- In a large skillet, cook the sausage, onion and green pepper until the vegetables are tender., Add the tomatoes, broth, brown sugar, garlic powder and pepper. Drain pineapple, reserving juice. Stir pineapple into sausage mixture. Bring to a boil; cook, uncovered, for 5 minutes., Combine cornstarch and reserved pineapple juice until smooth; gradually add to sausage mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.

SAUSAGE AND PINEAPPLE DELIGHT OVER RICE
My mom got this recipe from a family friend when I was a kid. We always looked forward to her making this for dinner. It smelled so good when she was cooking it.

- 1. Heat oil in large skillet.
- 2. Combine sausage, onion, green pepper and celery in the large skillet.
- 3. Cook until veggies are tender crisp.
- 4. Add tomatoes, broth and seasonings.
- 5. Cover and simmer for 5 minutes.
- 6. Blend cornstarch with pineapple juice.
- 7. Pour into meat and veggie mixture.
- 8. Cook, stirring until thickened. About 2 minutes.
- 9. Serve over rice.
HAWAIIAN SAUSAGE SKILLET
I made this up one day when I couldn't find a recipe anywhere with these ingredients. So I kind of threw it together on a whim. Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.

I used to work where we had a lot of potluck lunches. I just brought the ingredients, already prepared, a rice cooker, and an electric frying pan. I would start the rice about 20 minutes before lunch and cook the rest in the frying pan while everyone else was uncovering and setting out their dishes. My copy of the recipe is getting so tattered I felt I better archive it. I would sorely miss it if lost.

- Bring rice and 2 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
- Place sausages into a skillet with 1/2 cup water over medium heat, cover, and cook until heated through, about 5 minutes. Thinly slice sausages. - Use a small sharp knife to cut around the edge of each pineapple half, then scoop the pineapple flesh from the halves. Discard the core and chop the fruit into small pieces. You will have about 1 1/2 cups fruit. Set aside and place pineapple halves on a plate or platter.
- In a small bowl, whisk to combine the soy sauce, hoisin sauce, rice wine vinegar and sesame oil; set aside.
- Heat 1 tablespoon oil in a large nonstick skillet over medium high heat. Add the peas, carrots and red bell pepper and cook until softened, about 3-5 minutes. Stir in the garlic, ginger and scallion whites and cook 1 more minute, then transfer to a medium bowl with a slotted spoon.
- Place skillet back over medium high heat, add 1 tablespoon oil and saute the sliced sausage until slightly browned, about 4-5 minutes. Transfer to the bowl with the vegetables with a slotted spoon.
- Return the skillet to medium high heat, add the rice and flatten in an even layer. Cook undisturbed to allow the bottom to crisp slightly, about 3-5 minutes. Stir in the cooked sausage and vegetables, 3/4 cup chopped pineapple and season with salt and pepper. Cook 1-2 minutes then stir in the sauce to combine.
- Push the rice to the sides and make a well in the center. Add about 1/2 tablespoon oil to the well and pour in the eggs. Scramble the eggs then stir to combine with ingredients in the pan.
- Spoon rice mixture into Pineapple halves and garnish with remaining chopped pineapple and sliced scallion greens.

SUNNY'S EASY SHRIMP AND RICE PINEAPPLE BOATS

- For the shrimp: Preheat the grill or the oven to 350 degrees F.
- Prepare the pineapple and sauce. Slice the pineapple in half. Slice the core out of the center and discard. Cut out the flesh, leaving a 1-inch border all the way around. Finely chop two-thirds of the pineapple flesh and set aside in a bowl. Add the remaining pineapple flesh to a blender along with the BBQ sauce. Season with a pinch of salt and a few grinds of pepper, then blend until smooth.
- Prepare the shrimp. Add the shrimp to an aluminum foil pouch (or create a pouch with aluminum foil), then sprinkle with salt and pepper and pour the pineapple BBQ sauce over the top. Close the pouch and place over the direct heat of the grill, or on the bottom rack of the oven. Cook until a quick peek inside reveals opaque shrimp, 10 to 12 minutes.
- For the rice: In the bowl with the reserved chopped pineapple, add the rice, cilantro, scallions, zest and salt and pepper to taste. Stir to combine.
- To serve: Divide and fill both halves of the pineapple with the rice. Remove the shrimp from the pouch and top both pineapple halves equally. Pour the juices from the pouch over everything. Top with the cilantro and serve with lime wedges for spritzing.
SAUSAGES WITH TANGY, GINGERY PINEAPPLE

In this easy weeknight meal, a tangy lime- and ginger-spiked dressing cuts the richness of the meat and tempers the sweetness of the fruit. Serve this with some crusty bread to mop up the drippings.

- Heat oven to 450 degrees and, if you like, line a sheet pan with parchment paper.
- In a medium bowl, toss together pineapple, sugar, oil, ginger, lime zest, 1 teaspoon salt, 1/2 teaspoon pepper, allspice and cayenne until well combined. Stir in three-quarters of the onions. (Reserve remaining onions for serving.)
- Spread pineapple mixture onto the sheet pan in one layer. Nestle sausages among the pineapple mixture. Roast until fruit is caramelized and sausages are browned and cooked through, about 30 minutes. Halfway through baking, flip the sausages and toss the pineapple mixture.
- Meanwhile, make the vinaigrette: In a small bowl, combine lime juice, garlic, ginger and a big pinch each of salt and pepper. Slowly whisk in oil. Taste and season with more salt and lime juice if you'd like.
- Pull the pan out of the oven, drizzle vinaigrette over sausages and pineapple, and toss gently to combine. Garnish with reserved onion and cilantro, and serve.
SAUSAGE & PINEAPPLE STIR FRY
I found a recipe for a sausage kebab that I modified into a stir fry. It turned out really tasty. I hope you'll give it a try! The chutney & the pinepple give it a nice flavor. Although sausage is not usually a favorite of mine, I love this dish.

- Saute onion for 2-3 minutes, then add peppers and garlic.
- Cook, stirring frequently, another 2-3 minutes, then add sausage.
- Stir fry on medium heat about 5 minutes, till sausage is browned, then add pineapple & cook another 2-3 minutes till sauce bubbles and reduces.
- Stir in mango chutney and cook another minute.
- Serve over rice.
- Or you could put the vegetables, pineapple& sausage on skewers, brush with the chutney& broil or grill.
- Note: I have also tried this with a chicken & apple sausage with good results.

- In a skillet brown the sausage links. Meanwhile prepare the box of chicken rice according to the package. Drain the pineapple, reserve half of the juice and add to the cooking rice. When the sausages are done cooking dump the pineapple in the pan and continue cooking until heated through. Serve the rice over top the sausage and pineapple.
