MUSHROOM PIEROGI

Pierogi are idiosyncratic dumplings. You can fill them with pretty much whatever you want, make them as large or small as you want, alter the dough and either boil or fry them... or both. Mushroom pierogi are a very common thing in Eastern Europe, as the various Slavic nations tend to be serious mushroom eaters. These pierogi are made with fresh porcini and reconstituted black trumpet mushrooms. But you can do this with pretty much any mushroom you'd want to eat. I like having two different kinds for variety, but you could do fresh and dried morels, for example.

500 grams of all-purpose flour, (about 4 cups)
A pinch of salt
1 egg
240 mililiters of water, (about 1 cup)
1/4 cup sour cream
1/2 pound fresh mushrooms
1/2 ounce dried mushrooms, (rehydrated)
1 cup minced onion
2 large garlic cloves, (chopped)
3 tablespoons unsalted butter
1 tablespoon minced parsley or dill
1/4 cup bread crumbs
2 teaspoons salt
Black pepper

Steps:

  • Make the dough by mixing all the ingredients together in a large bowl. Knead the dough until it comes together as a sift, silky dough, about 5 minutes. Cover in plastic wrap and let the dough sit on the counter for an hour or so. You can refrigerate it up to 2 days.
  • To make the filling, chop the fresh and dried mushrooms and add them to a large saute pan with the minced onions. Turn the heat to medium-high and saute until the mushrooms give up their water, about 2 to 5 minutes depending on the mushroom. Salt them well. When the water from the mushrooms has almost evaporated, add the butter and saute until everything begins to brown, about 4 to 6 minutes. Add the garlic and cook another minute. Turn off the heat and let the mixture cool for a few minutes.
  • Add the contents of the pan to a food processor, along with the dill or parsley. Buzz to make a fine crumble, but not a paste. You want some texture in the filling. Put the contents of the food processor in a bowl and mix well with breadcrumbs. Add salt and black pepper to taste.
  • To make the pierogi, roll the dough out by hand -- it's too soft for a pasta roller.
  • And you don't want it too thin, either. About 1/8 inch is good. The reason is you stretch the dough when you make the pierogi.
  • I use pastry cutters to make my pierogi, but you can use a glass or you can cut out squares. How wide is up to you. I used a 3-inch round, which makes smallish pierogi that are a bit more like potstickers in size. Everyone's pierogi are different shapes and sizes, so go for whatever floats your boat.
  • Take the round of dough and stretch it a little evenly all around, like you would with pizza dough. It doesn't have to be too stretched out, but a little helps. Hold the dough in the palm of your "off" hand. Put a teaspoon, tablespoon or whatever seems to fit in the center of the dough -- you can fill pierogi more than you can with Italian pasta dough because it's so flexible.
  • Fold the dough over the filling. I start at the center and work towards an edge, stretching and pinching the dough at the rim of the dumpling as I go. Finish by sealing the other edge. Set the dumpling on your well-floured surface and seal it tight by crimping with the tines of a fork. Set your finished pierogi on a baking sheet that you've dusted with either semolina flour or cornmeal.
  • Pierogi are pretty moist, so they don't do too well stored uncooked, unless you freeze them right away. To freeze, put the baking sheet in the freezer (or a plate if the whole sheet won't fit), then, when they are frozen, you can put them in a freezer bag. Normally I cook pierogi shortly after making them.
  • You can either simply boil your pierogi until they float -- I give them another minute once they float, too -- or you can double cook them, which is what I prefer. To do this, boil until they float, then fry in lots of butter. Serve with caramelized onions, sour cream and dill.

1 small onion, chopped

10 ounces white button mushrooms, trimmed and thinly sliced

Steps:

  • In a large skillet, heat oil over medium. Add onion; season with salt and pepper. Cook, stirring occasionally, until onion starts to soften, 4 to 5 minutes. Add mushrooms; cook, stirring occasionally, until browned, 8 to 10 minutes. Add sauerkraut, and cook until warmed through.
  • Cook pierogi according to package instructions, and serve over sauerkraut and mushrooms.

