- 1. First I must say you can find the OG recipe on the Chef Boyardee site... Now, place beefaroni through cumin in a large saucepan and stir.
- 2. Bring to a boil over medium-high heat. Reduce heat, cover, and simmer 15 minutes.
- 3. Top with TONS of cheese and tortilla chips. Actually, that part is up to you. We were VERY HUNGRY campers:)
- 4. This is a MUST on camping trips! It's so easy, and filling. Well, if you're sharing with 6 people you may need to add bread and a salad or something. But who takes salad camping?!

We love Mexican food and I love easy meals, this fits both. Serve with a salad and it's a meal!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cook pasta in a large pot of boiling water until al dente. Drain.
- In a large skillet, cook and stir ground beef and chopped onion over medium heat until brown. Mix in tomato soup, diced tomatoes, and taco seasoning mix. Stir in pasta.
- Spoon beef mixture into a 9x13 inch baking dish. Sprinkle crumbled taco chips and grated cheese on top.
- Bake for 30 to 35 minutes, until the cheese is melted. Serve with chopped green onions and sour cream, if desired.

Steps:
- In large deep skillet, brown ground beef and onion (until meat is no longer pink).
- Drain and return meat to skillet.
- While beef is browning, cook pasta according to package directions.
- While pasta is cooking, add taco mix and water to ground beef; cook for 5 minutes or until water is absorbed (medium heat).
- When pasta is done, drain. Pour into meat mixture and add pepperoni.
- Add cheese, milk, salt and pepper.
- Stir until cheese is melted and pasta is covered with meat mixture.
- Dot with sour cream if desired.

MEXICAN RICE A RONI SKILLET
Steps:
- Preheat oven to 400 degrees F. In large skillet, cook Rice-A-Roni according to directions on package. At the same time in another skillet, brown ground beef and add taco seasoning according to direction on package.
- Combine Rice-A-Roni and taco meat along with corn, chilies and diced tomatoes. Top with shredded cheese.
- Bake for 10 minutes or until cheese is melted. Top with sour cream and additional toppings.

- Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
- To prepare rice, melt butter in a skillet. Add rice mixture. Sauté over medium-high heat until golden brown.
- Slowly stir in water, seasoning packet, and diced tomatoes. Bring to a boil. Cover and reduce heat to low. Simmer 15 to 20 minutes, until the rice is tender.
- While the rice is cooking, brown ground beef in another skillet. Drain. Add taco seasoning, water, and salsa. Simmer for 5 minutes, until liquid has been absorbed. Remove from heat.
- In a large mixing bowl, combine cooked rice, taco meat, cream of chicken soup, sour cream, and black beans.
- Spread mixture into prepared pan. Top with shredded cheese.
- Bake uncovered for 30 minutes.
