This roast beef is super easy for people who don't have a ton of time to devote to cooking but need to put on a dinner for a large family or group. It comes out perfectly tender with a super flavorful, delicious outer edge and is very tender. Overnight marinating infuses the flavors throughout the entire roast. Mouth-watering!

5 pounds beef rib roast
1 (12 fluid ounce) can or bottle beer (such as Rickard's® Red)
½ cup honey
½ cup soy sauce
¼ cup Montreal steak seasoning
2 teaspoons minced garlic

Steps:

  • Use a metal skewer to poke some holes throughout beef rib roast so marinade can penetrate the muscle.
  • Whisk together beer, honey, soy sauce, Montreal steak seasoning, and garlic in a bowl; pour into a large resealable plastic bag. Add the rib roast, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in refrigerator at least 24 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove rib roast from the marinade. Discard remaining marinade. Place roast into a roasting pan with a rack.
  • Cook the roast until hot and slightly pink in the center, about 2 1/2 hours. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Remove from oven, cover with aluminum foil, and let rest on top of stove for 20 minutes before slicing and serving.

1 boneless beef chuck roast (2 to 3 pounds)
1 large sweet onion, thinly sliced
1 can (14-1/2 ounces) reduced-sodium beef broth
1/2 cup water
3 chipotle peppers in adobo sauce, chopped
1 tablespoon adobo sauce
1 envelope au jus gravy mix
1 tablespoon Creole seasoning
1 tablespoon chili powder
2 teaspoons ground cumin
6 French rolls, split
Guacamole and salsa, optional

Steps:

  • Place roast in a 3- to 4-qt. slow cooker; top with onion. Combine the broth, water, chipotle peppers, adobo sauce, gravy mix, Creole seasoning, chili powder and cumin; pour over meat. Cover and cook on low until meat is tender, 8-10 hours., Remove roast; cool slightly. Skim fat from cooking juices. Shred beef with 2 forks and return to slow cooker; heat through. Using a slotted spoon, place meat on rolls. Serve with guacamole or salsa if desired and the cooking juices. Freeze option: Freeze individual portions of cooled meat mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally. 1/2 cup minced garlic, plus more for au jus
1/4 cup salt
3 tablespoons ground black pepper, plus more for au jus
3 tablespoons granulated onion
3 tablespoons dried thyme
1 tablespoon dried rosemary
16 ounces Irish stout, such as Guinness
One 5-pound boneless beef rib-eye or prime rib
2 egg yolks
5 tablespoons minced garlic
3 tablespoons prepared horseradish
2 1/4 teaspoons lemon juice
1 1/2 teaspoons Dijon mustard
3/4 teaspoon salt
1 3/4 cups olive oil
Serving suggestions: sliced white Cheddar, demi-baguettes

Steps:

  • For the prime rib rub: Preheat oven to 450 degrees F.
  • Mix the garlic, salt, pepper, granulated onion, thyme and rosemary together in a small bowl. Pour the Irish stout and 2 cups water into a large metal roasting pan fitted with a rack inside. Rub seasoning mix all over prime rib and place in the roasting pan fat-side up. Roast, uncovered, 30 minutes. Reduce oven temperature to 325 degrees F. Cover roast with tin foil and roast until a meat thermometer inserted into the thickest part registers 145 degrees F for medium-rare, about 2 hours. Transfer to a cutting board, wrap in foil and let rest for 20 minutes before slicing. Save drippings in pan to make au jus.
  • For the horseradish aioli: Place yolks, garlic, horseradish, lemon juice, Dijon and salt into a food processor. Process until smooth, then drizzle in olive oil until it reaches desired consistency.
  • To make au jus, pour pan drippings into a small saucepan. Add black pepper and minced garlic to taste. Add water if more au jus is desired than what was left from roasting the meat. Bring to a simmer on stovetop, and simmer a few minutes.
  • To make the sandwich: Soak a 1/3-pound slice prime rib in au jus briefly, then saute in a pan to warm, and top with two slices of white Cheddar. Served on a demi-baguette with 2 ounces of horseradish aioli, along with a side of au jus for dipping. Repeat with 5 more slices.

