Categories     main-dish

Time 4h10m

Yield 4 servings

Number Of Ingredients 14

1 loaf day-old chocolate-hazelnut babka, such as Breads Bakery, sliced 1-inch thick
5 large eggs plus 2 egg yolks
1 tablespoon granulated sugar
1 teaspoon pure vanilla extract
Pinch ground cinnamon
Pinch fine sea salt
2 1/2 cups half-and-half
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons canola oil
Confectioners' sugar, for dusting
1 tablespoon unsalted butter
2 teaspoons granulated sugar
2 ripe (not overly) bananas, cut into 1/2-inch slices
1/2 cup maple syrup

Steps:

  • For the French toast: Put the babka slices on a rack set over a baking sheet and let dry for a few hours.
  • Preheat the oven to 200 degrees F; put a baking sheet with a rack inside the oven.
  • Whisk the eggs, egg yolks, sugar, vanilla, cinnamon and salt in a large bowl until smooth. Whisk in the half-and-half. Transfer the custard to a baking dish. Place a few slices of the babka in the custard and let sit, turning once, until completely soaked through, 5 minutes.
  • Heat 2 tablespoons of the butter and 2 tablespoons of the oil in a large nonstick saute pan over medium heat until the butter foams. In batches (so you don't crowd the pan), cook the bread until golden brown on both sides and just cooked through, about 2 minutes per side. Transfer the cooked French toast to the baking sheet to keep warm.
  • For the caramelized bananas: Melt the butter in a medium nonstick pan over medium heat. Add the sugar and cook until it just turns light golden brown, about 3 minutes. Place the sliced bananas in an even layer in the pan and cook until the bottoms become caramelized, about 2 minutes. Flip and cook another minute. Add the maple syrup and cook until just heated through, about 2 minutes.
  • Serve the French toast topped with caramelized banana and dusted with confectioners' sugar.

BABKA FRENCH TOAST

Babka French Toast image

Babka is a rich yeast bread, layered with chocolate, from Poland. If you would like to bump it up a notch, try it as French toast for a real treat in the morning or for dessert. Serve with raspberries or strawberries, if you wish!

Time 20m

Number Of Ingredients 8

½ cup milk
1 egg
1 teaspoon white sugar
½ teaspoon ground cinnamon
1 pinch salt

Steps:

  • In a shallow bowl, whisk together milk, egg, sugar, cinnamon, and salt.

  • Transfer to a serving plate and dust with confectioners' sugar.

Time 30m

Yield 4

Number Of Ingredients 11

cooking spray
6 slices stale cinnamon bread (such as Thomas®)
1 cup milk
1 large egg
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ cup chocolate-hazelnut spread (such as Nutella®)
¼ cup fat free half-and-half
2 tablespoons cocoa powder
1 tablespoon corn syrup
1 pinch salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and spray it with cooking spray.
  • Cut each slice of bread into three sticks. Whisk together milk, egg, vanilla extract, and cinnamon in a large shallow dish. Dip each bread stick in the egg mixture quickly to avoid soaking the bread, yet coating it on all sides; shake off excess. Arrange bread sticks on the prepared baking sheet without them touching.
  • Bake in the preheated oven for 8 minutes, flip them, spray lightly with cooking spray, and return to the oven until cooked through and golden brown, about 8 more minutes.
  • Meanwhile, whisk together hazelnut spread, half-and-half, cocoa powder, corn syrup, and salt in a small saucepan on medium-low heat. Bring to a boil and immediately remove pan from the heat, whisking until smooth.
  • Remove French toast sticks from the oven and serve warm with the chocolate dipping sauce.

  • Combine powdered sugar, cocoa powder, melted chocolate, cinnamon, melted butter and a pinch of salt. Mix to make a paste.
  • After chilling dough overnight, take the dough and roll it to a rectangle with 1/4-inch thickness.
  • Spread the filling over the dough leaving the edge closest to you empty for about 3/4 of an inch. Sprinkle the top with the finely chopped pecans.
  • Starting from the long edge away from you, roll the dough into a spiral log, with the clean edge towards you as the seam. Roll the dough onto the seam.
  • Cut the log in half and treat each as a separate loaf. Cut each log in half longways, leaving the final 1-2 inches attached. Turn the middle up to reveal the filling up towards you, and overlap the dough in a kind of braid all the way down.