2 tablespoons butter
1 pound mushrooms, sliced
4 (1 pound) packages frozen potato and cheese filled pierogies
2 (10.75 ounce) cans condensed cream of mushroom soup
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray the bottom and sides of a lasagna-size casserole dish with cooking spray.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 10 minutes. Transfer bacon to a paper towel-lined plate to drain. Cook and stir onion in hot bacon grease until golden, 5 to 10 minutes. Transfer onion to bacon and drain bacon grease from the skillet.
  • Melt butter in the same skillet over medium-high heat. Saute mushrooms in hot butter until golden and moisture evaporates, 5 to 10 minutes.
  • Cover the bottom of the prepared casserole dish with a single layer of frozen pierogies and spread 1 can condensed cream of mushroom soup on top. Layer bacon, onions, and mushrooms over the top. Spread remaining pierogies over mushrooms, cover with remaining cream of mushroom soup, and top with Cheddar cheese. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven for 45 minutes. Remove aluminum foil and continue baking until casserole is golden and cheese is bubbling, 10 to 15 minutes.

This is one of the most favorite dishes of our family: vareniki (Russian pierogi or dumplings) filled with potatoes and fried mushrooms. Serve with sour cream mixed with fresh herbs.

1 teaspoon salt

This is one of my go-to meals when I need to get dinner on the table in a hurry. It's not fancy, but it's tasty and filling. If you don't like mushrooms, you can use asparagus, bell peppers, peas, or any other vegetable that you enjoy. This recipe was originally published on my blog.

2 lbs frozen potato pierogies, any flavour
2 teaspoons olive oil
1 small onion, sliced
3 garlic cloves, minced
8 -10 mushrooms, sliced
salt and black pepper
1 tablespoon butter

Steps:

  • Boil the pierogies in salted water, according to package instructions.
  • Meanwhile, add the olive oil to a non-stick skillet and place over medium heat.
  • Cook the onion for a couple minutes, then add the garlic (so it doesn't burn). Stir and let cook for 1 more minute.
  • Add mushrooms and season with salt and pepper.
  • Continue cooking the mixture until the onions are translucent and the mushrooms are cooked. Remove from the skillet and set aside.
  • In the same skillet, add the butter and pierogies (drained).
  • Flip over the pierogies so they brown on both sides, then add the mushrooms back into the pan.
  • Stir to combine everything, adjust the seasonings as needed, and remove from the heat.
  • Serve warm. Can be served with sour cream if desired.

4 large eggs, plus 1 egg for egg wash
1/2 cup (1 stick) melted unsalted butter, cooled
1/2 cup sour cream
1 teaspoon salt
5 cups all-purpose flour, plus more for dusting
1 pound potatoes, peeled and cubed
2 tablespoons unsalted butter, plus more for sautéing
1 large leek
10 ounces mushrooms, finely chopped
4 sprigs fresh thyme
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 cup heavy cream
Chopped fresh flat-leaf parsley, for garnish
Roasted Apples, recipe follows
3 Gala apples, peeled, cored, and coarsely chopped
3 Golden Delicious, peeled, cored, and coarsely chopped
1 lemon, juiced
2 cinnamon sticks
1/4 cup sugar
Pinch salt
2 tablespoons unsalted butter

Steps:

