Roasted Eggplant Salad with Soy, Sesame and Charred Peppers image

Provided by Alex Guarnaschelli

Categories     side-dish

Time 1h45m

Yield 2 to 4 servings

Number Of Ingredients 10

6 tablespoons extra-virgin olive oil
3 medium eggplants, cut into 1/2-inch rounds
Kosher salt
4 red bell peppers
6 tablespoons low-sodium soy sauce
2 tablespoons grated fresh ginger
1 tablespoon sesame oil
1 tablespoon red wine vinegar
2 medium cloves garlic, grated
2 tablespoons sesame seeds, toasted

Steps:

  • Preheat the oven to 350 degrees F.
  • Pour the olive oil into a baking sheet and top with a single layer of eggplant slices. Turn to coat both sides with the oil and sprinkle liberally with salt. Place in the center of the oven and roast until completely tender, 20 to 25 minutes. Remove and arrange in a single layer on a serving platter.
  • Place the peppers directly on the burners of a gas range or grill and char on all sides, rotating with a pair of tongs. Remove from the heat and place them in the refrigerator to cool, 10 minutes. Use a paper towel to wipe off the charred skin. Remove the seeds and slice the pepper flesh into thin strips. Arrange over the top of the eggplant.
  • Whisk together the soy, ginger, sesame oil, vinegar and garlic in a medium bowl. Taste for seasoning. Sprinkle the vinaigrette over the eggplant and peppers and top with the sesame seeds.

HOMEMADE CHILI POTATO CHIPS WITH SESAME AVOCADO SALSA

Homemade Chili Potato Chips with Sesame Avocado Salsa image

Provided by Molly Yeh

Categories     side-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

2 russet potatoes, sliced 1/8 inch thick on a mandoline or by hand with a sharp knife
Olive oil, for brushing
Kosher salt and freshly ground black pepper
1 1/2 teaspoons chili powder
4 teaspoons soy sauce
1 tablespoon toasted sesame oil
1 teaspoon grated fresh ginger
Juice of 1 lime
Sriracha or other hot sauce, as desired
4 avocados, chopped
1/2 bunch fresh cilantro, chopped
Toasted sesame seeds, for topping

Steps:

  • For the homemade chili potato chips: Preheat the oven to 450 degrees F. Line 2 baking sheets with parchment.
  • Distribute the potatoes between the prepared baking sheets in one layer. Brush with olive oil and sprinkle with salt and pepper, then flip the potatoes over, brush the other side with olive oil and sprinkle with salt and pepper. Bake, rotating the pans halfway through, until splotchy and brown, 25 to 30 minutes. Keep a close eye on them as they could burn quickly.
  • For the sesame avocado salsa: Meanwhile, whisk together the soy sauce, sesame oil, ginger, lime and some hot sauce in a large bowl. Add the avocados and toss to coat, mashing some of the avocados a little bit to bring everything together. Taste and adjust as desired (this is one of those foods that you've eaten half of by the time you're done making it because you'll probably want to taste test it again and again and again...). Top with the chopped cilantro and toasted sesame seeds.
  • When the chips are done, immediately sprinkle them with the chili powder. Let cool slightly and enjoy with the salsa.

LINDA'S SUMMERTIME EGGPLANT SALSA

Linda's Summertime Eggplant Salsa image

This recipe is a variation of Sicilian Caponata, which is an eggplant relish served in Sicily as a topping for brushetta or as a condiment served with meat or fish. My family loves it as a dip for tortilla chips or even by the spoonful (if no one's looking!). Be sure to microwave the eggplant, or it will absorb too much oil and become mushy.

Time 3h

Yield 32

Number Of Ingredients 21

1 large eggplant, cut into 1/2 inch cubes
¾ teaspoon kosher salt
1 cup tomato-vegetable juice cocktail (such as V8®)
¼ cup red wine vinegar
½ cup red wine
2 tablespoons brown sugar
¼ cup chopped fresh parsley
4 anchovy fillets, minced, or to taste
1 (14.5 ounce) can diced tomatoes
¼ cup raisins
½ cup pitted black olives, chopped
½ cup pitted green olives, chopped
½ cup zucchini, diced
½ cup yellow squash, diced
2 celery stalks, diced
½ red bell pepper, diced
½ cup grated carrot
3 tablespoons extra-virgin olive oil
½ red onion, finely diced
½ cup pine nuts
¼ cup grated Parmesan cheese

Steps:

  • Toss the eggplant with the kosher salt and spread out onto a microwave-safe plate. Cook in the microwave on High until the eggplant is dry and has shriveled to 1/3 of its original size, about 15 minutes. Transfer to a paper towel-lined plate and set aside.
  • Whisk the tomato juice cocktail, vinegar, red wine, brown sugar, parsley, and anchovies together in a large bowl. Stir in the tomatoes, raisins, black olives, green olives, zucchini, yellow squash, celery, red bell pepper, and carrot; set aside.
  • Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Stir in the eggplant and cook, stirring occasionally, until the edges have browned, 4 to 8 minutes. Add the remaining 2 tablespoons of olive oil along with the celery and onion. Cook and stir until the onion has softened, about 4 minutes more. Stir in the vegetable mixture and bring to a simmer. Reduce heat to medium-low and simmer uncovered until the liquid thickens and begins to coat the vegetables, 4 to 7 minutes more. Scrape into a bowl and stir in the pine nuts. Refrigerate to room temperature. Sprinkle with the Parmesan cheese and serve.

This intriguing salad is a great addition to any Asian or oriental meal. The dressing is sooooooo gooood that I'm having all the flavors in my mouth right now. This dressing would be great over noodles! Heck the dressing is so good I have also used to it marinate other vegetables.

  • Halve the eggplants then carefully score the flesh diagonally until you achieve a criss-cross pattern. Make sure not to cut too deep as you might cut through the skin. You can check out my video below to see how I slice them!
  • Heat a non-stick pan or skillet over medium high heat. Place the eggplants skin first and leave to cook for 4 to 5 minutes or until the skin is brown. Flip the eggplants over and then leave to cook as well until the flesh has turned into a nice toasted brown colour. Flip it back, skin side again, and then lower the heat to medium. Cover the pan and then leave the eggplant to cook in its steam for 3 to 4 minutes.
  • While the eggplant is cooking, mix all the paste ingredients together in a small bowl. Feel free to adjust the measurements depending on your design taste.
