SUNDAY HAM
I saw this made on the Food TV Network the other day and it looks so good! I will definitely make it the next time I buy a ham and it would be great for any holiday or dinner party. Serve with your favorite potato, veggie dish and biscuits.

Steps:
- Preheat oven to 375°.
- Pour orange marmalade into a bowl and add about 1/2 can of the coke.
- Let it set while you prepare the ham.
- Remove visible fat from ham and make crisscross cuts in the ham.
- Place in a 9x13 baking pan and pour the marmalade/coke mixture over the ham.
- Place in oven uncovered and bake for 20 minutes.
- This allows the marmalade to set or crisp on the ham.
- After 20 minutes, cover the ham with foil and bake an additional 30 to 45 minutes.
- Baste with pan drippings every 15 minutes.
- If there are not enough pan drippings, mix up more marmalade mixture to baste the ham.
- Uncover the ham the last 20 to 30 minutes and baste every 7 or 8 minutes.
- Allow the marmalade mixture to brown until dark brown in color.
- Remove from oven and place ham onto a platter to cool before cutting.
- Total cook time is about 1 hour 5 minutes to 1 hour 35 minutes.
SUNNY'S HAM AND CHEESE BISCUITS WITH HONEY DIJON BUTTER
Steps:
- For the biscuits: Preheat the oven to 400 degrees F.
- Place the self-rising flour in a large bowl and toss with the cheese and ham. Grate the butter into the flour mixture. Pour in the buttermilk and mix gently with a wooden spoon. Once the dough comes together, turn it out onto a floured surface, divide it into 8 equal balls and pat them down lightly.
- Put the balls in a cast-iron pan or on a baking sheet sprayed with cooking spray. Bake until brown, 20 to 25 minutes.
- For the butter: In a bowl, mix together the butter, honey and mustard.
- When the biscuits are done, brush some of the butter over the tops. Serve the biscuits with the remaining butter and the preserves.

- Mix flour and shortening together in bowl until the shortening is well blended into the flour. Make a "well" or hole in the center of the flour/shortening mixture. Add a portion of the milk to the well. Use a fork or your fingers and work from the center of the bowl to the outside of the bowl and blend the milk into the mixture. Add more milk as needed. The dough will be slightly sticky. To make the biscuits coat your hands with flour and pinch off enough dough for 1 biscuit, about 2 tablespoons. Roll and knead the biscuit in your hands just until it looses its stickiness. Place in a cast iron skillet. Continue to make the rest of the dough in this manner. After all biscuits are made put a little water on finger tips and gently rub the tops of each biscuit, this removes any bumps on the top of the biscuits. Bake in a preheated 450 degree oven until golden brown, about 15 minutes.

- Preheat oven to 450°. In a food processor, process ham until ground; set aside. In a large bowl, combine the flour, baking powder, baking soda, onion powder, garlic powder and mustard. Cut in shortening until mixture is crumbly. Fold in ham and chives. Add buttermilk; stir just until the dough clings together. , Turn onto a lightly floured surface; knead gently 10-12 times. Roll dough to 1/2-in. thickness. Cut with a floured 2-1/2-in. biscuit cutter. Place in a large ungreased cast-iron or other ovenproof skillet. Bake until golden brown, 13-15 minutes. Brush with butter. Serve warm.

- Preheat oven to 450°. In a small bowl, combine flour, sugar, baking powder, baking soda and salt; cut in cold butter until mixture resembles coarse crumbs. In a small bowl, beat cottage cheese 2 minutes. Beat in egg and milk until blended. Stir into crumb mixture just until moistened. , Turn onto a lightly floured surface; knead 8-10 times. Pat or roll out to 1/2-in. thickness; cut out eight biscuits with a floured 2-1/2-in. biscuit cutter., Place 1 in. apart on an ungreased baking sheet. Bake 8-12 minutes or until golden brown. - Preheat oven to 350 degrees. In a large mixing bowl, combine 2 cups flour, baking soda, salt and baking powder. Mix well. Add the butter and buttermilk, and knead lightly by hand to make a cohesive dough.
- Sprinkle a work surface with flour, and turn the dough onto it. Knead with the heel of the hand about six times; do not overhandle. Roll out into a flat circle about 3/4-inch thick. Use a Champagne flute or biscuit cutter to press into 12 circles about 2 to 2 1/2 inches in diameter. If desired, reroll the scraps of dough to make into biscuits.
- Arrange the biscuits on a cookie sheet, and bake until lightly browned, 12 to 14 minutes. Remove from heat and cool slightly. To serve, split the biscuits in half and butter each cut side. Insert a slice of ham between the halves, and close. If desired, reheat in the oven for 2 to 3 minutes. Serve warm.

RICH EASY SUNDAY BISCUITS
These biscuits are delicious on Sunday morning, especially with sausage gravy. I always have buttermilk on hand to make these and my famous pancakes. Buttermilk keeps quite well and if you like these biscuits, you will want to have a quart in your fridge at all times!

- Preheat oven to 390 degrees.
- Stir flour, sugar, salt, and baking powder in a large mixing bowl.
- Add sour cream and stir to enough to distribute in the flour mixture but without completely blending it inches.
- Add buttermilk and stir just to combine the ingredients.
- Melt the butter in a cast iron skillet and remove from heat.
- Drop dollops of dough into the butter and turn them once so the tops are coated.
- Bake for 23-25 minutes till lightly browned.

- Preheat oven to 400°F.
- In a bowl whisk together flour, baking powder, salt and sugar and with a fork or pastry blender blend in lard until mixture resembles course meal. Add milk, a little at a time, stirring until dough just pulls away from side of bowl.
- Roll out dough 1/2 inch thick on a lightly floured surface. Cut out biscuits with a 1 1/2-inch round cutter and transfer to an ungreased baking sheet. Reroll scraps and cut out more biscuits in same manner.
- Bake biscuits in middle of oven until pale golden, 10 to 15 minutes. Makes 20 silver dollar-size biscuits.
- Split biscuits in half and spread lightly with mustard and horseradish. Put ham between biscuit halves.
