1-inch piece fresh ginger, peeled and chopped
1 English cucumber, peeled and chopped
Ice
Lemon wheels, for garnish
Cucumber wheels, for garnish

Steps:

  • In a blender or food processor, blend together the ginger, cucumber and 1/2 cup cold water. Strain and press the puree through a mesh sieve.
  • Serve over ice and garnish with a lemon and cucumber wheel.
  • Optional serving: Fill glasses with ice and one-half to two-thirds full with the blended juice. Top with lemonade and/or vodka.

4 to 6 celery ribs
1/2 lemon
1 teaspoon ginger (fresh)
1 cup ice cold water

Steps:

  • Wash the cucumbers and celery. Pat dry. Peel the cucumbers, if you'd like.
  • Slice the cucumbers lengthwise. Scoop out the seeds. Chop the cucumbers and celery.
  • If you haven't already, grate the ginger until you have about 1 teaspoon. Juice the lemon.
  • In a blender or food processor, add all the ingredients except the water. Blend for about 60 seconds, slowly adding the water. Blend until there are no large chunks.
  • Place the strainer on top of the bowl. Lay the cheesecloth on top, then pour the mixture onto the cheesecloth. Gather the edges and squeeze well.
  • Pour into glasses and garnish with cucumber or lemon slices. Enjoy immediately or refrigerate in an air-tight jar. Consume within 24 hours.

1 cucumber
1 cup water
2 limes, zested and juiced

Steps:

  • Wash the cucumber and the limes. Chop off the ends of the cucumber and cut the cucumber into 3-4″ sections. Add to blender. You can peel the cucumber if you like, but the cucumber skin increases the vitamin and mineral content, so we leave it on! (It also makes this juice a nice green color!)
  • Zest the lime, then juice the lime adding both the lime juice and zest to your blender.
  • Pour 1 cup water into your blender and blend for 30-60 seconds until no large chunks remain.
  • Pour through a nut milk bag, clean dish towel, or cheesecloth to strain for a silky smooth cucumber juice. You can pour through a mesh strainer for a 'pulpy' cucumber juice.
  • This recipe makes 1.5- 2 cups of cucumber juice, depending on the size you purchase- enough for 2 medium glasses or 1 large serving.

2 tbsp lemon juice

  • Wash the cucumbers. Cut off the ends of the cucumbers and peel them. Chop them into cubes.
  • Take the chopped cucumbers in a blender or mixer. Add chopped mint leaves.
  • Then add sugar.
  • Finally add the freshly squeezed lemon juice.
  • Blend these together in the blender or mixer to a smooth puree.
  • Strain the puree through a fine mesh strainer, into a large bowl, pressing the puree with a spoon to ensure all the juice is strained. Discard the remaining pulp.   • Peel the cucumbers, placing the peels in the blender for later use.
