ONE-PAN COCONUT SHRIMP NOODLE BOWLS

One-Pan Coconut Shrimp Noodle Bowls image

Provided by Bev Weidner

Categories     main-dish

Time 30m

Yield 2 huge bowls or 4 smaller ones

Number Of Ingredients 15

1 tablespoon extra-virgin olive oil
1 teaspoon sesame oil
1 pound extra-large shrimp, thawed, peeled and deveined
Salt and pepper
3 cloves garlic, minced
1 tablespoon minced fresh ginger
1 yellow bell pepper, diced
One 13.5-ounce can coconut milk
2 cups fish stock (or seafood or chicken stock)
7 ounces pad Thai noodles (about half a box)
1 teaspoon fish sauce
2 teaspoons sriracha sauce
1 cup cilantro leaves, plus more for garnish
2 scallions, diced
1 lime (or more!)

Steps:

  • Heat the oils in a large straight-sided pan over medium-high. Add the shrimp, season with salt and pepper and sear on both sides until you get a nice sear, about 5 minutes total. Remove from the pan and set aside.
  • Back in the pan, add more oil if needed and toss in the garlic, ginger and bell pepper. Saute for one minute, then add the coconut milk, stock, noodles, fish sauce, sriracha sauce, cilantro and scallions. Bring to a boil, reduce the heat and let simmer until the noodles cook through, about 5 minutes.
  • Take off the heat and add a few big squeezes of lime juice. Now taste that. UGH. Need anything? Add a little salt if you want. More lime juice? Yes.
  • Stir the shrimp back in and toss to combine. Serve with more cilantro on top!

COCONUT SHRIMP

Categories     appetizer

Time 15m

Yield 6 servings

Number Of Ingredients 9

Canola or safflower oil, for frying
1/2 cup plain bread crumbs
1/2 teaspoon salt, eyeball it in palm of hand
2 pinches ground cayenne pepper
1 1/2 teaspoons Chinese five-spice powder, available on spice aisle
1 lime
1 cup shredded coconut
2 egg whites
1 pound large fantail shrimp, deveined and peeled -- ask for easy peels at fish counter

Steps:

  • Heat 2 inches oil over medium high heat. A cube of bread should brown in a 10 count when oil is ready.
  • Season bread crumbs with salt, cayenne pepper and five-spice powder. Cut the lime into wedges and reserve.
  • Toss coconut with seasoned bread crumbs to combine. Lightly beat the egg whites. Dip shrimp in the egg whites, then coat with the coconut breading. Fry shrimp 5 minutes in hot oil until evenly golden and crispy. Garnish with lime wedges and serve.
  • TIMING: To serve all of the courses together, a mix-n-match, family-style presentation, you can bread the shrimp and wait to heat oil and fry when you are ready to put the chicken stir-fry in the pan. Or, for separate courses, serve the shrimp with the salad, have your rice cooking and your ingredients prepped for the stir-fry, then stir-fry the chicken only when guests are ready for it.

Provided by Julie Sahni

Categories     dinner, easy, quick, weekday, main course

Time 20m

Yield Two servings

Number Of Ingredients 9

1/2 cup dried unsweetened coconut flakes
1/2 pound medium-large shrimps (about 14 to 16), shelled and deveined, tails intact
1/2 teaspoon minced garlic
1/2 teaspoon crushed or grated fresh ginger
1/2 teaspoon lemon juice
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon ground cumin
1/4 teaspoon coarse salt
3/4 teaspoon cornstarch

Steps:

  • Spread out the coconut flakes in a 10-inch microwave-proof pie plate or dish. Toast, uncovered, at 100 percent power in a 650- to 700-watt microwave carousel oven for 3 to 5 minutes, or until lightly golden. Stir once during the cooking time. (The coconut will color unevenly.) Remove from the oven and set aside to cool.
  • Place the shrimps in a bowl. Add the remaining ingredients and mix well to coat the shrimps. Lift the shrimps by their tails and dip them one at a time in the toasted coconut. Coat them evenly but lightly. Arrange the shrimps in the microwave-proof pie plate or dish, petal fashion, with the tails toward the center of the pan.
  • Cook, covered, at 100 percent power in the microwave oven for 1 to 2 minutes, or until the shrimps are just done. They should be pink and firm. Remove and serve.

1 teaspoon white sugar
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper
3 tablespoons fresh cilantro, minced
1 fresh jalapeno pepper, chopped
1 tablespoon fresh lemon juice
1 cup coconut milk
3 tablespoons vegetable oil
