5 GREAT PRAWN DIPPING SAUCES
Choose from a classic pink Marie Rose / Thousand Island sauce, Tartare, Seafood Cocktail Sauce, a Thai Sweet Chilli Lime Sauce for something fresher (not everyone likes mayo!) or our Family Favourite Prawn Dipping Sauce, a cross between Marie Rose and Tartare with more freshness and flavour. See notes for description of each sauce. All these sauces will be great with any seafood (fish, squid) and especially with lobster, crab, balmain bugs, scallops etc. No video today - these are all just dump and mix!!

Steps:
- Fill a large pot with about a 1/2 gallon of water, add the salt and squeeze in the lemon juice; toss the halves in there too for extra flavor. Add the herbs and seafood seasoning. Bring to a boil over medium-high heat and simmer for 5 minutes to infuse the water with the aromatics.
- Reduce heat to medium-low and add shrimp. Simmer, uncovered, for 5 minutes or until the shrimp are bright pink and the tails curl. Using a slotted spoon, remove the shrimp from the poaching liquid and chill thoroughly before peeling. Serve with lemon wedges and Bloody Mary Cocktail Sauce as part of a raw shellfish bar.
- Combine the tomatoes, celery, and onion in a blender and puree to break the vegetables down. Add the remaining ingredients and puree until smooth. Chill before serving with a raw bar.
POACHED FISH IN SHRIMP SAUCE
This is a variation of a recipe which I found in an old cookbook I purchased over 25 years ago titled, The Encyclopedia of Creative Cooking. I have changed it slightly to adapt to a less expensive version. It is really good with any kind of fish...but my favorite is with fresh salmon. If you read the entire recipe you will see that although it looks complicated at first glance it really is very easy and quick to make. Preparation time includes thickening time of cooking the sauce.

HIYASHI SOMEN - COLD NOODLES WITH DIPPING SAUCE MARK BITTMAN
Simple, quick and cold. This seems like the perfect hot summer lunch or light dinner! This is so easy to "jazz up" with toppings on the side. Poached and chilled shrimp, cilantro, thinly sliced cucumbers, ginger; just serve on the side and let guests add what they like! From Mark Bittman's The Best Recipes in the World. Mark's note: If you want to significantly speed up an already fast dish, skip the dried shrimp and sugar.

- Test-kitchen Tip: To peel the cooked shrimp while leaving the tail intact, begin by removing the legs. Then, holding the tail firmly between thumb and forefinger, pull off the shell. Using a small, sharp knife and starting just below the tail, make a shallow slit down the back of the shrimp to expose the black vein (some shrimp will not have one). Use tip of knife to remove the vein.

- Prepare the dipping sauce first. Mix the minced ginger and minced scallion in a small heat-proof bowl. Heat up 1 tablespoon of oil until it just starts to smoke, and pour it over the ginger and scallion to flash fry the mixture. Now, add the light soy sauce, water, sugar and black vinegar. Stir until the sugar is completely dissolved. That’s the sauce!
- Next, trim, de-vein, and clean the shrimp as shown in the step-by-step photos. Rinse, drain and set aside.
- In a medium pot, add 5 cups of water, 3 slices of ginger, the 2 whole scallions, 1½ tablespoons salt, and 2 tablespoons Shaoxing wine. Bring the mixture to a boil. Add the shrimp and stir slowly. The shrimp will cook very fast, and they’re done once they’ve turned completely pink. It should only take a minute. Scoop the shrimp out of the pot immediately to avoid overcooking. Plate and serve with the dipping sauce!
- By the way, these shrimp are delicious fresh, at room temperature, and chilled, so this is perfect to make in advance for a party or dinner.

- In a good size mixing bowl thoroughly stir together all the ingredients except the diced shrimp. You want to make sure the sugar and salt become fully dissolved into the mix.
- You should be able to fill each dumpling wrapper with about 2 heaped teaspoons of the shrimp filling. I was using square wrappers, so made slightly squarish dumplings.
- A 12-inch, bamboo steamer with three trays and a lid is grand for this, but a steel steamer works just as well. The important thing is to line the steaming trays with some lightly oiled, greaseproof paper. Lightly oiled is really important – it makes sure that the dumplings don’t stick to the paper as they steam. I used a little plain coconut oil for this, just enough to give the paper a glistening coating on its upper surface.
