Provided by Food Network Kitchen

Time 45m

Yield 4-6

Number Of Ingredients 11

Kosher salt and freshly ground black pepper
1/3 cup olive oil
2 tablespoons red wine vinegar
1 small shallot, minced
1 cup frozen baby lima beans, thawed
1 cup frozen corn, thawed
8 ounces dried orecchiette

CREAMY LIMA-BEAN SOUP WITH PASTA AND PEPPERS

Creamy Lima-Bean Soup with Pasta and Peppers image

Pureeing this lima-bean soup makes it creamy; tiny pasta shapes add texture, and roasted red bell peppers give the soup an appealing fall color.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Time 1h30m

Number Of Ingredients 12

2 red bell peppers, quartered lengthwise, ribs and seeds removed
2 teaspoons olive oil
1 medium onion, chopped
4 carrots, chopped
3 garlic cloves, chopped
4 cups canned reduced-sodium vegetable broth
1/2 teaspoon dried thyme

1/4 cup fresh basil leaves
1 tablespoon fresh lemon juice
1 1/2 cups cooked small pasta, such as ditalini or tiny elbows
Coarse salt and ground pepper

Steps:

  • Heat broiler. Place peppers, skin sides up, on a baking sheet. Broil 4 inches from heat until charred, 18 to 20 minutes. Let cool slightly; using a paper towel, rub off blackened skins. Coarsely chop peppers; set aside.
  • Heat oil in a large saucepan over medium heat. Cook onion and carrots until beginning to soften, about 5 minutes. Add garlic, and cook until fragrant, about 1 minute.
  • Add broth, thyme, lima beans, and 2 cups water. Bring to boil; reduce heat to medium-low. Cover; simmer 15 minutes. Stir in basil and lemon juice.
  • Working in batches (do not fill container more than halfway), puree soup in a blender or food processor until smooth. Return soup to pan; bring to a boil, and add pasta and reserved peppers. Season with salt and pepper. Serve hot.

LIMA BEAN PASTA

Lima Bean Pasta image

This is a heavenly recipe for a chilly night. It is quite garlicky, so if you don't like garlic, you might want to find another option for dinner! The ingredients are very easily adjusted, so if you really like tarragon, add more. If you hate it, add less, etc. The ratios are very flexible, so don't be afraid to experiment. The parmesan adds a lot of flavour.

HEART HEALTHY LIMA BEAN PESTO & PASTA

Heart Healthy Lima Bean Pesto & Pasta image

Pesto lovers check this out! A cholesterol-lowering fiber and protein filled pesto. Arugula gives this pesto a nice bite if you want more of a kick go ahead and add the optional sriracha sauce. The Lima beans, cheeses and olive oil gives this a butter texture and protein. The lima beans replace the nuts in pesto's. You can do 1/2 arugula and 1/2 basil for more of a bite! BUT be sure to use tender baby arugula for it is raw in this recipe. The older the tougher and stronger it gets. The cook time is for the pasta. Mine was 8 minutes but cook according to package directions.

10 BEST LIMA BEAN SUBSTITUTES - SUBSTITUTE COOKING

From substitutecooking.com
  • Red kidney beans. Red kidney beans are the best substitute for lima beans even if the taste and the color will not be identical. The cooking process is similar so you will not have to adjust your recipe much.
  • White kidney beans. Just like red kidney beans, white kidney beans make a perfect substitute for lima beans in different recipes. They will not alter the color of your food because they are white, thus you will not notice a big difference.
  • Fava beans. Fava beans should definitely be on top of your list when it comes to replacing lima beans. You can eat fava beans raw which makes them different than other types of beans.
  • Soybeans. Soybeans work in all types of recipes. So, they can replace lima beans successfully. Thanks to their mild flavor, you can use soybeans in baked dishes as well as salads or stir-fries.
  • Chickpeas. Chickpeas might come as a surprise when you are looking for lima beans substitutes. As a matter of fact, they are quite similar to lima beans.
  • Edamame beans. Edamame beans are related to soybeans as they are actually the fresher version of those. You can use them instead of lima beans in salads and stir-fries.
  • Pinto beans. Pinto beans are a great choice if you want to replace lima beans as they are similar in both taste and texture. They are darker but you can cook them in the same way.
  • Navy beans. Another great substitute for lima beans is navy beans. These beans also go by the name of Boston beans and they go great in baked dishes. You can use them instead of lima beans in salads and soups as they have a creamy, distinct flavor to them.
  • Quinoa. Quinoa is not a type of bean but more of a cereal. Even so, you can still use it instead of lima beans in almost all recipes. Quinoa goes great in various salads and stews.
  • Couscous. Couscous can also replace lima beans in a variety of recipes. This is basically a type of grounded pasta and tastes just like pasta as it is made of wheat.
