Apricot Coffee Cake with Pistachio-Cardamom Crumb Topping image

3/4 cup all-purpose flour
1/2 cup finely chopped pistachios
2/3 cup light brown sugar
2 teaspoons ground cardamom
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more, for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
2/3 cup apricot preserves

Steps:

  • Combine the flour, pistachios, brown sugar, cardamom and salt in a small bowl and mix well. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the apricot preserves on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch Bundt pan.
  • In a medium bowl, stir together the cake mix and instant pudding. Add the sour cream, oil and eggs, mix well. Pour half of the batter into the prepared pan. Combine the brown sugar, walnuts and cinnamon, sprinkle over the batter in the pan. Cover with the remaining batter.
  • Bake for 1 hour in the preheated oven, until cake springs back when lightly touched. Cool for 15 minutes in pan before inverting onto a wire rack to cool completely. When cake is cooled, dust with confectioners' sugar.

Steps:

  • Preheat oven to 350 degrees F.
  • Grease mini Bundt cake pan generously with shortening.
  • Mix together pecans, sugar and cinnamon in a small bowl; sprinkle 1 Tablespoon into each mini Bundt crevice.
  • Mix together cake mix, pudding mix, eggs, sour cream, vegetable oil, orange juice and vanilla in a mixing bowl; add green food coloring until it reaches your desired color of green (we used 12 drops).
  • Fill each Bundt crevice with 2 -3 heaping Tablespoons of cake batter.
  • Bake for 25 to 30 minutes or until toothpick comes out clean.
  • Let cool for 5 minutes; invert to release cakes.

1 oz instant pistachio pudding mix (small box)

1 cup sour cream
3/4 cup orange juice

1 teaspoon vanilla
2 Tablespoons orange juice
1 teaspoon vanilla
2/3 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Grease Bundt pan generously with shortening; be sure to grease the inner and outer circles.
  • Mix together pecans, sugar and cinnamon.
  • Sprinkle 1/3 of the cinnamon mixture into the greased pan; be sure to get the cinnamon mixture to coat all surfaces of the pan.
  • Mix together cake mix, pudding mix, eggs, sour cream, orange juice, vegetable oil and vanilla; add green food coloring for a darker color of green if desired.
  • Add half of the cake batter to the pan and top with half of the remaining nut mixture.
  • Top with the remaining cake batter and add the remaining nut mixture.
  • Use a knife to create swirls in the cake. Be sure to go around the entire cake.

175g lightly salted butter , really soft, plus extra for greasing
75g plain flour , plus extra for dusting
140g pistachios , plus a few, chopped, for scattering
1 tsp baking powder
175g golden caster sugar
2 large eggs
2 tsp vanilla extract
2 tbsp milk
290g tub full-fat cream cheese
50g lightly salted butter , softened
100g icing sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4 and grease a 12-hole silicone muffin or friand mould, then dust with a little flour, and tip out the excess (a metal tray will work too, but line with muffin cases, as the mixture may stick). Put the pistachios in a food processor and blitz until finely chopped but not greasy. Add the remaining cake ingredients and blend again into a creamy mixture. Use 2 spoons to fill each hole of your tray 2/3 full, place on the middle shelf of the oven and bake for 15 mins or until a skewer inserted comes out clean. Leave to cool in the mould for 10 mins, then run a knife around the edge of each cake and turn out onto a wire rack.
  • Meanwhile, make the icing. Using an electric hand whisk, blend 3 tbsp of the cream cheese with the butter until smooth, then add the remaining cream cheese and icing sugar. Whizz again until creamy, transfer to a piping bag fitted with a small round nozzle, and chill until ready to use.
  • When the cakes are cool, pipe spikes of icing on top of each one, then sprinkle with chopped pistachios. Can be made ahead - store the un-iced cakes in a sealed container for up to 3 days and chill the icing for 2 days.

Steps:

  • TO MAKE THE STREUSEL, cut the butter into small chunks and let sit at room temperature for 5 minutes.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, salt, and zest. Add the butter and mix on low speed until the mixture resembles coarse beach sand, about 2 minutes. Add the pistachios and mix just until the streusel begins to clump together and look like gravel, being careful not to let it come together to form a dough. If not using the streusel right away, store it in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 1 month.
  • TO MAKE THE CAKE, preheat the oven to 350°F (175°C). Butter and flour the bottom and sides of a 9-inch (23 cm) springform pan.
  • Sift the flour and baking powder into a small bowl.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on low speed until smooth, 1 to 2 minutes. Add the sugar and salt and mix on low speed until well combined. Scrape down the sides of the bowl, then mix on medium speed until light and fluffy, 4 to 5 minutes.
  • In a small bowl, combine the eggs and the vanilla extract and whisk vigorously until well blended.
  • With the mixer on medium speed, add the egg mixture very slowly, in a steady stream, and mix until well-incorporated and very smooth, about 30 seconds. Scrape down the sides of the bowl, then mix on medium speed for 30 more seconds.
  • Scrape down the sides of the bowl, then add the flour mixture. Mix on low speed just until uniform in texture. Use a rubber spatula to gently fold in the fruit until evenly incorporated.
  • TO ASSEMBLE AND BAKE, pour the batter into the prepared pan, smooth it with an offset or rubber spatula, and sprinkle the streusel evenly over the top. Bake for 55 to 60 minutes, until the streusel is dry and golden and the buckle is firm and springs back when gently pressed in the center, rotating the pan midway through the baking time.
  • Let the cake cool in the pan on a wire rack for 30 minutes, then remove from the pan. Serve warm or at room temperature. Stored in a covered container at room temperature, it will keep for up to 3 days.

