A crumble is the British name for a blend of berries or other fruit with a textured sugary topping, often with oats; the result is all but synonymous with a crisp. Our individual servings include rhubarb, strawberries, and raspberries nestled under an oatless blend of butter, brown sugar, flour, salt, and grated orange zest.

1 1/2 pounds rhubarb, cut crosswise into 1/4-inch-thick slices, leaves discarded
2 cups raspberries, or sliced strawberries, or a combination
1 1/4 cups sugar
2 tablespoons instant tapioca
1/2 teaspoon finely grated orange zest, plus 2 tablespoons fresh orange juice
Pinch of salt
Crumble Topping for Rhubarb-Berry Crumbles
Vanilla yogurt, for serving (optional)

Steps:

  • Preheat oven to 375 degrees. Stir together rhubarb, berries, sugar, tapioca, orange zest, orange juice, and salt in a bowl. Let stand 15 minutes, stirring occasionally.
  • Divide rhubarb mixture among 6 small ceramic baking dishes (1 cup capacity and 5 1/2 inches in diameter). Transfer baking dishes to a rimmed baking sheet lined with parchment paper. Sprinkle with topping, dividing evenly.
  • Bake until topping turns golden and juices are bubbling, 30 to 35 minutes. Let cool on sheet on a wire rack 30 minutes. Serve with yogurt, if desired.

8 eating apples
1 tsp cinnamon
3 tbsp sugar , any kind
½ orange
1 punnet raspberries or blackberries
75g cold butter
50g plain flour
50g oats

Steps:

  • Ask a grown-up to turn the oven on to 200C/180C fan/ gas 6. Peel the apples with a potato peeler, quarter them, cut out the cores, then chop up.
  • Tip the apple into a bowl with the cinnamon and 1 tbsp sugar. Squeeze the juice from the halved orange and add to the bowl, too.
  • Add the berries to the bowl and mix everything together. Tip the fruit mixture into the baking dish and pat it down.
  • Chop three-quarters of the butter into small pieces. Put it in a bowl with the flour. Use your fingers to pinch and rub the butter into the flour.
  • Stir the oats and the rest of the sugar into the flour mixture, then sprinkle it on top of the apple and berries in the baking dish.
  • Dot the rest of the butter over the crumble. Ask a grown-up to put it in the oven for 40 mins or until the apple is cooked. Eat with ice cream or custard.

3 tablespoons freshly squeezed lemon juice
3/4 cup all-purpose flour
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed

3/4 teaspoon ground cinnamon
3/4 teaspoon kosher salt
1/4 pound (1 stick) unsalted butter, diced, at room temperature
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Place 6 creme brulee dishes on a sheet pan lined with parchment paper.
  • In a large bowl, toss together the blueberries, raspberries, strawberries, 1/2 cup granulated sugar, the cornstarch, lemon zest, and lemon juice. Divide the mixture evenly among the creme brulee dishes, including any juices that collect.
  • For the crumble, combine the flour, granulated sugar, brown sugar, oats, cinnamon, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix it on low speed until the mixture is crumbly. Pinch it with your fingers until it makes large crumbles and distribute it on the berries (it will not cover them entirely). Bake for 35 to 40 minutes, until the juices are bubbly and the topping is browned. Serve warm with a small scoop of vanilla ice cream.

CRUMBLE BERRY PIE

Assorted berries baked in a pie shell with a crumble topping. My husband requested it so I combined the best berry pie recipes with the best berry crisp recipes, and got the best of both worlds! I used a frozen medley of blueberries, raspberries, and lingonberries that I got from Costco.

4 cups berries (thawed if frozen)
1/2 cup sugar
1/4 cup water
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla
1 dash salt
1/2 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup flour
1/2 cup oats
1/4 cup butter, melted

Steps:

  • Preheat oven to 375.
  • Mix topping ingredients together, stirring in the melted butter last, and set aside.
  • Cook all the filling ingredients EXCEPT the berries on medium, whisking frequently, until it is well blended and thick (5-7 minutes).
  • Remove filling from heat and stir in berries.
  • Pour filling into pie crust (don't poke the crust with a fork).
  • Crumble topping over filling, completely covering it (no berries showing through).
  • Place pie on a cookie sheet and bake on middle rack of oven for 45 minutes or until done.
  • Let cool for at least 10 minutes, and serve. Optionally, top with whipped cream or vanilla ice cream.

