FRESH PINEAPPLE SALSA
This fresh pineapple salsa recipe will be a big hit at your next party! It's a little sweet, a little spicy, and 100% delicious. It's easy to make, too. Recipe yields 3 1/2 cups; double it if you're serving a crowd (1 extra-large pineapple should be just right).

Steps:
- In a medium serving bowl, combine the pineapple, bell pepper, onion, cilantro, and jalapeño. Add the lime juice and salt, and stir to combine.
- Season to taste with additional lime juice (for zing) and/or salt (for more overall flavor) if it doesn't taste amazing just yet.
- For best flavor, let the pico de gallo rest for 10 minutes or longer before serving. It's best served fresh but keeps well, chilled, for up to 4 days.

CHINESE PINEAPPLE CHICKEN WITH CASHEW NUTS, GINGER, SPRING ONION
This is sure to satisfy all your cravings for Chinese food, it's a great recipe. Be brave with the ginger, it mellows out as it cooks and is helped along by the sweetness of the dish. The cashew nuts are optional but I am yet to make it without them as I love their crunchy texture and creamy taste. Be sure to serve it with plenty of white fluffy rice. Quicker than waiting for takeout. UPDATE - I HAVE DECREASED THE AMOUNT OF WATER USED IN THE SAUCE FROM 1/2PT TO 1/4 PINT BUT I FIND IT DOES TEND TO GET A BIT TOO THICK AND NEEDS A DROP OR 2 MORE. USE YOUR SENSES, IF YOU THINK IT NEEDS IT THEN ADD IT! ADDING FROZEN VEGGIES WILL WATER THE SAUCE DOWN CONSIDERABLY. THIS PARTICULAR RECIPE DOES NOT ADHERE MUCH TO TWEAKING AND I SUGGEST YOU TRY IT AS STATED BELOW FIRST. THANK YOU

PINEAPPLE-CASHEW-QUINOA STIR-FRY
A recipe from Veganomicon: The Ultimate Vegan Cookbook. They suggest making the quinoa aspect a day or two in advance, store it in the fridge, and you'll be able to put this stir-fry in a snap for an easy weeknight dinner. For a truly gorgeous dish, use a half and half blend of the white quinoa and the heirloom variety Red Inca. Have ALL of your ingredients chopped before starting the stir-fry aspect. You may substitute frozen peas for the edamame. Posted for ZWT4.

- Pour over the quinoa mixture.
- Stir to incorporate completely and coat the quinoa.

- Preheat the oven to 180°C, fan 160°C, gas 4. Mix the pineapple juice, ginger, garlic, soy sauce, ketchup, vinegar and sriracha; season. If the shoulder is in a roll, untie it. Put it into a large casserole, pour over the sauce, making sure it goes in every crevice. Put on the lid; cook in the oven for 3-4 hours, or until tender.
- Meanwhile, put the cashews in water to soak, if not already soaked overnight. About 30 minutes before the end of the pork's cooking time, pop the pepper strips on a tray, splash with oil; season. Cook until lightly browned.
- Cook the rice with the cardamom and 1 teaspoon salt, following the packet instructions. Drain and set aside to cool.
- Meanwhile, drain the cashews, pat dry and toast with the coconut, separately (the coconut is quicker to cook), on a baking tray in the oven while the pork is cooking until lightly browned. Keep an eye on them as they burn easily and will be done in 3-5 minutes.

- Combine the cooked pasta, chicken, drained pineapple tidbits (reserving the juice for the dressing), celery, grapes, green onions, and cashews into a LARGE mixing bowl. Stir together.
- In a smaller bowl, combine all the creamy dressing ingredients and whisk together until smooth. Pour over the pasta salad and stir everything together until combined.
- ** It's best to use cold ranch dressing and cold mayonnaise so that the salad stays cold and you can serve it right away. This salad is best served right away or within 1-3 hours of making it. Leftovers are fabulous but the salad will dry out the longer it's in the fridge. Add additional mayonnaise and/or ranch to moisten.

- In a separate smaller mixing bowl combine all the creamy dressing ingredients. Stir together with a whisk or you you can use a handheld blender to beat it. Pour the dressing into the chicken salad mixture and stir together until combined and mixed well.
- Cover and let sit in the fridge for at least 4 hours before serving. This chicken salad does really well in the fridge without drying out at all, so it can even be made ahead of time too. Serve in croissants, rolls, or other bread of choice.
