2 tablespoons butter
1 large onion, chopped
1/2 teaspoon rubbed sage
1 can (14-1/2 ounces) chicken or vegetable broth
2 medium tart apples, peeled and finely chopped
3/4 cup water
1 package (12 ounces) frozen cooked winter squash, thawed
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup fat-free milk

Steps:

  • In a large saucepan, heat butter over medium-high heat. Add onion and sage; cook and stir 2-4 minutes or until tender. Add broth, apples and water; bring to a boil. Reduce heat; simmer, covered, 12 minutes., Add squash, ginger and salt; return to a boil. Reduce heat; simmer, uncovered, 10 minutes to allow flavors to blend. Remove from heat; cool slightly., Process in batches in a blender until smooth; return to pan. Add milk; heat through, stirring occasionally (do not allow to boil). Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

This is a lovely thick and healthy soup. A good way to add fruit and vegetables to your diet. Add garlic if wanted. I used to fry the onion, and garlic when I used it, in a little olive oil before adding the other ingredients, but I found it makes no real difference to the flavour. Serve with crusty bread and butter or cream cheese.

1/2 butternut squash, peeled and cubed
1 courgette, peeled and cubed
1 apple, peeled and cubed
1 small onion, chopped
2 teaspoons fresh basil, finely chopped
750 ml vegetable stock
salt, to taste
pepper, to taste

Steps:

  • Place all of the ingredients into a large saucepan.
  • Bring to the boil then reduce the heat to a simmer and cover.
  • Simmer for 20 to 30 minutes, or until all the vegetables are completely soft.
  • Place the soup into a food processor and blend until smooth.
  • Return the soup to the saucepan and heat through gently adding salt and pepper to taste, and water if it is too thick.

2 small Granny Smith apples, peeled, cored and diced
1 tsp. dried thyme leaves
1/8 tsp. ground red pepper, or more to taste
4 cups chicken broth
1 cup half and half
Salt and pepper
3/4 cup whipping cream, whipped
Sliced green onion

Steps:

  • In large pot, over medium-high heat, cook onion in olive oil until soft, about 3 minutes, stirring several times. Add squash, apples, thyme and red pepper. Cook, stirring frequently, until squash begins to turn golden around edges, about 5 minutes. Add broth and bring to boil. Reduce heat to low, cover and simmer for 1 hour, stirring several times. Turn off heat, uncover and allow soup to cool about 15 minutes. Transfer about 1/3 of soup to blender and process until pureed. Repeat with remaining soup in two more batches. Return pureed mixture to pot and stir in half and half. Return to simmer. Season to taste with salt and pepper. Serve hot, garnished with whipped cream and a few green onion slices.;

2 granny smith apples, cored, peeled and chopped

pate brisee pie crust
2 tablespoons olive oil
1 1/2 lbs onions, halved lengthwise and sliced thin
2 cloves garlic, minced
1/4 teaspoon dried thyme, crumbled
3/4 teaspoon dried sage, crumbled
1/4 cup heavy cream
1 large apple
1/2 lb squash, sliced thin
1/4 cup cold unsalted butter, sliced thin

Steps:

  • Make crust: Preheat oven to 400 degrees F (220C).
  • Roll out dough 1/8 inch thick on a lightly-floured surface and fit it into a 9 ½ inch square flan form set on a baking sheet, leaving a ¼ inch overhang.
  • Fold overhang inward onto the sides of the shell and press firmly against the flan form.
  • Prick shell lightly with fork and chill for 30 minutes or freeze for 15.
  • Line pastry with foil and fill with pie weights.
  • Bake in lower third of oven for 15 minutes.
  • Remove weights and foil and bake shell a further 5-8 minutes, or until golden.
  • Let cool.
  • Make filling: In a large skillet, heat oil over moderately-high heat until hot but not smoking.
  • Stir in onions, garlic and season to taste.
  • Cook mixture, covered, over low heat, stirring occasionally, for 20-25 minutes, or until onions are softened.
  • Add sage, thyme and cream, bring to boil, and simmer, stirring occasionally, for 3-5 minutes, or until thickened.
  • Let onion mixture cool.

  • Peel and halve apple lengthwise, core, and slice very thin crosswise.
  • Arrange apple and squash slices decoratively, overlapping, covering onion.
  • Season with salt and top with butter.

  • Bake in upper third for 15 minutes.
  • Cover tart with foil and bake for 30 minutes more, or until squash is tender.
  • Let tart cool for 20 minutes before removing from flan form.

1 sweet potato, peeled and cubed
5 -6 cups chicken broth
1 1/2 cups peeled and diced granny smith apples
1 cup diced onion
4 teaspoons butter

Steps:

  • Combine broth, squash and sweet potatoes in a large stock pot. Bring to a boil and then reduce heat and simmer 15 minutes or until tender.
  • Meanwhile, melt 2 tsp butter in a skillet. Saute apples and onion until tender. Remove from pan and set aside.