Steps:

  • To make the Garlic Au Jus: In medium sauce pan, heat oil over medium heat. Then add onions, garlic and dry herbs, and cook, stirring ofte, about 1 minute. Do no let garlic brown.
  • Then add red wine, soy sauce and Worcestershire sauce. Increase heat, bring to simer and let liquid reduce by half. Add beef broth and simmer for 5 minutes. (If using homemade stock, you may need to season with salt and pepper.).
  • You can make the recipe to this point up to 3 days in advance and keep, covered, in refrigerator.
  • To make and serve sandwiches: Reheat au jus. Split bagueette pieces and spread each side evenly with Boursin cheese. Divide roast beef among sandwiches. Close sandwiches, place on baking sheet and bake at 450 degrees for about 3 minutes or until just warmed. Serve with small cups hot au jus for dipping.

4 cups low-sodium beef stock
1 cup white wine vinegar
2 tablespoons sugar
1 teaspoon coriander seeds
1 teaspoon kosher salt
1 star anise
1 bay leaf
1 clove garlic
2 cups thinly sliced radishes (about 8 ounces)
4 crusty hoagie rolls
1 pound Homemade Roast Beef, thinly sliced, recipe follows
8 thick slices gruyere
Watercress, for serving
1 tablespoon fresh rosemary leaves, minced
1 tablespoon fresh thyme leaves, minced

One 4-pound boneless beef eye round roast

  • For the au jus: Heat the oil over medium heat in a medium saucepan. Add the peppercorns, salt, thyme, garlic, rosemary and shallots. Cook the shallots, stirring occasionally, until they become translucent, 6 to 8 minutes. Add the sherry and simmer, a few minutes. Add the stock and simmer, 20 to 25 minutes. Remove the saucepan from the heat and strain the liquid. Keep warm.
  • For the pickled radishes: Simmer 1/2 cup water, the vinegar, sugar, coriander seeds, salt, star anise, bay leaf and garlic. After 10 minutes of simmering, pour the mixture over the radishes in a heat-proof container and cool.
  • For the sandwich build: Place the bottom halves of the rolls on a work surface. Place the sliced Homemade Roast Beef on the bottom. Top with 1 slice gruyere each, some pickled radishes and watercress. Cover with the tops of the rolls. Cut each sandwich in half, dunk into the au jus and realize sometimes leftovers are just better.
  • Preheat the oven to 400 degrees F. Mix the rosemary, thyme, salt, pepper and garlic in a small bowl. Rub the mixture all over the roast, cover with plastic wrap and refrigerate, about 20 minutes.
  • Heat the oil in a large heavy skillet over high heat. Wipe off the excess garlic and herbs and add the roast to the pan. Sear the roast on all sides, 2 to 3 minutes per side. Transfer the roast to a roasting pan with a rack. Roast until an instant-read thermometer inserted into the center registers 125 degrees F, about 50 minutes. Transfer the roast to a cutting board and let rest, about 10 minutes. Thinly slice the roast and serve.

1 shallot, chopped
1 tablespoon all-purpose flour
1 jigger dry sherry, optional
2 cans beef consomme, found on broth and soups aisle or beef broth
1 1/2 pounds deli sliced roast beef
Grill seasoning blend for steak, such as Montreal Steak Seasoning Blend, or, coarse salt and pepper
4 torpedo sandwich rolls, split

Steps:

  • In a large, shallow skillet over moderate heat, melt butter. Add shallots to butter and saute 2 minutes. Add flour to butter and shallot and cook a minute longer. Whisk in sherry and cook liquid out. Whisk in consomme in a slow stream. Bring sauce to a bubble and allow to simmer over low heat until ready to serve sandwiches.
  • Pile meat loosely across your cutting board or a large work surface. Season meat with grill seasoning or salt and black pepper. Set out 4 ramekins or small soup cups for dipping sauce, 4 dinner plates and 4 split torpedo rolls. To assemble, using a pair of kitchen tongs, dip meat into loose au jus sauce and pile into rolls. This is one of the best recipes I've come up with for beef roast. The cheapest cuts come out tasting like you slaved over a stove all day long. You can add potatoes and carrots to the recipe if you like, or shred it and serve it as a French Dip sandwich with the au jus juice from the crock pot on the side. If you are watching your sodium, use the lite soy sauce and it will taste just as delicious.

