PIZZA MEAT LOAF CUPS
Fix and freeze these moist little meat loaves packed with pizza flavor. They're great to reheat for an after-school snack or quick dinner on soccer night. My family likes to drizzle extra pizza sauce on top. -Susan Wollin, Marshall, Wisconsin

- Preheat oven to 375°. In a large bowl, mix first 4 ingredients. Add beef; mix lightly but thoroughly. Divide into 12 portions; press each onto the bottom and up sides of a greased muffin cup. Add cheese to centers., Bake until meat is cooked through, 15-18 minutes. If desired, top with additional sauce and basil before serving. Freeze option: Freeze cooled meat loaves in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through.

PIZZA MEATLOAF CUPS
A kid friendly dish and delicious for grown-ups too. I used a special pan from Pampered Chef, but a jumbo muffin tin will work here too. I use a frozen pepper stir-fry mix which is essentially green, red and yellow peppers and onions. Using it frozen helps keep the meatloaf moist. This recipe is so versatile. You can customize each meatloaf by adding pepperoni, spinach, mushrooms, olives, bacon, etc. in the middle!

Steps:
- Preheat oven to 350 degrees.
- Place frozen veggies in a mini chopper and chop fine; set aside.
- Combine meat, chopped veggies, dressing mix, egg and Parmesan cheese until JUST mixed; do not overmix.
- Scoop about 1/3 c meat mixture into each muffin cup and press down.
- Sprinkle 2 T shredded mozzarella cheese on top of each cup.
- Place another scoop of the meat mixture on top of the cheese on each cup, pushing to the edges to seal.
- Bake for 35 minutes.
- Remove from oven and top each muffin with 2 T pizza sauce and 1 T shredded cheese.
- Return to oven and bake an additional 10 minutes, until cheese is melted.

Steps:
- In a bowl, combine the egg, pizza sauce, bread crumbs and Italian seasoning.
- Fold beef into mixture and mix well.
- Divide meat mixture into 12 greased muffin cups.
- Press mixture into bottom and up the sides.
- Fill center with cheese.
- Bake at 375°F for 15-18 minutes or until meat is no longer pink.
- Serve immediately with additional pizza sauce and cheese if desired.
- Or cool, place in freezer bags and freeze for up to 3 months.
- To use frozen pizza cups:.
- Thaw in the refrigerator for 24 hours.
- Heat in microwave on high for 2-3 minutes or until heated through.
- Top with additional pizza sauce and cheese if desired.
PIZZA MEATLOAF SURPRISE
This recipe adds a special twist to the common meatloaf. It's a combination between meatloaf and pizza ingredients. Kids love this recipe. Change the pizza ingredients based on your favorite pizza toppings.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine beef, tomatoes, mushrooms, eggs, bread crumbs, pepper, Italian seasoning, and garlic in a large bowl. Set aside a few teaspoons of olives for the topping; add remaining olives to the bowl. Knead with your hands until fully mixed.
- Divide 1/2 of the beef mixture between two 8-1/2x4-1/2-inch metal or glass loaf pans, filling each halfway. Use your fingers to create a canoe shape lengthwise down the middle of each loaf. Place a layer of pepperoni slices down the middle; cover with a layer of mozzarella cheese. Repeat with another layer of pepperoni slices and cheese. Reserve a handful of cheese for the topping.
- Cover the pepperoni and cheese with the remaining beef mixture. Top meatloaves with a sprinkle of cheese and black olives.
- Bake in the preheated oven until beef is no longer pink, about 50 minutes.

Steps:
- Brown meat, onion and garlic; drain.
- Stir in tomato paste and seasonings.
- Cook on low for 5 minutes (until thick, stirring constantly).
- Press biscuits on bottom and up sides of a greased muffin tin (they won't cover the whole side).
- Spoon meat mix evenly and sprinkle each with cheese.
- Bake at 375°F for 10-15 minutes.
- NOTE: When I first made this, I didn't think it would make much of a "cup" around the meat, but to my surprise they came out in perfect little "cups".