2 tablespoons soy margarine
1 large onion, finely chopped
3 cups butternut squash, peeled and diced
2 large apples, peeled, cored, and chopped (any kind)
3 cups chicken stock or 3 cups vegetable stock
1/4 teaspoon salt
1 bay leaf
1 1/2 cups fresh cider
2 tablespoons firmly packed light brown sugar
1/4 teaspoon ground cinnamon
1 pinch ground cloves

Steps:

  • Melt the margarine in a medium-size pot or large saucepan over moderate heat.
  • Stir in the onion, cover, and sweat for 10 minutes.
  • Add the squash, apples, stock, salt, and bay leaf to the pot.
  • Bring to a boil, reduce the heat to moderately low, cover, and simmer the soup until the squash and apples are very soft, about 20 minutes.
  • Remove from the heat.
  • As the soup simmers, pour the cider into a medium-size skillet, bring to a boil, and reduce to 4 or 5 tablespoons; you don't have to be too precise about it.

I have tried so many recipes for squash soup. I finally tweaked enough recipes together to make this; the best soup ever!! I add milk to make it creamy but if you want to make it vegan omit it, it is still good without it.

2 lbs butternut squash, cubed (about 1 1/2 inch cubes)
3 medium carrots, chopped (same size as the squash)
1 medium yellow onion (Chopped large same as squash and carrot)
2 -3 tablespoons olive oil
1/4-1/2 teaspoon salt
1 teaspoon pepper
1 stalk celery, chopped or 1/2 teaspoon celery seed
2 cups water
2 garlic cloves, minced
1 teaspoon marjoram
1/2 teaspoon rubbed sage
1/4 teaspoon allspice
1 (13 1/2 ounce) can coconut milk
1/2 cup milk
1 apple, peeled and cubed (any that can be used for baking)
1 large red onion, chopped

Steps:

  • Preheat oven to 375°F Toss squash, yellow onion, and carrots with 2TBSP oil, salt, and pepper. Roast for 20-30 minutes, until tender and slightly caramelized.
  • Place celery(or seed), garlic, and herbs in a pot with 2 cups water; stew over medium-low heat to create stock, about 20 minutes.
  • Add squash mixture to pot and use a stick blender to puree. If you do not have a stick blender you can throw it in a blender.
  • Then, add can of coconut milk and puree. Give it a taste; if needed (or wanted), add milk and adjust salt and pepper.
  • Leave it on the stove for a little longer (15 min) and allow it to simmer while making the toppping.
  • Topping: Heat 1 TBSP olive oil in a large skillet over medium heat, when it is cooked about half way add the apples; cook until the apples and onions are caramelized.
  • To serve: pour into bowls and top with Apple-Onion Topping. This reheats really well. I store the topping separate. Sometimes it thickens a bit after refrigerating; if you want it looser just add some more water or milk.

A fun fall soup. Roasting of the vegetables and fruits to me just really makes this the best. A drizzle of maple syrup, chopped candied walnuts, cranberries, and a dollop of creme fraiche finishes this over the top. What a wonderful Holiday soup, but also just a good comfort soup. I make this often with grilled cheese. Smoked gouda, multi grain bread and maple smoked bacon make for an amazing sandwich. I often make a bunch of these walnuts for the garnish and store them in the freezer in a baggie to use throughout the Holiday season. They are really easy and don't take any time.

4 lbs butternut squash (peeled, seeded and rough chopped)
4 granny smith apples (peeled and diced)
2 firm pears, peeled and diced
1 large onion, chopped
1 cup celery, chopped
4 slices bacon (diced and sauteed)
5 cups chicken broth
3/4 cup apple cider
1 cup heavy cream
1/4 teaspoon allspice
1 tablespoon fresh sage, chopped fine
1 bay leaf
salt
pepper
1 tablespoon olive oil
3/4 cup whole walnuts (candied and chopped)
1/8 cup sugar
1/3 cup dried cranberries, chopped
maple syrup
creme fraiche (sour cream will work)

Steps:

  • Walnuts -- In a dry saute pan, use non-stick if possible and heat up the walnuts on medium high heat until they get slightly toasted. They don't take long. Just 2-3 minutes. Then add in the sugar and stir well. The sugar will begin to melt in seconds. Keep stirring until they are all well combined and coated in the sugar mixture. Remove to a cookie sheet or baking sheet lined with parchment paper or you can use wax paper and lay them out separating them so they can cool. Thats it. They will cool in just minutes and then transfer to a baggie and freeze for later or just refrigerate if you are going to be using them soon.
  • Roasting -- Add to a large bowl the squash, apples, pears and onion. Drizzle with the olive oil and mix well. Transfer to a large baking sheet and spread out. Sprinkle with the salt and pepper. Pre-heat the oven to 400 degrees and cook for 20 minutes or less until all the vegetables and fruits are soft. Remove and just let cool while you cook your bacon and celery.
  • Soup Base -- In a large soup pot, add the bacon and just a little oil, maybe 1/2 teaspoon to get it started and cook until crispy. Then to the same pot, add the celery and cook until tender, 3-4 minutes. Add in the apple cider, chicken broth, bay leaf, allspice, sage and all the vegetables and cook 15 minutes until all the flavors combine.
  • Puree -- Now, I use my immersion blender right in the pot and blend until smooth, but you can also use a regular blender. Add a little at a time until it is all smooth and pureed. Return to the pot and add the cream and check for seasoning. Heat another couple of minutes and it is done.
  • Garnish -- Remember those walnuts? Well just chop those and some dried cranberries and mix them together for great topping.
  • Serving -- A big bowl of soup -- drizzle with a little maple syrup, top with a spoon of the cranberry walnut mixture and a little dollop of the creme fraiche.
  • Heaven!
