage cheese and flour, then finely grate in most of the Parmesan and season with sea salt and black pepper. Mix until nicely combined.
  • Evenly divide the muffin mixture between the cases. Sprinkle over the sunflower and poppy seeds, then dot over the reserved slices of chilli.
  • Use the remaining Parmesan to give a light dusting of cheese over each one, then bake at the bottom of the oven for 45 to 50 minutes (if using squash, it'll be a bit quicker - check after 35 minutes), or until golden and set.
  • These are amazing served warm 5 minutes after taking them out of the oven, and good kept in the fridge for a couple of days. Enjoy 2 muffins per portion.

2 large sweet potatoes, peeled and cut into 1-inch pieces
Kosher salt
2 cups heavy cream
3/4 cup polenta
2 teaspoons garlic powder
1/4 cup grated Parmesan
Freshly ground black pepper

Steps:

  • Add the sweet potatoes to a large pot, cover with water and add 1 tablespoon salt. Bring to a boil over medium-high heat and cook until the potatoes are easily pierced with a knife, 10 to 15 minutes. Drain and puree the potatoes in a food processor until smooth.
  • Bring the heavy cream and 2 cups water to a simmer in a saucepan over medium heat. Slowly whisk in the polenta and garlic powder. Reduce the heat to low and continue to cook, stirring occasionally, until the polenta is smooth and cooked through, about 15 minutes. Stir in the sweet potato puree and cheese until well combined. Season with salt and pepper.

Number Of Ingredients 13

1 sweet potato (about 200g), peeled and chopped into small chunks
drizzle of flavourless oil , such as vegetable or sunflower
1 large avocado , peel and stone removed, roughly chopped (about 150g prepared weight)
100g ground almonds
100g fine polenta
80ml maple syrup
3 large eggs
1 ½ tsp baking powder
1 tsp bicarbonate of soda
100ml semi-skimmed milk
50g feta , crumbled, optional
2 tbsp mixed seeds
¼ tsp sweet paprika

Steps:

  • Place the sweet potato in a heatproof bowl, cover with cling film and microwave on High for 8 mins, or until really soft. Leave to cool completely. Grease 9 holes of a muffin tin with a little oil (or line each hole with a square of baking parchment.)
  • Chop 1/4 of the sweet potato into even smaller pieces and set aside. Place the sweet potato, avocado, almonds, polenta, maple syrup, eggs, baking powder, bicarb, milk and 1/4 tsp salt in the bowl of a food processor. Blend until completely smooth. Divide the mixture evenly between the muffin tin holes, then top with the reserved chopped sweet potato, feta, seeds and a dusting of paprika. Bake for 22 mins at 180C/160 fan/ gas mark 4, or until risen, browning on top and cooked through - check by inserting a skewer to the centre, it should come out dry. Cool in the tin for 5 mins, then transfer to a wire rack and cool completely. Store in a sealed container for up to 3 days.

Polenta Bites with Wild Mushrooms and Fontina image

Store-bought tubes of polenta are the ultimate appetizer shortcut: just slice and toast in the oven, top with sautéed wild mushrooms and a sprinkling of grated Fontina, then bake again until melty and irresistible. A pinch of crushed red pepper flakes and a splash of Sherry vinegar punch up the flavor of the mushrooms.

4 pounds prepared polenta, sliced into 1/2-inch-thick rounds (about 30 rounds)
2 tablespoons extra-virgin olive oil, plus more for brushing
1/4 cup (1/2 stick) unsalted butter
2 pounds assorted wild mushrooms (such as oyster, crimini, and/or stemmed shiitake), cut into thick slices
2 shallots, thinly sliced
1/4 cup Sherry vinegar
1 3/4 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
1/2 cup chopped parsley leaves
4 ounces Fontina cheese, coarsely grated (about 1 cup)

Steps:

  • Preheat oven to 450°F. Brush both sides of polenta slices very lightly with oil and arrange on 2 rimmed baking sheets. Roast polenta until lightly golden brown and warmed through, about 25 minutes.
  • Meanwhile, melt butter with remaining 2 Tbsp. oil in large, deep skillet over medium-high heat. Add mushrooms and cook, stirring often, until tender and browned, about 12 minutes. Add shallots, vinegar, salt, black pepper, and red pepper and cook, stirring, until tender, about 5 minutes. Stir in parsley.
  • Divide mushroom mixture between baking sheets with polenta. Top with cheese. Continue to roast until cheese is melted, about 5 minutes.
  • Arrange polenta bites on a platter and serve.

  • Mushroom mixture can be made 1 day ahead. Transfer to an airtight container and chill.

2 sweet potatoes, baked, peeled and meat pureed in food processor
2 cups heavy cream
2 cups water
3/4 cup cornmeal (polenta grind)
4 tablespoons brown sugar
1/4 cup shredded asiago cheese
salt and pepper

Steps:

  • Bring the heavy cream and water to a boil.
  • Reduce heat to medium.
  • Slowly add the cornmeal, stirring constantly.
  • Cook over low heat for 15 minutes, stirring regularly.
  • Add pureed sweet potato, brown sugar and cheese, combine well.
  • Finish with a dab of butter and season with S+P.

Steps:

  • Combine flour, polenta, chives, parsley, capsicum & sweet potato in a bowl.
  • Mix the egg & milk together & add to the dry ingredients.
  • Combine well and then spoon into lightly greased muffin pans.
  • Bake at 200.C for approx 15-20 mins.
