Steps:
- Place potatoes between paper towels to squeeze out excess moisture.
- Combine all ingredients except oil and mix well.
- Heat 1/8" of oil in a large skillet and drop mixture 1/4 cup at a time into hot oil.
- Press mixture into 3" rounds with the back of a spoon.
- Fry until golden brown, turning once.
- Drain on paper towels.

- Heat oil and butter in a skillet. Add the onions and cook until soft and lightly browned. Remove the onions from the pan and reserve.
- Slice the potatoes into 1/4 inch slices. Add them to the hot pan and brown on both sides.
- Return the onion to the pan, toss and season. Serve warm.

- Place the potatoes in a bowl and add the egg along with the flour, parsley, and onion. Mix well, until a sticky dough has formed, adding small amounts of flour as needed. (The amount of flour will vary slightly depending on how dry your potatoes are, wetter potatoes will require more flour). Add a small amount of salt and freshly ground pepper and mix well.
- Place the panko in a wide bowl or on a plate.
- Using a 1/4 measure; take a scoop of the potato mixture, then using your hands form into a patty cake; you can make them thicker or thinner as you prefer. Dip both sides of the cake into the panko, pressing lightly to make the crumbs adhere. Set aside. Proceed until all the potato is used.
- Heat your skillet over medium heat; add the oil, when hot add the pat of butter if using. Swirl this around to mix. Carefully add the potato cakes to the skillet and cook, turning once, until both sides are nicely browned and the center is hot. If the cake is browning too quickly and the center is not hot, place the pan into a 350ºF oven for about 5 minutes.

- In a large bowl, mix all ingredients (EXCEPT white onion, garlic, and butter) until everything is well-incorporated.
- In a large pan, sautee your white onion and garlic with a bit of olive oil or butter for about five minutes, or until soft and fragrant. Remove from pan and add to the potato mixture.
- Melt 1 tbsp. of butter in your pan on medium heat.
- Take about 1/4 cup of potato dough (it's sticky!) for each patty, and work into a ball shape.
- Put 3 or 4 patties into the hot pan, and flatten with a spatula until they're about 1/2-inch to 3/4-inch thick. Then cook on each side for about four minutes until they're golden and beginning to get a bit crispy. Repeat until all of your mashed potato batter is used up.

SOUTHERN FRIED POTATOES AND ONIONS

- Place a heavy 9" cast iron skillet over medium heat (just a little more than medium on my electric stove).
- Pour oil into the skillet and add the butter as well. Allow this to heat until the oil is shimmery on the surface - not smoking - if it starts to smoke, pull it off the heat and let it cool some until it is shimmery again.
- Cut up the potatoes into pieces that are the same size - chips or cubes - your choice.
- As you cut, place into 4 cups of water that has 2 Tbs of salt mixed in.
- Cut up onion into bigger chunks than you cut the potato.
- After 5 minutes, drain the potato VERY WELL and dry with paper towels
- When the oil is ready (shimmery) put the potato and the onion into the oil. Do not crowd the potatoes. If there isn't enough room for them to lay side by side, then let some cook, remove them to drain on a paper towel and then cook the rest.
- Cook for about 4 minutes on one side then flip and cook for another 2-4 minutes on the other side.
- Drain on a paper towel. Salt and pepper as soon as you remove from the oil
- Garnish and serve hot.

- Boil the potatoes in lightly salted water until just fork tender, about 8 to 10 minutes. (Do not overcook or mixture will become mushy)
- Drain the potatoes and set aside.
- In a large frying pan, heat 2 tablespoons of the oil over medium heat until lightly smoking, and then add the pancetta, peppers, and onions.
- Cook until the peppers and onions begin to soften, stirring every once in a while, about 8 to 10 minutes.
- Add the garlic, and continue to cook until the mixture begins to brown, about 3 to 4 minutes more.
