BEEF & VEGETABLE CASSEROLE
A traditional braised beef stew with thick, rich gravy - an ideal recipe for cheap cuts, as slow-cooking guarantees a tender dish

Steps:
- Heat oven to 160C/140C fan/gas 3 and put the kettle on.
- Put 2 thickly sliced celery sticks, 1 chopped onion, 2 chunkily sliced carrots, 5 bay leaves and 1 whole thyme sprig in a flameproof casserole dish with 1 tbsp vegetable oil and 1 tbsp butter.
- Soften for 10 mins, then stir in 2 tbsp plain flour until it doesn't look dusty anymore, followed by 2 tbsp tomato purée, 2 tbsp Worcestershire sauce and 2 crumbled beef stock cubes.
- Gradually stir in 600ml hot water, then tip in 850g stewing beef and bring to a gentle simmer.
- Cover and put in the oven for 2hrs 30 mins, then uncover and cook for 30mins - 1hr more until the meat is really tender and the sauce is thickened.
- Garnish with the picked leaves of the remaining thyme sprig.

GWEN'S OLD-FASHIONED POTATO-BEEF CASSEROLE
Steps:
- Place the potatoes in a large saucepan with water to cover by 1 inch. Add a generous pinch of salt and cook for 15 minutes, or until tender. Potatoes cook quickly. Test often for tenderness and don't overcook them. Alternatively, cook the potatoes in a pressure cooker for 5 minutes, releasing the pressure immediately to prevent overcooking. Drain the potatoes and arrange them in a 6- by 9- by 2-inch casserole dish.
- In a large skillet, add a little oil to coat the pan. Combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, about 10 minutes. Drain excess fat.
- Preheat the oven to 350 degrees F.
- Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the milk and continue to stir while cooking over medium heat. When the mixture thickens, season with salt and pepper, then stir in the cheese and browned beef and onions.
- Pour the ground beef mixture over the potatoes and bake the casserole for 20 minutes, until heated through and bubbling. Sprinkle the breadcrumbs on top of the casserole and bake until the crumbs are toasted, about 5 minutes longer.

Steps:
- Preheat oven to 350. Lightly grease a 13 x 9 casserole dish.
- Cook macaroni according to box; drain and toss with the 1 tbsp butter and 1/4 tsp salt. Place in bottom of 13 x 9 dish; set aside.
- Meanwhile, cook and crumble ground beef with the onion until no longer pink. Drain off fat.
- Return cooke, drained beef/onions to skillet.
- Stir in both cans of soup, milk, pepper and basil. Stir well.
- Pour evenly over the cooked macaroni in the casserole dish.
- Sprinkle with the shredded cheese.
- Bake at 350 for 15 - 20 minutes.

Steps:
- Heat oven to 400ºF.
- Arrange TATER TOTS in single layer in 13x9-inch baking dish sprayed with cooking spray. Bake 10 min.
- Meanwhile, brown meat in large skilled sprayed with cooking spray; drain. Return meat to skillet. Remove from heat. Add broccoli, tomatoes and 1-1/2 cups onions; mix well.
- Whisk soup, milk and garlic powder in medium bowl until blended. Stir in 1 cup cheese. Add to meat mixture; mix well. Cook 1 to 2 min. or until cheese is melted, stirring constantly. Spoon over TATER TOTS. Sprinkle with remaining cheese and onions.
- Bake 20 min. or until heated through.

- Combine ground beef and onion in a skillet.
- Brown beef over medium heat.
- Add salt and sugar.
- Drain well.
- Add tomato sauce.
- Cook noodles according to package directions.
- Combine cream cheese and sour cream in a small bowl.
- In a 2 quart dish, layer noodles, cream cheese mixture, and meat.
- Top with cheddar cheese.
- Bake at 350 degrees until hot (about 30 minutes).