2 cloves garlic (minced )
1 tablespoon Worcestershire sauce

8 slices provolone cheese

Steps:

  • Place the roast in crockpot. Pour the soup and consomme over the top and then add garlic and Worcestershire sauce.
  • Cover and cook on low for 8 hours or high for 4 hours. (For the most tender beef, cook on low)
  • For the dipping sauce, once beef is done cooking, remove 3 cups of the juice from the crockpot and place in small saucepan. Turn heat to medium and bring to a boil. Reduce heat and let cook for about 10 minutes or reduced by about half.
  • Preheat oven to 350°F.
  • Transfer the beef to a plate or cutting board and cut into thin slices or shred with a fork.
  • Open sandwich rolls and lay out on a baking sheet, place meat on each roll and top with provolone cheese. Cover with foil and bake for 5 minutes or until cheese is melted and rolls are slightly toasted.
  • Serve immediately with the dipping sauce on the side.

2.75 pounds top round roast beef ((or as big as you want it))
1 onion ((medium, 4 thick slices off of it))
2 cloves garlic ((slivered))
1 tablespoon kosher salt
1/2 teaspoon pepper
1 teaspoon dried rosemary
1 teaspoon dried basil
1 teaspoon dried tarragon
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 325 F
  • In a roasting pan, place the four slices of onion on the bottom
  • With a small blade, cut small holes in various places in the roast and push slivered garlic into the holes
  • Combine salt, pepper, rosemary, basil and tarragon in a small bowl, forming a rub
  • Pick the roast in your had and sprinkle some of the rub on the bottom. Place roast on the onion slices and sprinkle rub on the top round roast. Use your hands to rub in on the meat
  • Give the roast a few shakes of garlic powder because you can never have enough garlic :)
  • Place roasting pan on the rack in the middle of the oven. Cook for 20 - 30 minutes per pound
  • Check internal temperature with a thermometer, depending on how done you want it. Medium rare will be between 130 - 135 degrees
  • Take roast out of oven and let it rest 15 minutes before slicing into it
  • Place slices on plates and add some veggies and a potato
  • Serve

1 Tablespoon olive oil
1 shallot ((chopped))
1 Tablespoon all-purpose flour
10 ounces beef consommé ((use 2 cans if you like a lot of dipping sauce))
1 teaspoon steak seasoning ((I prefer McCormick Montreal))
3/4 pound lean roast beef ((thinly sliced))
4 slices Swiss cheese ((thinly sliced))

Steps:

  • Preheat oven to 400°F. Slice the baguette into 4. Then cut horizontally to make the sandwiches.
  • In a large skillet over medium heat, add olive oil and heat for 1 minute. Add shallots and sauté for 2 minutes. Add flour and sauté 1 more minute.
  • Slowly whisk in beef consommé. Bring to a boil over high heat. Reduce heat to low and simmer. Add steak seasoning and mix until combined.
  • Separate roast beef and place in the au jus sauce until warm. Using tongs, place an equal portion of beef on each section of baguette or rolls. Top with a slice of cheese. Bake for 3-5 minutes, or until the cheese has melted.

Crockpot French Dip Sandwiches are an easy dinner idea that you'll fall in love with. Tender beef atop a toasted sandwich roll with an incredibly delicious dipping sauce makes this slow cooker recipe a winner!

3-4 pounds beef chuck roast
2 cans (10.5 ounces each condensed French Onion Soup)
1 can (10.5 ounces Beef Consommé)
2 cloves minced garlic
1 tablespoon Worcestershire sauce
8 sandwich or hoagie rolls
8 slices provolone cheese

Steps:

  • Place the roast in the crockpot. Pour the soup and consomme over the top and then add garlic and Worcestershire sauce.
  • Cover and cook on low for 8 hours or high for 4 hours. (For the most tender beef, cook on low)
  • For the dipping sauce, once the beef is done cooking, remove 3 cups of the juice from the crockpot and place it in a small saucepan. Turn heat to medium and bring to a boil. Reduce heat and let cook for about 10 minutes or reduced by about half.
  • Preheat oven to 350 degrees F (177 degrees C).
  • Transfer the beef to a plate or cutting board and cut into thin slices or shred with two forks.
  • Open sandwich rolls and layout on a baking sheet, place the meat on each roll, and top with provolone cheese. Cover with foil and bake at 350 degrees for 5 minutes or until cheese is melted and rolls are slightly toasted.
  • Serve immediately with the dipping sauce on the side.

