GROWN-UP LIMEADE
A grown-up summer drink with a pleasantly bitter bite

Steps:
- Lay the lime slices on a tray and freeze for at least an hour. Put the remaining chopped limes (including the skin) in the bowl of a food processor or blender with the sugar and 100ml water. Whizz until really juicy and completely broken down.
- Pour the mix through a sieve, so that all the pulpy bits remain and you have lots of juice. Have a taste - if it's too sour, add a bit more sugar. This can be made 2 days ahead and chilled. Pour into a big jug with lots of ice and the lime slices, and top up with soda water. Serve with a shot of vodka or rum, if you like.

HOMEMADE GINGER LIMEADE
Steps:
- Place the 1 cup of sugar and 1 cup of water in a saucepan and heat over medium heat to dissolve the sugar. Bring to a simmer. Once all the sugar has dissolved and the syrup starts to boil, set it aside to cool.
- Place the 3 oz fresh ginger and 1 tbsp water (upto 3 tbsp) in a mini processor, and pulse until well blended and pureed. Strain the ginger juice through a sieve, pressing down on the pulp to get the most out of the ginger. Set aside ¼ cup of this ginger juice.
- Alternatively, if you have a juicer, juice enough ginger to get 3 tbsp of pure ginger juice.
- Mix the ginger and salt with the 1.5 cups of lime juice. Add up to 1 - 1.5 cups of sugar syrup to sweeten the ginger lime juice (change the amount of sugar you add according to your tastes).
- Pour into a clean bottle/jar with a closeable cap and leave in the fridge to chill until needed.

BRAZILIAN LIMEADE RECIPE (BRAZILIAN LEMONADE)
This Brazilian Limeade Recipe is incredibly tasty! A refreshing drink made with whole limes blended up with ice water and sweetened condensed milk. It is frothy, tart, and sweet all at once! The perfect drink for a hot day.

- Choose limes that have a thin skin. They should be smooth and easier to squeeze than limes with a thick rind. You will be that weirdo squeezing all the limes at the grocery store. Embrace it.
- Chop all 5 limes into small 1 inch chunks, see photos.
- Add 2 cups ice water to a blender. You can leave in a few ice cubes if you want, 5-8 is fine. Not too many, you want to make sure you have enough liquid.
- Add the chopped limes to the blender. Blend in pulses for no more than a total of 15 seconds. Do not over blend; your limeade will get bitter from the lime piths!
- Set a strainer over a large glass measuring cup, or over a bowl with a spout.* Pour the mixture through the strainer. Use a rubber spatula or your hands to press the blended limes as much as possible to get out as much liquid as you can.
- Pour the strained liquid back into the blender. Add a scant 2/3 cup sweetened condensed milk to the blender. (This is 10 tablespoons, or you could measure it at 1/2 cup plus 2 tablespoons.)
- Blend again until it is nice and frothy.
- Serve immediately over a glass that is FULL of ice. It's very important to serve Brazilian Lemonade cold!
- IMPORTANT! You must serve this drink IMMEDIATELY! Even waiting 20-30 minutes will not do. The longer it sits, the more bitter it will become. This is because there is lime pith (the white stuff in between the flesh of the lime and the rind) in the drink, and the bitterness of the pith takes over the sweetness the longer it sits. It's super tasty served right away; not overly bitter at all. See notes for a Make Ahead Brazilian limeade recipe.
- This recipe makes about 3 cups. Don't save leftovers. Don't freeze leftovers. Live in the moment! CHUG CHUG CHUG!!!!

- Mix the 1 cup of water with the ginger and squeeze through a strainer to get ginger concentrate.
- Add sugar and lime juice.
- Stir until all the sugar is dissolved. (If you like it sweeter you can add more, to taste, at this point.).
- Pour into bottles and refrigerate. Chill well.
- When ready to serve, add a teaspoonful of concentrate to chilled water or sprite and mix well.
- Serve garnished with a mint leaf.

- Pour the lime juice into a pitcher. Mix together the sugar and 1 cup water in a separate container and stir to dissolve and make a syrup. Add the sugar syrup to the lime juice and top it up with 4 cups water. Chill in the fridge for about an hour.
- To serve: Fill mason jars with ice cubes, add some limeade and top them off with a drizzle of cherry syrup and a maraschino cherry.

MANGO GINGER LIMEADE
Just dreamed up this tropical concoction while cleaning my fridge. As in most of the Caribbean and the equatorial tropics, an overabundance of mangoes and mandarina limes was the greatest factor. Mandarina's are a funky-looking lime that grows in Costa Rica. They taste like a very, very sour mandarin orange. I'm sure you could use regular green limes or key limes. UPDATE: just tried this with a little bit of dark rum and boy, does it taste good!!!