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cardamom

1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
3 large eggs
2 tablespoons finely grated orange zest (from 3 medium oranges)

Steps:

  • Arrange oven rack in middle position and preheat oven to 350°F. Butter 9-inch-diameter round metal pan and line bottom with waxed paper. Butter paper, then dust pan with flour, knocking out excess.
  • Using food processor, pulse pistachios until finely ground, about 40 seconds. (Do not overprocess, or mixture will become paste.) Add flour, baking powder, cardamom, and salt and pulse briefly to combine.
  • In small bowl, combine milk and vanilla.
  • In large bowl using electric mixer at moderate speed, beat together butter and sugar until light and fluffy, 1 1/2 to 2 minutes. Add eggs 1 at a time, beating well after each addition. Reduce speed to low and add pistachio and milk mixtures alternately in batches, beginning and ending with pistachio mixture and beating after each addition just until combined. Add orange zest and beat just until combined.
  • Spread batter evenly in pan and bake until wooden skewer inserted in center of cake comes out clean, 30 to 40 minutes. Cool in pan on rack 10 minutes, then run knife around cake to loosen and invert onto rack. Remove paper and serve warm or at room temperature with vanilla ice cream or whipped cream.

2 cups (260g) unsalted pistachios (out of shells)
2 and 1/3 cups (275g) cake flour (spoon & leveled)
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup (1.5 sticks; 170g) unsalted butter, softened to room temperature
1 and 3/4 cups (350g) granulated sugar
5 large egg whites, at room temperature
1/2 cup (120g) sour cream, at room temperature*
2 teaspoons pure vanilla extract
1 teaspoon almond extract
1 cup (240ml) whole milk, at room temperature*
cream cheese frosting
optional: 1 tiny drop green food coloring*
optional: garnishes such as berries and leftover pistachios

Steps:

  • Preheat oven to 350°F (177°C). Grease and lightly flour three 9-inch cake pans.
  • Pulse the pistachios in a food processor until ground up into very fine crumbs. See photo above for a visual. You'll have about 1 and 1/2 cups of crumbs. (If you have more than that, set aside for garnish.)
  • Pour 1 and 1/2 cups of pistachio crumbs in a large bowl. Whisk in the cake flour, baking powder, baking soda, and salt. Set aside.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and sugar together on high speed until smooth and creamy, about 3 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Beat in the egg whites on high speed until combined, about 2 minutes. Beat in the sour cream, vanilla extract, and almond extract. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients until just incorporated. With the mixer still running on low, pour in the milk (and the green food coloring, if using) and mix just until combined. You may need to whisk it all by hand to make sure there are no lumps at the bottom of the bowl. The batter will be slightly thick.
  • Pour batter evenly into cake pans. Bake for around 21-23 minutes or until the cakes are baked through. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it's done. Allow cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before frosting and assembling.
  • Prepare the cream cheese frosting (see note below).
  • Using a large serrated knife, slice a thin layer off the tops of the cakes to create a flat surface. Discard (or crumble over ice cream!). Place 1 cake layer on your cake stand, cake turntable, or serving plate. Evenly cover the top with frosting. Top with 2nd layer and evenly cover the top with more frosting. Top with the third cake layer. Spread the frosting all over the top and sides. (I used a bench scraper to smooth out the sides.) Decorate with garnishes, if desired. Refrigerate for at least 30-45 minutes before slicing. This helps the cake keep its shape when cutting.
  • Cover leftover cake tightly and store in the refrigerator for 5 days.

1 cup sugar
3 large eggs, separated
2 teaspoons gratted lemon zest
1/3 cup cornstarch (cornflour)

  • Preheat your oen to 350°F or 180°C.
  • Well grease a 9 inch/ 23 cm springform round baking pan.
  • Boil a pot of water and then plunge the pistachios in for a quick 30 seconds. remove the pistachios- drain and then rub dry with a clean teatowel/kitchen towel. Peel off the pistachios 'skins'.
  • Place the cleaned pistachios and sugar in a food processer and chop finely.
  • Transfer the mix to a large bowl and add the egg yolks. lemon zest, baking powder, cornstarch, baking soda (bicarb) and the salt. Stir to combine.
  • In a seperate bowl, beat the egg whites until stiff peaks form.
  • Fold the egg whites into the pistachio mixture.
  • Spoon the batter into the prepared pan.
  • bake 20-30 mins or until cooked through. you can use a toothpick or fine skewer to check it comes out clean. Place back in the oven for up to another 10 minutes if required.
  • Cool the cake in the tin for 15 minutes. Remove from the tin and then cool on a wire rack.