2 tablespoons garlic, minced
2 bay leaves
2 onions, sliced
1 green bell pepper, chopped
4 pounds lean steak, cut into one inch cubes
1 (14.5 ounce) can crushed tomatoes

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt the butter or margarine in a large skillet over medium heat. Add the garlic, bay leaves, onion and green bell pepper and saute for about 5 minutes. Add the meat and saute until slightly browned on all sides.
  • Transfer mixture to a 2 quart casserole dish and pour the tomatoes over the mixture.

2 - 3 pounds (965g) USDA choice grade chuck roast/Canada AAA grade blade roast (, 2 - 2.5 inches thick)
6 (18g) cloves garlic (, minced)
3 (673g) onions (, sliced)
1 cup (250ml) unsalted chicken stock or high quality beef stock
1 tablespoon (15ml) regular soy sauce
1 tablespoon (15ml) fish sauce ((can substitute with regular soy sauce))
1 tablespoon (15ml) Worcestershire sauce
1 tablespoon (15ml) olive oil
1 pinch dried rosemary
1 pinch thyme
2 bay leaves
1 loaf french bread
2 - 3 slices Swiss cheese

Steps:

  • Brown Chuck Roast Steak: Heat up Instant Pot using Sauté More function. Wait until it says HOT (~8 mins). Pat dry the chuck roast steak and lightly season one side with salt + black pepper. Drizzle the inner pot with 1 tbsp olive oil. Then, place the seasoned side of chuck roast in Instant Pot. Lightly season the other side with more salt + black pepper. *Pro Tip: Brown each side for 10 minutes to develop some awesome deep flavors. *Note: If you prefer a "Dump-it-all-in" Recipe, you can skip the browning and saute steps.
  • Saute Onion & Garlic: Set browned chuck roast aside. Add in sliced onions, then saute until softened (~3 - 4 mins). Set aside roughly ⅓ of the softened onions for later. Add in minced garlic, a pinch of dried rosemary, a pinch of thyme, and 2 bay leaves. Saute for another minute. *Pro Tip: Your Instant Pot will stop sauteeing after 30 minutes, turn it back on by pressing "Saute" button. :)
  • Deglaze Instant Pot: Pour 1 cup unsalted stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon.
  • Pressure Cook Chuck Roast: Add in 1 tbsp (15ml) soy sauce, 1 tbsp (15ml) fish sauce, and 1 tbsp (15ml) Worcestershire sauce. Give it a quick mix. Place browned chuck roast back in Instant Pot and partially submerge it into the liquid as best as you can. Pressure Cook at High Pressure for 45 minutes + 25 minutes Natural Release.
  • Simmer Au Jus Sauce & Shred Beef: Set aside chuck roast in a mixing bowl, and shred the beef with 2 forks. While you are shredding the beef, bring Au Jus sauce back to a boil with the "Saute" function. Add in reserved onions, then let the Au Jus sauce reduce for 5 - 10 minutes. Taste & adjust seasoning accordingly. *Pro Tip: Reducing the Au Jus sauce will naturally thicken it. If you find the Au Jus sauce to be too oily, you can use a Fat Separator to filter out the fat.
  • Assemble & Serve Instant Pot French Dip: Optional Step - While the Au Jus sauce is reducing, preheat oven to 350°F. Layer 1 loaf of french bread with slices of Swiss cheese on top. Place it in the oven until the cheese begins to melt. Layer shredded beef and onions on top of the sandwich. Serve Instant Pot French Dip with savory umami Au Jus sauce on the side. Enjoy~ :)
