Number Of Ingredients 6

4 cups fresh blueberries
3 cups fresh strawberries
2 cups fresh raspberries
1/4 cup bottled lemon juice
2 packages (1-3/4 ounces each) powdered fruit pectin
7 cups sugar

Steps:

  • In a large saucepan, combine berries and lemon juice; crush slightly. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from the heat; skim off foam. Ladle hot mixture into nine hot pint jars and one hot half-pint jar, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.,

4 cups fresh or frozen blueberries
2-1/2 cups fresh or frozen red raspberries
2-1/2 cups fresh or frozen strawberries
1/4 cup lemon juice

Steps:

  • Combine the berries and lemon juice in a stockpot; crush fruit slightly. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Number Of Ingredients 4

5 cups prepared fruit (buy about 3 pt. fully ripe strawberries, 1-1/2 pt. fully ripe red raspberries and 1 pt. fully ripe blackberries)
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
7 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Stem and crush strawberries thoroughly, one layer at a time. Measure exactly 2-1/2 cups prepared strawberries into 6- or 8-quart saucepot. Crush raspberries thoroughly, one layer at a time. Measure exactly 1-1/2 cups prepared raspberries into saucepot with strawberries. Crush blackberries thoroughly, one layer at a time. Measure exactly 1 cup prepared blackberries into saucepot with other fruit; mix well.
  • Stir pectin into fruit mixture in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

A triple berry jam that is made without pectin that can be store in the fridge or freezer.

Number Of Ingredients 6

3 cups strawberries
1 1/2 cups blueberries
1 1/2 cups raspberries
3/4 cup organic cane sugar
zest of one lemon
2 teaspoons lemon juice

Steps:

  • In a large heavy pot, combine the berries and sugar; let them sit for 1-2 hours until the sugar has dissolved into the fruit and created a syrup.
  • Place the pot on the stove top and turn burner on to medium heat. Bring mixture to a boil and then reduce the heat to medium-low, stirring often until the fruit breaks down and the mixture starts to thicken slightly about 30-35 minutes. I use a masher to break the fruit down even further as I don't like a super chunky jam but feel free to do what you like. Just before the jam is down, stir in lemon juice and zest. When the jam is almost done, it will still be a little loose (it will firm up as it cools), but should coat the back of a wooden spoon.
  • Remove the jam from the stove and pour into 3 (or 4) clean half-pint size glass jars or similar. Cap and cool completely on the counter before transferring jam to the refrigerator for 4 weeks or freeze for up to 6 months.

2 cups crushed strawberries
1 cup crushed red raspberries
1 cup crushed blackberry
1 1/2 cups sugar
1 (1 5/8 ounce) envelope freezer jam pectin

Steps:

  • Combine crushed strawberries, raspberries, blackberries and sugar in a medium bowl. (I use a potato masher to crush the berries, you can leave some whole).
  • Let stand 15 minutes.
  • Gradually stir freezer jam pectin into fruit mixture.
  • Stir 3 minutes; let stand 5 minutes.
  • Ladle jam into can-or-freeze jars, leaving 1/2-inch headspace.
  • Adjust two-piece caps, label and freeze.
  • Tip: Will keep for several weeks in the fridge, or up to one year in the freezer.

Combine blackberries, raspberries, and strawberries to make this slightly tart and delightfully sweet freezer jam!

2 cups blackberries
2 cups raspberries
2 cups strawberries
5¼ cups sugar
1 packet Sure-Jell, original
¾ cup water

Steps:

  • Wash and dry the fruit.
  • Add the blackberries and raspberries to a blender or food processor and puree until smooth.
  • Pour the pureed berries into a mesh strainer situated over a large bowl and strain the puree to remove the seeds (if you want to keep the seeds, simply pour the puree into the bowl instead).
  • Cut the stems off the strawberries, then add them to the food processor or blender and puree until smooth.
  • Pour the strawberries into the bowl with the other pureed berries. This should be about 3 cups of pureed berries total.
  • Add the sugar and mix well. Allow the sugar and pureed berries to sit on the counter for 10 to 20 minutes to allow the flavors to come together. Stir occasionally.
  • After 10 to 20 minutes, combine the Sure-Jell and water in a medium saucepan set on medium-high heat. Allow to come to a boil (this may take a few minutes.)
  • Once the mixture comes to a boil, allow to boil for one minute, stirring frequently.
  • Pour the Sure-Jell mixture into the bowl with the berries and sugar.
  • Stir the contents of the bowl for 3 minutes (I like to set a timer).
  • After three minutes of stirring, use a ladle or measuring cup to pour the jam into the prepared jars, leaving about a quarter-inch of space at the top for expansion in the freezer.
  • Secure the lids on the jars and allow the jam to sit at room temperature for 24 hours.
  • Place the jam in the freezer for future use, or in the fridge for immediate use.

450 g sugar
2 tbs lemon juice

Steps:

  • Put all the ingredients in a large saucepan, and let stand for at least one hour as the fruit defrosts. This can be overnight.
  • If using the wrinkle test for the setting point, place a couple of side plates in the freezer.
  • Heat the mixture on a very low heat to allow the sugar to dissolve and the fruit to release its juice. Stir gently occasionally.
  • Heat jam jars in a low oven to sterilize at 100°C/220°F/Gas Mark 1.
  • Once all the sugar has dissolved, turn up the hob and heat the jam quickly to a rolling boil. After a couple of minutes, start testing the jam's set using your favourite method.

2 pkg sure gel, powdered

  • 1. Combine the berries and lemon juice in a large kettle-crush the fruit slightly-stir in sure gel.
  • 2. Bring to a full rolling boil over high heat-stirring constantly- stir in sugar- return to a full rolling boil- boil for one minute, stirring constantly.
  • 3. Remove from heat-skim off any foam- pour into hot sterilized jars, leaving 1/4 inch head space-adjust caps

  • Bring mixture to a full rolling boil (a boil that doesn't stop bubbling when stirred) over medium-high heat. Boil for 1 minute, stirring constantly. Remove from heat; add SPLENDA® Granulated Sweetener, stirring until SPLENDA® Granulated Sweetener dissolves. Skim off any foam with metal spoon.