  • To make the pierogi dough: Mix the 4 eggs, butter, sour cream, and salt together in a bowl with a whisk. Sift the flour onto a flat work surface and make a well in the center, pour the wet ingredients into the crater. Stir the mixture together with a fork, gradually incorporating the flour into the well until a soft dough forms. Squeeze the dough with your hands, if it¿s too sticky, add a bit of flour; if it¿s not pliable, add a couple of drops of water. Knead the dough, adding only as much additional flour as needed to keep the dough from sticking, until it is smooth and elastic, about 5 minutes. Gather the dough into a ball and cover it with an inverted bowl or plastic wrap for 10 minutes or so to rest.
  • To make the filling: Cook the potato cubes in boiling salted water until tender, about 15 minutes. Drain and then mash them with a ricer or regular old potato masher while they are still hot; set them aside to cool while preparing the rest of the filling. Trim the root off the end of the leek and cut off all but 1-inch of the green part. Halve the leek lengthwise and rinse really well under cool water, checking for dirt everywhere; it gets trapped in all the layers of outer leaves. Slice the leek finely. Melt 2 tablespoons of butter in a large skillet over medium-low heat. Add the leek, mushrooms, and thyme, saute for a few minutes to soften the vegetables; season with salt and pepper. Continue to cook until the vegetables are broken down and almost dry, then pour in the cream, stir to incorporate. Remove the pan from the heat, take out the sprigs of thyme, and scrape the mushroom mixture into the potatoes, mix well to incorporate the ingredients. Make sure the filling is not too hot, or it will start to cook the dough, causing it to sog.
  • Lightly flour your rolling pin and counter. Take 1/2 of the dough (leaving the rest covered so it doesn¿t dry out while you work) and roll it out into a thin circle, about 1/8-inch thick. Using a 3-inch round cookie or biscuit cutter, cut circles out of the dough. Spoon 1 tablespoon of the filling into the center of each pastry circle, leaving a 1/2-inch border. Beat the remaining egg with 2 tablespoons of water to make an egg wash and brush it on the edges of the circle. Fold the dough over in 1/2 to enclose the filling and form a semi-circle and seal the edges by crimping with the tines of a fork. Lightly tap the bottoms of the dumplings on the counter to make it flat. Repeat with the remaining half of dough and filling. You should make about 35 pierogies; put 1/2 of them in the freezer to keep on hand (they are better than the ones you find in the frozen section of the grocery store.)
  • Coat a large saute pan (that has a tight fitting lid) with vegetable oil and place over medium heat. Lay the pierogies in the pan (you may have to do this in batches) and fry them for a couple of minutes until they start to crisp and brown on both sides. Pour in 1 cup of water and cover the pan to let the pierogies steam; when the water evaporates the turnovers should be cooked and crisp. Arrange the pierogies on a platter, garnish with parsley, and serve with roasted apples and/or sour cream.
  • Preheat the oven to 400 degrees F. Spread the apples out in a casserole pan and add the lemon juice, cinnamon, sugar, salt, and butter. Bake until the apples are roasted and soft, about 30 minutes. Serve the chunky apple sauce with pierogies, either hot or chilled.

PIEROGIES WITH MUSHROOM SAUCE

10 ounces button mushrooms, sliced
1 medium onion, chopped
2 tablespoons sour cream

Steps:

  • In a large pot, bring enough water to cover the pierogies to a boil. Place pierogies in boiling water and cook through. Remove pierogies from heat and strain. In a medium skillet, heat 2 tablespoons of butter. Add the sliced mushrooms and stir until they are coated with butter. Add the chopped onion to the skillet and saute until the onions are soft and the mushrooms begin to give up their liquid. Remove the skillet from heat and add the sour cream and stir until just combined.
  • In another skillet, heat the remaining 2 tablespoons of butter. Add the cooked pierogies to the skillet and saute until browned. Transfer the pierogies to a serving platter and spoon the mushroom sauce on top.

1 1/4 pounds assorted mushrooms, such as white, shiitake, or cremini
1/2 tablespoon butter
1/2 tablespoon olive oil
1/4 cup minced shallots, (about 2 large)
2 tablespoons lemon juice
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon fresh thyme
3 tablespoons heavy cream
1 tablespoon minced flat-leaf parsley
Pierogi Dough for Potato and Goat Cheese Pierogi

Steps:

