Steps:

  • unchecked 1. Heat a large pan of lightly salted water to boiling. Add onion and rotini pasta. Cook for 5 minutes. Meanwhile, cut up any large pieces of broccoli.
  • unchecked 2. Add fresh broccoli florets and cook an additional 5 minutes.
  • unchecked 3. In a medium saucepan, heat RAGÚ® Classic Alfredo sauce, Monterey Jack cheese and ham over medium-low heat until bubbling, stirring occasionally.

1 1/2-2 lbs boneless skinless chicken breasts, about 3-4
salt and pepper
1/2 cup chopped onion
0.5 (1 lb) box rotini noodles
1 (10 3/4 ounce) can cream of broccoli soup
1 (10 3/4 ounce) can cream of mushroom soup
8 ounces Velveeta cheese, cubed
1/2 cup mayonnaise
1 (4 ounce) can mushrooms, drained
1 (10 1/2 ounce) box frozen chopped broccoli, thawed, undrained
1 cup French's cheddar fried onions

Steps:

  • Season chicken breasts with a little salt and pepper, place in medium frying pan with a little oil.
  • Add chopped onions.
  • Cover with tight lid and cook breasts over medium-low heat til done, about 12-18 minutes depending on their size. Turn breasts and stir onions occasionally to prevent browning. Set aside to cool when done.
  • In small pot, cook rotini noodles for 8 minutes, drain.
  • Meanwhile, in large bowl, combine soups, cheese and mayo. Microwave til melted, stirring occasionally, about 5 minutes.
  • Cut up chicken and add chicken and onions to cheese mixture.
  • Fold in noodles, broccoli, and mushrooms.
  • Pour into greased 13x9-inch pan or casserole dish.
  • Bake in 350ºF oven for 20 minutes.
  • Top with cheddar fried onions, and bake 5 minutes longer.

I whipped this up as a slightly healthier baked mac and cheese that acts as a whole meal. I've used canadian bacon or ham for this recipe, but that is easily subbed for veggies for a comforting veggy meal.

1 cup shelled edamame or 1 cup cooked mushroom
1 cup broccoli, floweretts cut small
2 cups cooked whole wheat rotini pasta
3 tablespoons butter
1/4 cup wheat flour
1 1/2 cups milk
3/4 cup shredded monterey jack cheese
1/4 cup grated parmesan cheese (can use shredded or small cubes of Parm as well)
1/2 cup shredded cheddar cheese
1/4 cup breadcrumbs
2 tablespoons mustard
1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • Cook your pasta slightly less than al dente, drain and rinse with cold water.
  • Melt butter in a pan and sprinkle in flour. Cook for about two minutes then add milk and whisk to combine.
  • Cook milk mixture (bechamel) on medium low for about 5 minutes until the sauce has thickened and is bubbly. The sauce should have reduced slightly as well. If the sauce is too thick add more milk.
  • Add Monterey jack, Parmesan, mustard, salt and pepper to bechamel. Combine while cheese melts and taste and reseason if necessary (remember it's less salty after combining with the pasta and veggies).
  • Mix pasta, veggies and meat (if using) into the cheese sauce. Pour half of the mixture into an oven-proof container and sprinkle with 1/4 cup shredded cheddar. Layer the other half of mixture and then sprinkle bread crumbs and then cheese on top.
  • Bake at 350 for 30 minutes or until cheese on top is melted and casserole is bubbly.

1 lb fresh broccoli, cut up
1 lb rotini pasta (or your favorite)
4 cloves garlic
1/2 cup heavy cream
1/2 cup butter
salt and pepper
parmesan cheese

Steps:

  • Cook broccoli in boiling salted water until tender.
  • Reserve cooking water and remove broccoli to cool in ice water.
  • Replace cooking water on heat and let it return to a boil.
  • Cook pasta in water until tender and drain well.
  • With food processor running, drop cloves of garlic into top feeder tube and let run until garlic is minced.
  • Add broccoli and cream and process until smooth.
  • Remove broccoli mixture to large skillet, add butter and heat slowly only until the butter melts.
  • Add pasta to broccoli cream and heat through until thickened.
  • Add salt and freshly ground black pepper to taste.
  • Place on serving plate and top with Parmesan cheese.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
  • Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
