SPICY BLACK BEAN BURGERS WITH OATS



Spicy Black Bean Burgers With Oats image

Here is a healthy vegetarian alternative to your typical hamburger. I have included several spicy ingrecients to kick up the blandness of the black beans and oats.

4 tablespoons oil
1 onion, diced
2 jalapeno peppers, minced
2 teaspoons garlic, minced
1 teaspoon Mexican chili powder (mild)
1 teaspoon ground cumin
1/4 teaspoon dried oregano
3 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups quick-cooking oats
2 eggs, beaten
1/2 cup chopped fresh cilantro
2 teaspoons salt
1/4 teaspoon ground black pepper

Steps:

  • Heat a nonstick frying pan over medium heat until hot. Add the oil and when it is warm, add the onion. Stir-fry for 5 minutes.
  • Add the jalapeno peppers and cook for another 2 minutes, stirring occasionally.
  • Add the garlic and cook for another 2 minutes, stirring occasionally.
  • Turn off heat and stir in the chili powder, ground cumin and oregano. Remove from heat and set aside to cool.
  • Meanwhile, rinse and drain (several times) the black beans and then put them into a large mixing bowl.
  • Roughly mash the black beans with a potato masher or a fork.
  • Add the uncooked oats and stir to combine.
  • Add the cooked onions and stir to combine.
  • Add the eggs,cilantro (more or less depending on how much you like cilantro), salt and pepper. You can add a bit more pepper if desired.
  • Mix well and form into patties. They are easier to fry if you make a smaller size pattie and use a smaller hamburger bun.
  • Heat a frying pan over medium-high heat and cook 4-5 minutes on the first side, or until well browned. Carefully flip over the burgers and cook about 3 minutes on the second side. Like most vegetarian burgers, they can crumble, so extra care needs to be taken when frying them.
  • Serve with your favorite garnishes.

yum yum yum. Made this one up myself using a favorite enchilada sauce! It is a delicious vegetarian recipe but could also be spiced up with some chicken or pork. Enjoy!

3 tablespoons olive oil, divided
1/2 a yellow onions or 1/2 a white onion, diced
4 tablespoons flour
2 tablespoons cumin, divided
1 tablespoon paprika
1 1/2 tablespoons garlic powder, divided
1 tablespoon chili powder
4 cups vegetable broth
1/2 cup tomato sauce
1 cup salsa, divided
9 tortillas (8-inch)
2 large russet potatoes, peeled and quartered
1 (15 ounce) can black beans, drained and rinsed
8 ounces cheddar cheese

Steps:

  • Put a large pot of water to boil, add potatoes and cook until they are soft and easily penetrable by a fork.
  • Meanwhile make sauce: in a large saucepan, saute diced onion with a T of oil for 5 min or until soft and translucent. Add extra 2 T of oil and slowly stir in flour. Slowly stir in 1/2 cup salsa and tomato sauce, about 1/4c at a time. Add paprika, cili powder, 1T garlic powder and 1T cumin. Slowly stir in broth and simmer on low until sauce has thickened.
  • When the potatoes are done, mash until smooth. Stir in beans, remaining salsa, cumin, garlic and 6oz of cheese.
  • When the sauce is done, mix a 1/4-1/2 cup in with the potatos then pour a thin layer on the bottom of a 9x13 pan. Warm up the tortillas in a microwave or the oven (to make them flexible) and ladle about 1/3c of potato mixture in each, spreading it evenly down the middle, and rolling the tortilla tightly around it.
  • Line up the enchiladas in the pan and pour the remaining sauce evenly over top. Sprinkle with remaining 2 oz of cheese and bake uncovered for 25min at 350. Enjoy!

4 large Idaho potatoes, peeled and quartered
6 cups chicken stock or lightly salted water
1 large garlic clove, peeled
1/2 teaspoon olive oil
Salt
1 tablespoon soft unsalted butter
1/2 cup heavy cream, at room temperature
1 1/3 cups freshly cooked or canned black beans, rinsed and drained
1/2 tablespoon finely chopped cilantro
1/2 cup cooked corn kernels, optional

Steps:

  • Preheat oven to 350 degrees. Place potatoes in a large pot, add stock or salted water, cover and bring to a boil. Cook until very soft, 20 to 30 minutes.
  • Meanwhile, place garlic on a piece of foil, moisten with oil and loosely wrap it. Place it in oven for 15 minutes.
  • When potatoes are soft, drain and return them to the pot to mash by hand or place them in an electric mixer. Add salt to taste, the roasted garlic, the butter, cream and black beans. Beat ingredients together.
  • Adjust seasonings, and gently reheat the potatoes before serving. Garnish each portion with cilantro and, if desired, a scattering of corn.

