1/2 cup sour cream
1 tablespoon freshly squeezed lemon juice
1 tablespoon minced fresh dill
1 teaspoon prepared horseradish, drained
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 pound (4 ounces) smoked salmon, minced

Steps:

  • Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth. Add the sour cream, lemon juice, dill, horseradish, salt and pepper, and mix. Add the smoked salmon and mix well. Chill and serve with crudites and/or crackers.

1/2 cup sour cream
1 tablespoon lemon zest
1 tablespoon fresh chopped dill
1 tablespoon prepared horseradish
1 teaspoon smoked paprika
1/4 - 1/2 teaspoon crushed red pepper
6 ounces smoked salmon, (skin removed)
1/4 cup chopped green onions
1 1/2 tablespoons capers, (rinsed and drained)

Steps:

  • In the bowl of a food processor, measure out the cream cheese, sour cream, lemon zest, dill, horseradish, paprika, and crushed red pepper. *Add 1/2 cup sour cream if you want your dip thick and "spread-like" or 3/4 cup sour cream if you want it more loose like a dip.
  • Cover and puree the ingredients. Then scrape the bowl with a rubber spatula.
  • Now add the smoked salmon, green onions, and capers to the food processor. Cover and pulse until the salmon is broken into small pieces and well incorporated. You can puree it smooth, or leave it a little chunky.
  • Refrigerate at least one hour before serving.

It is often hard to find a good store-bought dip and once you realise just how simple and quick this is to make at home, you won't be buying one again!

125 g cream cheese, softened (remove from fridge to soften)
125 g sour cream
35 ml lemon juice
1/2 tsp horseradish
1 spring onion (trimmed and finely sliced (use white and green parts))
200 g hot smoked salmon, boneless and skinless ((save 50g for garnishing at end))
2 tbsp dill leaves (chopped finely)
2 tbsp chives (chopped finely)
extra herbs for garnishing
pepper and salt (to taste) (*season at the end as the salmon itself is salty)

Steps:

  • Before starting this recipe, make sure the cream cheese is softened. I take mine out of the fridge and leave it out on the bench for approximately 30-45 minutes.
  • Place the first 5 ingredients into the bowl of a mini food processor (soft cream cheese, sour cream, lemon juice, horseradish and chopped spring onion) and process for about 10 seconds or until fairly smooth.Scrape down the sides of the bowl and then 150g of the smoked salmon (reserve the remaining 50g for garnishing at the end) to the food processor and blitz 3-4 times until the salmon is distributed well but still has some texture. If you prefer a smoother consistency, then process for longer. Remove the mixture to a bowl, and stir through the finely chopped dill and chives. Season with pepper, and add salt to taste (if required). Garnish with extra chopped herbs and flake over the remaining salmon. Optional: garnish with a dollop of salmon caviar.Storage: Keep refrigerated in an airtight container. Best eaten within 1-2 days of making (see notes).

This dip is creamier than a lot of the pate' style smoked salmon spreads. You won't find your chips and crackers snapping in half as you go in for a dip. The green onions give it a little added texture and the garlic makes it more savory. If you don't have your own smoked salmon, you can always buy some at the supermarket. Just make sure it's wild Alaskan salmon!

200g tub soft cheese
1 tbsp crème fraîche, only if you have some
juice half a lemon

  • If you aren't using smoked salmon trimmings then chop the salmon into small pieces. Tip the soft cheese, crème fraîche (if using) and lemon juice into a food processor, season generously with black pepper and blitz to your liking. 1 (3 ounce) package smoked salmon, cut into 1-inch chunks
1 teaspoon Worcestershire sauce
1 teaspoon dried dill weed

3 drops liquid smoke flavoring
¼ cup heavy whipping cream, or as needed

Steps:

  • Blend cream cheese and butter together in a bowl using a mixer. Add salmon, Worcestershire sauce, dill, paprika, and liquid smoke; mix well. Stir in cream to desired consistency.