  • Remove stems from shiitake mushrooms, and trim stems of white and cremini mushrooms. Place mushrooms in a food processor, and pulse about eight times, until finely chopped. Set aside.
  • In a medium saute pan, melt butter and oil over low heat; add shallots. Cook, covered, until softened, about 2 minutes. Add mushrooms, lemon juice, salt, and pepper, and mix well. Raise heat to medium, and cook, stirring occasionally, until mixture is nearly dry, about 8 to 10 minutes. Add cream, thyme, and parsley, and cook about 1 minute. Transfer to a medium bowl.
  • To form dumplings, place a heaping teaspoon of the filling toward the front of a circle of pierogi dough. Moisten the edges of the dough with water, and fold in half around filling to form a semicircle, firmly pinching the edges closed. Set aside on a lightly floured baking sheet. Continue to fill and form pierogi, keeping them covered with plastic wrap, until all the dough has been used.
  • Meanwhile, bring a large pot of salted water to a boil, and add half the pierogi. Boil gently until they float to the surface, about 2 minutes, and continue cooking for another 3 to 4 minutes. Drain, and repeat with remaining pierogi. Serve immediately.

2 dozen purchased frozen pierogies (such as potato-and-onion or cheese)
Sour cream

Steps:

  • Melt 2 tablespoons butter in heavy large Dutch oven over medium-high heat. Add onions; sprinkle with salt and pepper. Sauté until golden brown, about 30 minutes. Add mushrooms and sauté until tender, about 10 minutes. Mix in sauerkraut and flour. Mix in 2/3 cup water. Cover pot, reduce heat to medium and simmer until sauerkraut is tender and mixture is thick, stirring occasionally and adding more water by tablespoonfuls if mixture seems dry, about 20 minutes. Mix in 2 tablespoons butter. Season generously with salt and pepper. (Can be prepared 2 days ahead. Cover and refrigerate. Rewarm over low heat before continuing.)
  • Meanwhile, cook pierogies in large pot of boiling salted water until heated through, about 6 minutes. Drain; transfer to large bowl and toss with remaining 4 tablespoons butter.
  • Spoon sauerkraut mixture into large shallow bowl. Top with pierogies. Serve with sour cream.

WILD MUSHROOM PIEROGIES

  • Cook pierogies in a large pot of lightly salted boiling water until tender, 12 to 15 minutes. Transfer with a slotted spoon to skillet with onions. Toss gently to coat and serve immediately.

This is one of my all time favorite WW recipes. I serve it to company all of the time, and no one ever guesses its low fat! I have used ravioli instead of pierogies and have added ham for variation. Recipe as written is 5 points.

2 cups sliced mushrooms
1 onion, sliced

2 tablespoons dry sherry or 2 tablespoons apple juice

1 (1 lb) package frozen low-fat potato pierogies, thawed
2 tablespoons light sour cream

Steps:

  • Heat oil in large nonstick skillet over medium-high heat.
  • Add the mushrooms, onion, salt and pepper to taste.
  • Cook stirring occasionally until the mushrooms and onion are tender and lightly browned, about 4 minutes.
  • Stir in sherry and cook until evaporated.
  • Sprinkle in flour and stir to combine.
  • Stir in milk, broth, and pierogies; bring to a boil.

A popular Polish dish similar to dumplings or ravioli. Pronounced pyeh-RAW-ghee (this is the plural form, not pierogies, just one is called pierog, but they're so good you'll almost never eat just one.) Pierogi can be made with a wide variety of fillings, but the most common are minced cooked meat, sauerkraut and mushrooms, cheese and potatoes (known as ruskie/Ruthenian pierogi), sweet cheese (usually with a touch of vanilla) and blueberries (in summer). Other fillings include buckwheat groats, potatoes and onions and lentils. Toppings include fried fat-back nuggets, sour cream, melted butter or butter-browned bread crumbs.

