I made a major mistake while mixing ingredients : since I was in a hurry, I dumped all the wet ingredients together. When I began mixing them I realized I must have done something wrong because the butter didn't blend in properly. I read the recipe again and realized I should have added the applesauce at the end, however, the cake came out just perfect, despite my mistake. I baked for 50 minutes.

- 1. Preheat the oven to 350°. with a rack in the center of the oven. Coat the sides and center tube of the pan with the butter. Toss in the flour and shake the pan to coat the tube surface and sides. Knock out the excess flour. Set aside.
- 2. Place a mesh sieve over a medium mixing bowl and add the cake flour, baking powder, baking soda, cinnamon, allspice, nutmeg, ginger, and salt. Shake the contents into the bowl and set aside.
- 3. Break the eggs into a large mixing bowl. Stir them briefly with a fork to break them up slightly, then add the dark brown sugar. With the mixer on high speed, beat the eggs with the sugar until the mixture is very thick, about 6 minutes. Move the beaters around the bowl and scrape down the sides of the bowl with a rubber spatula several times while mixing. Reduce the mixer speed to medium and beat in the oil and vanilla. - Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

Grandma used to bring this cake to picnics and potlucks. It travels well, keeps well, and holds together if you're eating with your fingers. My mother makes it for my father's birthday every year.

- Cream together butter and sugar.
- Add eggs and vanilla.
- Dust raisins in cocoa and set aside.
- Mix in dry ingredients and applesauce.
- Stir in raisins and nuts.
- Grease and dust a 9" tube pan or bundt pan with cocoa.
- Bake at 350 degrees for 70-80 minutes, until cake tests done with a toothpick.
- Cool slightly before removing from pan.

- Cream shortening, sugar, and eggs; add applesauce and mix well.
- Stir dry ingredients into mixture, alternating with water.
- Blend fruit and nuts into batter.
- Pour into greased and floured 9"x13" pan.
- Bake at 350 degrees for 55 to 60 minutes.
- Cool in pan and frost.
- Make frosting: Combine brown sugar, 1/4 cup milk and 3 tablespoons butter in top of double boiler.
- Cook rapidly for about 3 minutes, stirring.

- Beat in confectioner's sugar to right consistency.

- Preheat oven to 350 degrees, and lightly grease an 8-inch cake tin.
- In a deep saucepan over medium heat, combine the apples, 4 tablespoons water, 1/2 cup sugar, 1/4 teaspoon cinnamon, chopped lemon peel and lemon juice. Barely cover with water, bring to a boil, reduce heat to a simmer and cook, stirring, until the mixture reduces and thickens -- about 20 minutes. Mash the mixture to a smooth consistency.
- Meanwhile, in a mixing bowl, cream together the butter and brown sugar. Add the vanilla, and beat well; then the egg, and beat well.
- Add butter mixture to the apple mixture. Into a separate bowl, sift together the flour, baking soda, baking powder and salt.
- Add the pecans, raisins, nutmeg and cinnamon. Stir well.
- Add the dry mixture to the apple mixture and stir to make a smooth batter. Transfer to the greased cake tin. Smooth the top with a spatula or knife, and bake for about 1 hour and 35 minutes, or until a toothpick inserted in the middle comes out clean.