1 (18 ounce) box duncan hines golden butter recipe cake mix
1 (3 ounce) box instant pistachio pudding mix
4 eggs
8 ounces sour cream
1/2 cup vegetable oil
1 cup pecans, chopped
6 tablespoons sugar
2 tablespoons cinnamon

Steps:

  • Mix together first five ingredients in large bowl and beat well.
  • Mix together last three ingredients in a small bowl.
  • In a greased and floured bundt cake pan pour 1/3 batter, then 1/3 nut mixture.
  • Repeat ending with nut mixture on top of batter.
  • Bake for 1 hour at 350°, but check with toothpick at 50 minutes.
  • Cool completely before removing from pan.

1 cup finely chopped pecans
1/2 cup sugar
2 tbsp cinnamon
2 1/4 cup all-purpose flour
3/4 cup sugar
3 1/2 tsp baking soda
1 tsp salt
small box instant pistachio pudding mix
4 Nature's Yoke eggs
1 cup plain Greek yogurt
3/4 cup orange juice
1/4 cup canola oil
1 tsp vanilla
2 tbsp orange juice
1 tsp vanilla
1 cup powdered sugar

Steps:

  • Preheat oven to 350 F.
  • Grease Bundt pan generously with shortening. Mix together pecans, 1/2 cup sugar and cinnamon. Sprinkle 1/3 of the cinnamon-pecan mixture into the greased pan; be sure to get the mixture to coat all surfaces of the pan.
  • Mix together remaining cake ingredients. (Add green food coloring for a darker color of green if desired.)
  • Alternate layers of batter with remaining pecan mixture in the Bundt pan, ending with the mixture. Swirl batter with knife.
  • Bake for 50 minutes or until toothpick comes out clean. Cool for 5 minutes before inverting onto a cake platter.

Steps:

  • FILLING:.
  • Combine the sugar, cinnamon, and nuts together and set aside.
  • CAKE:.
  • Mix the cake mix, pudding, eggs, sour cream, oil, food coloring, and almond together.
  • Beat at medium speed for 2 minutes; scrape and beat another minute.
  • Grease and flour a 10" tube pan.
  • Pour 1/3 of the batter in the pan.
  • Sprinkle with 1/2 of the sugar mixture and then put another layer of batter, and another layer of sugar.
  • Top with batter.
  • Bake at 350 for about 50 minutes or till done.

And, when I'm traveling, I don't always have the coffee or tea that's supposed to go with it so I combined it in this Pistachio-Coconut Chai Coffee Cake recipe.

1/4 cup extra virgin coconut oil (melted)
2 1/3 cups all-purpose or cake flour (divided plus more for coating baking dish)
2 cups packed light brown sugar (divided)
1/2 cup packed unsweetened flaked coconut
1/2 cup shelled pistachios (roughly chopped)
1 teaspoon ground cardamom
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 teaspoon kosher salt (divided)
1 1/2 teaspoons baking powder
1/2 cup (1 stick) unsalted butter, (room temperature plus more for coating baking dish)
1 cup sour cream or plain Greek yogurt (room temperature)
2 large eggs (room temperature)
1 teaspoon pure vanilla extract

Steps:

  • Prepare The Pan: Heat oven to 350°F and arrange a rack in the middle. Coat a 9-inch (23 cm) springform pan with butter and flour and set aside.
  • Make The Streusel Topping: Combine 1/4 cup coconut oil, 1/3 cup of the flour, 1/2 cup of the sugar, the coconut, pistachios, cardamom, ginger, cloves, and half of the kosher salt in a small bowl and mix with clean hands until thoroughly mixed and mixture clumps with squeezed; refrigerate until ready to use.Combine The Dry Ingredients: Whisk together remaining 2 cups flour, baking powder, and remaining salt until aerated and lumps are broken up; set aside.
  • Beat The Butter: Place 1 1/2 cups of the sugar and the butter in the bowl of a stand mixer fitted with a paddle and beat over medium speed until light in color and airy.Add sour cream or yogurt and mix well. Add eggs and vanilla and mix until evenly combined. Remove from mixer, and stir in dry ingredients until just moistened through.
  • Bake The Coffee Cake: Transfer batter to prepared pan and spread evenly. Sprinkle streusel over the top and press in to adhere. Bake, rotating baking dish halfway through, until a toothpick inserted in the center comes out with clean with just a few crumbs remaining, about 45 to 55 minutes.Transfer to a cooling rack and cool at least 20 minutes before unmolding and serving.