1 lb sauerkraut, finely chopped
150 g butter, divided
1 onion, chopped
1/4 lb fresh mushrooms, diced
pepper
4 cups flour
2 eggs
1 teaspoon salt
3/4-1 cup warm beef stock or 3/4-1 cup beef bouillon
12 cups salt water (for cooking perogi)

Steps:

  • Saute the sauerkraut in 1/3 of the butter.
  • Fry the onion in 1/6 of the butter; fry the mushrooms in the remaining butter.
  • Combine these ingredients, season with pepper, and refrigerate until ready to assemble pierogi.
  • Combine the ingredients listed under dough and knead until well blended (dough should be somewhat dry and about the consistency of play-doh, you can knead in more flour if needed).
  • Twist off workable portions of dough and roll out very thin on a floured surface.
  • Using a glass with a thin lip and a diameter of about 3-1/2 inches, dip lip of glass in flour and cut circles out of the dough.
  • Place about 2 teaspoons filling in the center of each dough circle.
  • Moisten outer edges with water and fold dough over to close.
  • Seal edges by pressing gently with the back of a fork or pinching together with your fingers.
  • Bring water to a boil.
  • Cook 12 pierogi at a time, reducing heat to a gentle boil.
  • Boil, stirring occasionally to keep from sticking to the bottom, until pierogi float to the surface (about 5 minutes).
  • Rinse in cold water, then drizzle melted butter or vegetable oil over dough to keep from sticking.
  • Repeat with remaining pierogi.
  • At this point you can serve them warm, freeze them for later use, deep fry them until golden brown or pan fry them in butter with onions over medium heat, lightly browning both sides before serving.

24 frozen potato cheese pierogi, defrosted
4 tablespoons olive oil
2 tablespoons butter
6 slices bacon, chopped
1 large onion, sliced
4 garlic cloves, chopped
8 ounces sliced mushrooms
1 lb cabbage, thinly sliced
1/4 cup water
salt, pepper to taste
1/3 cup fresh dill, chopped
sour cream, for serving (optional)

Steps:

  • heat 1 tbsp oil and 1 tbsp butter in a skillet.
  • add pierogies, in batches and saute until browned on both sides, 5 minutes per side.
  • add more oil and butter if needed for the next batch, keep warm.
  • heat 1 tbsp oil in same skillet, add bacon, cook until crispy and set on paper towels to drain.
  • pour most fat off of skillet.
  • add 1 tbsp oil, saute onions, mushrooms and garlic until golden, about 8 minutes.
  • add cabbage, water, salt, pepper and cover. cook until cabbage is tender,2-3 minutes, if you like your cabbage softer.
  • or you can just keep stirring, uncovered until the cabbage is crisp tender.
  • place pierogies on a platter, pour cabbage mixture over, garnish with bacon and dill.
  • serve with sour cream if desired.

This recipe was originally courtesy of Tyler Florence from the Food Network.com but have used it as my base recipe and then tweaked a "bit" here and there and these were the end results. It took awhile but here it is!

4 large eggs
1 large egg, for egg wash
1/2 cup melted unsalted butter or 1/2 cup margarine, cooled
1/2 cup sour cream
1 teaspoon salt
5 cups all-purpose flour
flour, for dusting
1 lb potato, peeled and cubed
4 tablespoons unsalted butter
2 large onions, finely chopped
15 ounces button mushrooms, finely chopped
3/4 cup shredded cheddar cheese
4 sprigs fresh thyme
kosher salt
freshly ground coarse black pepper
1 cup heavy cream
chopped fresh flat-leaf parsley, garnish

Steps:

