  • Blend milk and ice in blender on high speed until smooth. Add chocolate; blend well.
  • Pour into glasses.
  • Serve immediately topped with marshmallows.

2 cups milk (divided)
2 packets (4 tablespoons) hot cocoa mix (divided)

Steps:

  • Gather the ingredients.
  • Whisk together 1 cup of the milk with 1 packet (2 tablespoons) of the hot chocolate mix.
  • Pour the mixture into an ice cube tray.
  • Freeze overnight or until the chocolate ice cubes are solid.
  • Gather the ingredients.
  • Put 1 packet (2 tablespoons) of the hot chocolate mix in a glass.
  • Slowly stir in the remaining cup of milk. Because this is a cold version of cocoa, it may take longer to dissolve all of the cocoa mix. Take your time and stir the drink until you see no more chunks of powder. It's best to add the milk in a slow, steady stream while stirring to avoid clumping.
  • When the mixture is smooth, add as many of the ice cubes as you prefer.
  • Enjoy.

6 egg yolks
8 ounces confectioners' sugar
6 ounces butter
3 ounces dark chocolate
2 ounces honey
1 ounce brandy
1/2 ounce espresso
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
3 ounces cocoa powder
1 cup heavy cream
500 milliliters (2 cups 2 tablespoons) heavy cream
500 grams (17 2/3 ounces) granulated sugar
3 vanilla beans, split and seeded
4 whole eggs
10 sheets gelatin
250 grams (8 3/4 ounces) raspberry puree
250 grams (8 3/4 ounces) sugar
200 grams dried cranberries, chopped

Steps:

  • For the chocolate: In an electric stand mixer fitted with the whisk attachment, whisk the yolks and confectioners' sugar until doubled in volume. Using a double boiler, melt the butter and chocolate. In a mixing bowl combine the honey, brandy, espresso, allspice, cinnamon and nutmeg. Add the honey mixture to the chocolate mixture and cook until liquid, 2 to 3 minutes. Add the yolks to the chocolate mixture and whisk until slightly thickened. Remove from the heat, then cool in the refrigerator for 20 minutes.
  • In an electric stand mixer fitted with the whisk attachment, whisk the cocoa and cream to soft peaks. Fold the cooled chocolate mixture into the whipped cream.
  • For the sauce: In a saucepot, heat the cream, 250 grams (8 3/4 ounces) of the sugar and the vanilla seeds. Cook until the milk scalds. Whisk the remaining 250 grams (8 3/4 ounces) sugar and the eggs until light yellow. Temper the eggs with some of the hot cream and then add the yolk mixture to the pot. Cook until slightly thickened.
  • For the gelee: Bloom the gelatin in some cold water, about 5 minutes. In a saucepot, combine the raspberry puree, sugar, cranberries and 200 milliliters (3/4 cup) water. Bring to a boil and cook until the sugar dissolves. Remove from the heat and add in the bloomed gelatin.
  • Divide the gelee among four 10-ounce mugs, then top with the chocolate marquis and finish with vanilla cream sauce.

1/2 cup half-and-half

4 cups ice
Sweetened Whipped Cream, for serving (recipe follows)
Grated bittersweet chocolate, for garnish
Straws, for serving
1 cup cold heavy cream (8 ounces)
2 1/2 tablespoons sugar
1 teaspoon pure vanilla extract

Steps:

  • Break the bittersweet chocolate into pieces and place it in a medium bowl set over a pot of simmering water, stirring occasionally, until just melted. Off the heat, whisk in the cocoa powder, sugar, and half-and-half and set aside.
  • Place 3/4 cup of the milk, 2 tablespoons of the coffee liqueur, 1/2 teaspoon of the vanilla, and half of the chocolate mixture in a blender. Add 2 cups of the ice and blend for several minutes, until the mixture is thick but not icy, like a frozen daiquiri. (You can add a little more milk or ice if it's too thick or too thin.) Pour into two (10-ounce) ice cream soda glasses and top each with a generous dollop of whipped cream and some grated chocolate. Repeat for the second two glasses. Serve ice cold with straws and long-handled spoons.
  • Place the cream, sugar, and vanilla in the bowl of an electric mixer fitted with the whisk attachment and beat on high speed until the cream forms very soft peaks (don't overbeat or the cream will be too firm).

1 (12 ounce) package milk chocolate chips
¾ cup white sugar
¾ cup instant hot chocolate mix
3 tablespoons butter
2 (12 fluid ounce) cans evaporated milk
2 teaspoons vanilla extract
4 cups ice
1 cup cold milk

Steps:

  • Place semisweet chocolate chips, milk chocolate chips, sugar, hot chocolate mix, and butter into the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate chips start to melt, about 5 minutes.
  • Stir evaporated milk slowly into the chocolate mixture until chocolate chips are halfway melted, about 3 minutes. Remove from heat; continue stirring sauce is until smooth and velvety, about 2 minutes more. Mix in vanilla extract. Let sauce cool to room temperature, at least 20 minutes.
  • Place 1 cup chocolate sauce, 4 cups ice, and 1 cup milk in a blender. Cover and blend until smooth; pour into 2 individual glasses. Refrigerate the remaining sauce.

We serve this in our ice cream parlor and it's very popular. I know there's another frozen hot chocolate recipe here, but this one is different, as it's made with hot cocoa mix.

1/2 cup hot cocoa mix (or 2 packets...we use Swiss Miss Milk Chocolate flavor)
1 1/2-2 cups crushed ice cubes
whipped cream (optional)
additional hot cocoa mix (optional)

Steps:

  • Pour milk into blender.
  • Add hot cocoa mix and ice.
  • Blend first at low speed and then high speed until ice is finely crushed and slushy.
  • Pour into tall glass and top with whipped cream and a dusting of hot cocoa mix, if desired.
  • Serve with a straw and enjoy!
  • P.S. This recipe was originally posted using small ice cubes. At our shop we have a commercial blender that has no problem getting through these. Since most people have regular blenders, I have changed it to crushed ice.