2 cups all-purpose flour
¼ teaspoon fine salt
¾ teaspoon baking powder
¾ cup white sugar
¾ cup frozen unsalted butter
1 ½ teaspoons vanilla extract
2 large egg yolks
1 teaspoon apple cider vinegar, or as needed
1 cup blueberries
1 cup raspberries
1 cup blackberries
1 teaspoon lemon zest
2 teaspoons fresh lemon juice
⅓ cup white sugar
2 teaspoons cornstarch
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
  • Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.
  • Place about 1/2 of the crumble mixture into the bottom of a 2-quart baking dish. Press mixture down using a flat cup until well compacted. Spread the berries over the crust. Sprinkle the remaining crumble mixture on top, squeezing some of it into clumps.
  • Bake in the preheated oven until top is beautifully browned and berry syrup bubbles on the surface, 40 to 45 minutes. Let cool to room temperature, about 30 minutes.

100g plain flour
50g rolled oats
100g butter, cut into cubes
50g golden caster sugar
400g strawberry, hulled and halved if large
100g golden caster sugar
1 ½ tbsp cornflour
500g mixed berry and currants, such as raspberries, blackberries, blueberries, redcurrants or blackcurrants
ice cream or custard, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the flour, oats, butter and sugar in a bowl, squash together with your fingers into a crumble texture, sprinkle over a baking tray and bake for 10 mins, stirring and roughly breaking up halfway through cooking. Can be done up to 2 days ahead, and stored in an airtight container.
  • Meanwhile, put the strawberries, sugar and cornflour in a large pan. Stir together and set over a medium heat. Cook until the strawberries just start to release their juices and soften, then stir in the remaining berries. Transfer to an ovenproof baking dish.
  • When the crumble topping is cooked, sprinkle it over the fruit, and place back in the oven for a further 15 mins until bubbling and golden. Leave for 5 mins before serving with ice cream or custard.

1 ¾ cups old-fashioned rolled oats
¾ cup all-purpose flour (or gluten-free baking flour blend, see Notes below for suggestions)
⅓ cup brown sugar, packed
Zest of 1 lemon (~2 tsp.)
½ tsp. baking powder
¼ tsp. cinnamon
¼ tsp. salt
½ cup (8 Tbsp.) unsalted butter, softened to room temperature - may substitute coconut oil or vegan butter for dairy-free and/or vegan
½ tsp. pure vanilla extract
2 ½ cups fresh berries (we used 1 cup each diced strawberries and blueberries + ½ cup raspberries)
½ cup fruit-sweetened strawberry or raspberry jam (such as Crofters, Trader Joe's or Thrive Market)
½ tsp. pure vanilla extract
Pinch of salt

Steps:

  • Preheat the oven to 375℉. Line an 8×8-inch square baking pan with parchment paper.
  • In a bowl, mix together the oats, flour, brown sugar, lemon zest, baking powder, cinnamon, and salt.
  • Add the softened butter and vanilla and, using a large spoon or your hands, work the butter into the oat mixture until you get a crumbly dough that will stick together if you pinch it between your fingers.
  • Measure out 1 ½ cups of the crust and crumb topping mixture and set aside in the refrigerator.
  • Press the remaining crust mixture into the bottom of the parchment paper-lined baking pan using the back of a spoon or spatula or slightly damp fingers. Press the mixture into the pan firmly then use a fork to prick the crust 8-10 times.
  • Bake the crust for 10-12 minutes or until the edges look just slightly brown and the crust starts to puff and look set.
  • While the crust is baking, wipe out the bowl you used to mix the crust and add the filling ingredients. Stir to combine.
  • Remove the crust from the oven then spread the filling in an even layer over the hot crust. Crumble the remaining crust mixture over the top of the filling.
  • Bake for 30-35 minutes or until the crust is lightly browned and the filling is bubbling.
  • Remove from the oven and place the pan on a wire rack and allow the bars to cool completely then transfer the pan to the fridge for at least 2 hours before cutting.
  • To cut cooled bars, use the parchment paper to lift the bars onto a cutting board then cut into 16 squares.
  • Store leftover bars in a covered container in the fridge for up to 4 days.