  • Dough:.
  • Mix the 4 eggs, butter or margarine, sour cream and salt together in a bowl with whisk.
  • Sift the flour onto a flat work surface and make a well in the center, pour the wet ingredients into the crater.
  • Stir the mixture with a fork, gradually incorporating the flour into the well until a soft dough forms.
  • Squeeze the dough with your hands, if it's sticky, add a bit of flour, if it's not pliable, add a couple of drops of water.
  • Knead the dough, adding only as much additional flour as needed to keep the dough from sticking, until it is smooth and elastic, about 5 minutes.
  • Gather the dough into a ball and cover it with an inverted bowl or plastic wrap for 10 minutes or so to rest.
  • Filling:.
  • Cook the potato cubes in boiling salted water until fork tender, about 15 minutes.
  • Drain and then mash them with a ricer or regular "old" potato masher while they are still hot; set them aside to cool while you prepare the rest of the filling.
  • Melt 3-4 tablespoons of butter or margarine in large skillet over medium-low heat.
  • Add the onions, mushrooms and thyme, saute for a few minutes to soften the vegetables; season with salt and pepper.
  • Continue to cook until the vegetables are broken dry and almost dry, then pour in cream & cheese; stir to incorporate.
  • Remove the pan from the heat; take out sprigs of thyme, and scrape the mushroom & cheese mixture into the potatoes, mix well to incorporate the ingredients.
  • Make sure the filling is not too hot or it will start to cook the dough, causing it to sog.
  • Lightly flour your rolling pin and counter.
  • Take 1/2 of the dough(leaving the rest covered so it doesn't dry out while you work) and roll it out into a thin circle, about 1/8" thick.
  • Using a 3" round cookie or biscuit cutter, cut circles out of the dough.
  • Spoon 1 tablespoon of the filling into the center of each pastry circle, leaving a 1/2" border.
  • Beat the remaining egg with 2 tablespoons water to make an egg wash and brush it on the edges of the circle.
  • Fold the dough over 1/2 to enclose the filling and form a semi-circle and seal the edges by crimping with the tines of a fork.
  • Lightly tap the bottoms of the dumpling on the counter to make it flat.
  • Repeat with the remaining half of dough and filling.
  • You should make about 35 pierogies; put 1/2 of them in the freezer to keep on hand (they are better than the ones you find in the freezer section of the grocery store.).
  • Coat a large saute pan (that has a tight fitting lid) with vegetable oil and place over medium heat.
  • Lay the pierogies in the pan (you may have to do this in batches) and fry them for a couple of minutes until they start to crisp and brown on both sides.
  • Pour in 1 cup of water and cover the pan to let the pierogies steam; when the water evaporates, the pierogies should be cooked and crisp.
  • Arrange the pierogies on a platter, garnish with parsley and serve with roasted apples, sour cream, butter with caramelized onions, and/or any of the following:.
  • Roasted apples:.
  • 3 Gala apples, peeled, cored and coarsely chopped.
  • 3 Golden Delicious, peeled, cored and coarsely chopped.
  • 1 lemon juiced.
  • 2 cinnamon sticks.
  • 1/4 cup brown sugar or brown sugar "splenda".
  • Pinch of salt.
  • 2 Tablespoons butter.
  • Preheat oven to 400°F.
  • Spread the apples out in a casserole pan and add the lemon juice, cinnamon, sugar or splenda, salt and butter.
  • Bake until the apples are roasted and "NOT" mushy, about 20 minutes.
  • Serve the apples with peirogies, either hot or chilled.
  • Caramelized Onions & Sour Cream:.
  • 4-5 large onions, sliced thin.
  • 3-4 tablespoons butter or margarine.
  • 1-2 teaspoons sugar, to caramelize - no subs.
  • Sour cream, to serve on the side.
  • Melt butter in large saute pan and then add onions & sugar; saute for about 15 minutes or until onions are soft and a nice golden color.
  • Serve onions with pierogies and sour cream, as little or all you want.
  • "Maple" Cured Bacon & Melted Butter:
  • 1/2 lb of "maple" cured bacon or turkey bacon.
  • 4-5 tablespoons butter.
  • Parsley, chopped fine - garnish.
  • Saute bacon in frying pan or microwave oven.
  • When crispy and drained; crumble into little pieces.
  • Melt butter in a saucepan or in microwave oven, before it turns brown, remove and sprinkle with parsley.
  • Sprinkle melted butter with parsley and bacon on hot pierogies.
  • Melted Butter & Green Onions:.
  • 4-5 tablespoons butter
  • 1-2 green onions, chopped fine (green & white parts).
  • Melt butter in saucepan or microwave, remove before it browns.
  • Sprinkle with green onions and spread it over the warm pierogies.
  • Use any and all combinations with these.
  • There are too many variations for me to list but I have listed a few that my family enjoys. Hope you do too!
