DARK CHOCOLATE BROWNIES

8 ounces bittersweet chocolate, coarsely chopped
2 tablespoons unsalted butter
1 cup whole grain pastry flour*
1/4 cup unsweetened natural cocoa powder
1/4 teaspoon salt
1/4 teaspoon baking soda
4 large eggs
1 cup packed light brown sugar
1/2 cup plain low-fat yogurt
1/4 cup canola oil
2 teaspoons vanilla extract
3/4 cup chopped walnuts (optional)

Steps:

  • Preheat the oven to 350 degrees. Coat a 9 x 13inch baking pan with cooking spray.
  • Melt the chocolate and butter in a double boiler or heatproof bowl set over a pot of barely simmering water, stirring occasionally.
  • In a medium bowl, whisk together the flour, cocoa, salt, and baking soda.
  • In a large bowl whisk the eggs and sugar until smooth. Add the yogurt, oil and vanilla and whisk to combine. Add the chocolate-butter mixture and whisk until blended. Add the flour mixture and mix until just moistened.
  • Transfer the mixture to the prepared pan and sprinkle with nuts if using. Bake for 20-25 minutes, until a wooden toothpick inserted in the center comes out with a few moist crumbs. Cool completely in the pan on a wire rack. Cut into 24 squares.

1 cup whole-grain pastry flour (or 1/2 C each whole-wheat and all-purpose flours)
1/4 cup unsweetened cocoa powder
1/4 teaspoon salt
1/4 teaspoon baking soda

Steps:

  • Whisk the flour, cocoa, salt and baking soda in a medium bowl. In a large bowl, whisk the eggs and brown sugar until smooth, then add the yogurt, oil and vanilla and whisk to combine. Whisk in the melted chocolate mixture until blended. Add the dry ingredients and mix until just moistened.
  • Spead the batter in the prepared pan and sprinkle with walnuts, if desired. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Cool completely in the pan on a rack before slicing.

1/4 cup butter, softened
1/2 cup dark brown sugar
1/4 cup granulated sugar
1/4 cup canola oil
1 egg
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole-wheat pastry flour
1/4 cup unsweetened cocoa powder (not Dutch processed)
1/4 teaspoon salt, optional
1/3 cup coarsely chopped dark chocolate (2 ounces)
1/3 cup coarsely chopped milk chocolate (2 ounces)
2/3 cup chopped pecans, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mash together the butter and sugars with a fork until well combined. Add the oil and egg and beat until creamy. Mix in the vanilla.
  • In a medium bowl, whisk together the flours, cocoa powder, and salt. Add the dry ingredients to the wet ingredients and mix well. Stir in the dark chocolate, milk chocolate, and the pecans and mix well. Using a tablespoon, scoop the batter onto an ungreased cookie sheet. Bake for 12 minutes. Transfer cookies to a rack to cool.

1 stick (8 tablespoons) unsalted butter, at room temperature, plus 1 1/2 teaspoons for buttering the baking dish
6 ounces unsweetened chocolate, chopped
3/4 cup granulated sugar
1 teaspoon pure vanilla extract
1/8 teaspoon kosher salt
2 large eggs, plus 1 large egg yolk, at room temperature
1/2 cup all-purpose flour
3/4 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F. Butter an 8-inch square baking dish with 1 teaspoon butter. Cut a piece of parchment paper in a strip to line the bottom and 2 sides of the dish. Butter the paper with the remaining 1/2 teaspoon butter and set aside.
  • Place the unsweetened chocolate and 8 tablespoons butter in a medium heat-proof bowl that fits comfortably over a saucepan filled with 1 inch water. Place the double-boiler over medium heat and cook, stirring constantly with a silicone spatula, until the chocolate and butter are just barely melted. Remove the bowl from the heat and continue to stir for 1 minute to cool slightly. The mixture should be warm to the touch, not hot.
  • Using a hand-held mixer, beat the sugar, vanilla and salt into the chocolate mixture until smooth. Add the eggs and yolk all at once and beat until fully incorporated and smooth. Fold in the flour and semisweet chocolate chips with a silicone spatula until just barely combined; a few streaks are fine. Pour the mixture into the prepared pan and bake on the middle rack until just set and a toothpick inserted in the center comes out clean, about 30 minutes. Do not overbake. Allow to cool to room temperature before cutting into 16 small pieces.

Steps:

  • Preheat oven to 300*F.
  • Line bottoms of two 9x13-inch baking pans with parchment paper.
  • In a large saucepan, melt the butter with the unsweetened chocolate over low-heat, stirring frequently, until melted.

  • Add the melted chocolate and whisk until smooth.

1 cup whole almond, toasted and coarsely chopped
1/2 cup dried cherries, coarsely chopped
6 ounces bittersweet chocolate (60 percent to 70 percent cocoa) or 6 ounces dark chocolate, finely chopped (60 percent to 70 percent cocoa)

Steps:

  • In medium bowl toss together almonds and cherries. Line baking sheet with waxed paper.
  • Melt half of the chocolate in top of double boiler over slightly simmering water, on lowest possible heat setting. Stir chocolate frequently, making sure water in bottom pan does not touch top pan. Remove double boiler from heat. Stir in remaining chocolate until melted. Remove top pan and wipe water from bottom of pan; set aside To keep chocolate at the right temperature while making clusters, replace the simmering water in the bottom pan with warm tap water and place the pan of melted chocolate on top of the warm water.
  • Stir fruit-nut mixture into chocolate. Spoon heaping tablespoon-size clusters of the chocolate mixture onto waxed paper-lined baking sheet about 1 inch apart. Refrigerate to cool and set, about 20 minutes. Store and serve at room temperature.

From Vegetarian Times September 2008, these are delicious brownies, that just happen to be vegan. But if you don't tell, no one will know, they are terrific! Feel free to add nuts or other goodies. You'll make these a bunch, so try something different each time. I've also made them in a mini muffin pan topped with red/green M&Ms for Christmas.

3/4 cup whole wheat pastry flour (plain flour works fine too)
1/4 cup unsweetened cocoa powder
1/8 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/4 cup chocolate chips
1/4 cup canola oil
1 mashed banana (riper the better)
1/2 cup sugar
1/2 cup plain soymilk (cow's milk works fine too)
1 tablespoon flax seed meal (optional)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F Coat 9-inch-square baking pan with cooking spray.
  • Whisk together flour, cocoa powder, baking powder, baking soda, and salt in large bowl.
  • Melt chocolate chips with canola oil in double boiler, stirring until smooth. (Or heat in the microwave, stirring every 30 seconds until smooth.).
  • Remove from heat, and whisk in banana and sugar.
  • Combine soymilk, flaxseed meal, and vanilla in measuring cup, then fold into chocolate mixture.
  • Stir chocolate mixture into flour mixture until just combined, then spread in prepared baking pan.
  • (If topping with M&Ms, sprinkle them on now.).
  • Bake 20 to 25 minutes, or until toothpick inserted 2 inches from side of pan comes out dry, but middle is still soft.
  • Cool in pan on wire rack, then cut into 16 squares.