This easy layered traybake is inspired by American coffee cakes - which contain no actual coffee, but are meant to be eaten with your morning cuppa. If you were really pushed for time, you could use a very good quality soft jam for the filling, but it will be much sweeter.

200g/7oz frozen berries (raspberries, blackberries, cherries, blueberries, blackcurrants all work well, or a mix)
50g/2oz caster sugar
2 tbsp cornflour
110g/4oz plain flour
70g/2½oz cold unsalted butter, cut into smallish cubes
30g/1oz caster sugar
220g/8oz plain flour
¾ tsp baking powder
½ tsp cinnamon
50g/2oz ground almonds
200g/7oz caster sugar
80g/3oz butter, melted
2 free-range eggs
40g/1½oz yoghurt thinned with 2 tbsp milk

Steps:

  • Preheat the oven to 180C/350F/Gas 4. Grease and line a rectangular baking tin (approximately 26cm x 20cm/10½in x 8in).
  • In a saucepan combine the fruit with 50ml/2fl oz water. Bring the fruit just to the boil, reduce the heat and simmer for 2-3 minutes.
  • In a mixing bowl combine the caster sugar with the cornflour. Stir into the fruit and continue to cook for 2-3 minutes, stirring frequently, until the mixture is thick and jammy. Set aside to cool.
  • For the crumble topping, add the flour to a mixing bowl and rub in the butter until the mixture resembles fine breadcrumbs and no large lumps of butter are left. Stir in the sugar and set aside.
  • For the cake, in a large mixing bowl, sift together the flour, baking powder and cinnamon. Stir in the ground almonds until thoroughly combined.
  • In another bowl beat together the sugar with the melted butter, eggs, yoghurt and milk mixture until thoroughly mixed. Stir into the flour mixture just to combine. Don't overmix it, but watch out for big lumps of unmixed flour.
  • Spoon two-thirds of the mixture into the lined tin, gently spreading out evenly to the corners. Spoon the cooled fruit mixture evenly over the top.
  • Using a teaspoon, dot the remaining cake batter evenly on top of the fruit. This will not cover the entire cake, but make little hillocks with gaps in between.
  • Sprinkle the crumble mixture over the top, filling in all the gaps to cover the fruit.
  • Bake in the oven for 45-50 minutes, until the crumble topping is golden-brown. Allow to cool for ten minutes in the tin, then transfer the cake in its paper to a cooling rack. This is cake is beautiful eaten while still warm, with a dollop of crème fraîche or yoghurt - but is equally nice the next day with a cup of coffee.

RIDICULOUSLY EASY BLUEBERRY CRUMBLE

Steps:

  • Heat oven to 375 degrees Fahrenheit.
  • Add blueberries, lemon juice, 2 tablespoons of flour, sugar, and pinch of salt to a 9-inch pie dish (or use a 2-quart baking dish). Toss well until combined.
  • Combine flour, oats, sugar, and the salt in a medium bowl. Add the melted butter then stir until all the flour has been moistened by the butter and topping is crumbly.
  • Sprinkle over blueberry filling. (We like to use our hands to do this. As we sprinkle, we press the crumbles together to create larger clumps of topping.)
  • Bake 25 to 35 minutes until juices are thickened and the topping has turned light golden brown. Cool 10 minutes, and then serve.

Steps:

  • Prepare the filling. Mix the berries, sugar, cornflour, and vanilla extract in a large mixing bowl. You can also do this directly in the dish you plan to bake them in (and save up on washing).
  • Prepare the streusel topping. Mix the flour, coconut, butter (room temp is best), sugar, and salt. Mix the ingredients until well combined. It's best to use your fingertips to help the butter soften and get mixed with the rest of the dry ingredients - and also create the thick crumb-like consistency of the crumble topping. Add the nuts and mix to combine.
  • Combine and bake the berry crumble. Pour the berry mixture into a baking dish (20x30cm/8x12"-inch rectangular or 25cm/10" round tin). Then top it with the buttery mixture.Bake in the oven for about 25 minutes at 180ºC/350ºF (fan-assisted). The crumble is ready when it starts bubbling and the crust is golden. 4 cups frozen mixed berries* (NOT thawed (about 24 ounces frozen fruit))
3 tablespoons granulated sugar
3 tablespoons all purpose flour
zest from 1 lemon
pinch of salt
1 cup old fashioned rolled oats
1/2 cup brown sugar
6 tablespoons all purpose flour
1/2 cup butter (cut into small cubes)