1 (16 ounce) can black beans, drained and rinsed
½ green bell pepper, cut into 2 inch pieces
½ onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
½ cup bread crumbs

Steps:

  • If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
  • In a medium bowl, mash black beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
  • In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  • Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
  • If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

We're sure you'll be converted to this healthy substantial burger option once you try it, we are also sure that you won't only be eating it on the 31st August - National Burger Day. Flaxseeds or linseeds are small oilseeds that originated in the Middle East thousands of years ago. Flaxseeds have a high content of Omega-3 which is good for heart health and they are 29% Carbohydrate, of this, a massive 95% is fibre which is good for digestion. They contain many vitamins, minerals and essential amino acids so understandably they are becoming more popular. Be aware though - they do not contain Lysine so they cannot be considered a protein source, but this can be found in another ingredient, the black bean. A great alternative burger recipe!

1 tablespoon flax seed meal
2 1/2 tablespoons water
250 g black beans, cooked
30 g almond meal
1 tablespoon cilantro
1 tablespoon parsley
7 g garlic, minced
30 g red onions, minced
1/2 teaspoon paprika
1 teaspoon cumin powder
1/2 teaspoon salt
1/2 teaspoon black pepper
125 ml sunflower oil
1 teaspoon cider vinegar
1/4 teaspoon salt
1 tablespoon Dijon mustard
8 g flax seed meal
30 ml water
400 g mashed potatoes
44 g flour, gluten-free
1/4 teaspoon salt
1 tablespoon mustard
1 nonstick cooking spray
30 g romaine lettuce
120 g tomatoes

Steps:

  • For the Flaxseed Mayonnaise - makes 1 cup prepared mayonnaise.
  • Combine flaxseed meal and water in a large bowl. Leave for 5 minutes.
  • Add the mustard and cider vinegar. Whisk to combine.
  • In a thin steady stream, gradually whisk in the sunflower oil.
  • Season with salt and pepper.
  • For the Potato Buns.
  • Combine mashed potatoes, flour, salt, and mustard in a bowl.
  • Form into buns about 75 grams each.
  • Pan-fry in a non-stick pan for 3-4 minutes each side.
  • Drain on paper towels.
  • For the Burger Patties.
  • Combine flaxseed meal and water in a bowl. Leave for 5 minutes.
  • Combine the flaxseed mix with half of the black beans, cilantro, parsley, garlic, red onion, salt, pepper, cumin, and paprika in a food processor and pulse into a smooth paste.
  • Combine this pureed mix with the remaining black beans, cilantro, and parsley.
  • Form into patties about 100-110 grams each.
  • Pan-fry in a non-stick skillet for 3-5 minutes per side.
  • Assemble the Burgers.
  • Serve the patties on potato buns.
  • Add a dollop of flaxseed mayo, some fresh romaine lettuce, and tomato slices.

1 1/2 medium sweet potatoes, halved lengthwise

Steps:

  • Cook sweet potatoes in 400 degree oven, cut side down for 30 minutes.
  • While the sweet potatoes are baking, make the chili lime mayo. In a small bowl, mix together the mayo, chili garlic sauce and lime juice. Set aside.
  • In a small bowl, add salt, onion powder, garlic powder, chili powder, oregano, cumin powder and black pepper. Mix together and set aside.
  • In a large bowl, add black beans and cooked sweet potatoes. Mash until consistency is only slightly chunky. Some beans will be completely mashed and others will not. This will help create a nice texture.
  • Add in cooked quinoa and spices. Mix together with hands and form into 8 burger patties, about 1/3 cup of mixture each.
  • Place burger patties on a large baking sheet covered in parchment paper. Spray with olive oil and bake in 400 degree oven for 20 minutes. Flip over, spray other side with olive oil and bake for another 10 minutes.