Steps:

  • Preheat oven to 350 degrees with the oven in the middle position.
  • In a mixing bowl, make the berry filling by combining all ingredients and tossing to combine. Set aside.
  • In a separate mixing bowl, make the oat crumble by combining all ingredients, then use your fingers to pinch the butter and incorporate with the dry ingredients. Keep pinching and tossing together with your hands until evenly combined. You will be left with many pea sized pieces of butter mixed in with the oat mixture. Set aside.
  • Pour the berry filing into a 1-1/2 quart baking dish (or 8x8 pyrex baking dish, a pie baking dish, or even 12" cast iron skillet). Top with the oat crumble topping, and spread to an even layer.
  • Bake uncovered until the berry filling is bubbling, and the oat crumble is golden brown, about 1 hour. Let cool for 1 hour before serving. Serve room temperature. Delicious with ice cream or whipped cream.

½ cup packed light brown sugar
½ cup granulated sugar
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
1 cup unsalted butter, cut into ½ inch cubes
1 large egg, lightly beaten
½ cup Fisher Pecans, finely chopped
1-½ cups fresh blueberries
1-½ cups fresh raspberries
1 cup fresh blackberries
1 tablespoon lemon juice
½ cup granulated sugar
2 tablespoons cornstarch

Steps:

  • Preheat oven to 375 degrees F. Grease a 9x13-inch baking pan with butter or nonstick cooking spray. You can also line the pan with foil or parchment before greasing the pan to ensure they do not stick.
  • In the bowl of a food processor, combine the light brown sugar, granulated sugar, flour, baking powder, cinnamon and salt. Pulse the mixture in the food processor a few times to incorporate the ingredients. Add in the butter and continue to pulse the food processor until the mixture comes together and small clumps form. Add in the egg and pulse again to combine.
  • If you do not own a food processor, you can use a pastry blender or two forks to cut the butter into the flour mixture. It will take a little more time, but it is totally doable.
  • Spoon half of the crumble mixture into the prepared pan and use your hands or the bottom of a measuring cup to pat the mixture into an even and compact crust layer.
  • Add your berries to a large bowl and gently toss them with the lemon juice.
  • In a small bowl, whisk together the granulated sugar and cornstarch. Sprinkle the cornstarch and sugar mixture over the top of the berries and gently toss to cover the berries with the mixture. Pour berries evenly over the crust.
  • Crumble the remaining crumble topping over the berries. To make little clumps, simple squeeze the crumble topping in your hand and sprinkle the crumbs to create a topping layer. Sprinkle pecans on top of crumble topping.
  • Bake in preheated oven for 45 minutes, or until the topping is golden brown. Cool completely before serving.
  • Serve these berry crumble bars alone, or slightly warmed up with a scoop of vanilla bean ice cream.

For the filling:
600 grams fresh berries (about 4 1/4 cups)
2 Medjool dates, pitted and very finely chopped
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
For the crumble:
180 grams quick oats (about 2 1/4 cups)
80 grams ground almonds (about 3/4 cup)
7 Medjool dates, pitted and very finely chopped
4 tablespoons butter
3 teaspoons ground ginger
Seeds of 1/2 a vanilla pod

Steps:

  • Preheat the oven to 190°C/ 375°F/ Gas Mark 5.
  • Put the filling ingredients into a pan over low heat and cook for about 4 minutes or until the fruit just begins to soften. Tip the fruit into an ovenproof dish and set this aside.
  • Put the oats, ground almonds, dates, butter, 2 teaspoons of the ground ginger and the vanilla seeds into a bowl and, using your fingertips, rub this gently together to just combine so everything is evenly mixed in. Tip the crumble topping over the fruit and then sprinkle over the remaining 1 teaspoon of ground ginger.
  • Pop into the oven and cook for about 25 minutes or until the crumble is just going golden brown. Once cooked, remove from the oven and leave to cool for a few minutes before serving.
