COCONUT SHRIMP LOLLYPOPS WITH APRICOT-GINGER DIPPING SAUCE



Coconut Shrimp Lollypops with Apricot-Ginger Dipping Sauce image

1/2 cup apricot jam
1 tablespoon freshly grated ginger
1 tablespoon Dijon mustard
1 jalepeno pepper, seeds discarded, minced
2 tablespoons seasoned rice wine vinegar or freshly squeezed lime juice
1 coconut, or 2 cups sweetened shredded coconut
1 cup all-purpose flour
1/2 cup beer
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cayenne pepper
1 egg
12 shrimp (16 to 20 count) shelled and deveined
12 bamboo skewers, approximately 5 inches
3 to 5 cups peanut oil, or vegetable oil

Steps:

  • Place all apricot dipping sauce ingredients in a blender or food processor. Blend until smooth. Reserve.
  • Pierce the soft eye of the coconut and drain the coconut water. Reserve.
  • Crack coconut in 1/2 using the back of a cleaver.
  • Separate the coconut meat from the shell. Use a pairing knife to remove the brown skin from the meat. Using the finest part of your grater, grate 2 cups of coconut .
  • Pour coconut water in a measuring cup and if necessary top off with beer until you have 3/4 cup of liquid. Reserve. If you are using store-bought shredded coconut (and consequently do not have any coconut water) replace mixture with 3/4 cup of beer.
  • In a large bowl, combine flour, coconut water/beer mixture, baking soda, salt, cayenne, and egg. Beat until it is smooth. Add a bit more flour or beer, if necessary, so that the batter has the consistency of thick pancake batter.
  • Tightly wrap each shrimp like a pinwheel (with the tail end of the shrimp on the outside) and skewer 1 shrimp on the end of each skewer. Use a paper towel to pat the shrimp dry.
  • Pour oil into a small, tall pot until it is 3 inches deep. Heat oil until it reaches 350 degrees F (see oil dissertation below).
  • While oil is heating, dip each shrimp into the batter, then dredge into the coconut shreds so that the entire "lollypop" is covered in coconut shreds.
  • When oil is ready, submerge 4 shrimp at a time into oil (with the skewers sticking out of the pot). Fry for approximately 1 minute, or until coconut is a golden brown, rotating the top of the skewer once or twice. Remove and place lollypops on paper towel to absorb excess oil.
  • Skim any wayward coconut shreds from the oil. Adjust heat so that it is 350 degrees F again and continue with next batch. Serve with apricot dipping sauce. For a creative presentation, stick skewers into an upturned pineapple or melon 1/2 and/or serve the dip in a coconut 1/2 (the side without the hole!)

COCONUT GINGER SOY SAUCE

I am trying to add more coconut oil to my diet and came up with this easy topping for steamed veggies, salmon, or any dish of your choice. I use a brand of organic ginger tamari (soy sauce with ginger flavor added) plus virgin coconut oil. I don't have specific amounts of each ingredient, because I'm just going for a certain texture. Since I'm still experimenting with this, let me know of any additional ingredients you may put in to "kick it up."

3 -6 tablespoons virgin coconut oil
lime juice, to taste

Steps:

  • Warm the coconut oil if it is solid (it turns solid when room temperature is below 74 degrees Fahrenheit).
  • Gradually mix enough ginger tamari into the oil so that it remains somewhat creamy, rather than becoming too liquid. Add lime juice to taste.
  • Serve over steamed veggies, fish, or whatever you like.

1/2 red bell pepper, chopped fine
1/2 yellow bell pepper, chopped fine
1/2 green bell pepper, chopped fine
10 shallots, minced and divided
3 tablespoons olive oil
4 garlic cloves, minced and divided
1 tablespoon fresh thyme, chopped fine
salt & freshly ground black pepper
1/4 cup fresh gingerroot, chopped
1/4 cup dry white wine
1 1/2 cups chicken stock or 1 1/2 cups vegetable stock
1 cup coconut milk
4 sole fillets, 6 oz each
1 cup flour, for dredging
2 tablespoons unsalted butter

Steps:

  • In a large skillet, over medium heat, add 2 tablespoons oil, chopped peppers, half the shallots, and cook, stirring frequently, until softened, about 3 to 5 minutes.
  • Add half the garlic and cook one minute; season with thyme, salt and pepper, stir.
  • In a medium saucepan, over medium heat, add remaining tablespoon of oil, remaining shallots, and cook, stirring frequently, until translucent, about 5 minutes.
  • Add remaining garlic and ginger, stirring.
  • Add the wine and bring to a boil; reduce heat and cook until the liquid has reduced by 3/4 then add the fish or chicken stock.
  • Increase heat and add the coconut milk, stir; reduce heat to medium and cook until the sauce thickens, stirring frequently.
  • Strain, discard solids, season with salt and pepper; keep warm.
  • Meanwhile, pat fish dry with a paper towel, season on both sides with salt and pepper; lightly dredge in flour.
  • In a large skillet, melt butter over medium heat, add fish and cook until golden, about 2 to 3 minutes; carefully turn over and cook until golden on the other side.
  • To serve, place a fillet on a plate, top with warm pepper mixture, spoon sauce around the fish.

1 Can 16 oz. coconut milk
2 Lemongrass stalks remove outside layer also tops and bottoms then cut into 1 in. pieces
2 "Piece of ginger peeled and sliced into ½ in rounds
4 garlic cloves bashed
2-4 Thai chilies stems removed and sliced lengthwise, keep the seeds *optional
4 Tbsp. fish sauce
1 ½ Tbsp. brown sugar
1 ½ tsp. soy sauce
¼ tsp. ground turmeric

  • As the scallops are cooking, boil coconut milk on med heat. Then add all other ingredients reduce to simmer for 10 minutes, stir infrequently. Drain off all solids with a slotted spoon.

4 cups sweetened flaked coconut (10oz)
1 cup all-purpose flour
1/4 cup beer (anything but dark)
1/4 teaspoon baking soda
1/2 teaspoon salt

6 cups canola oil (for frying)
1 1/2 lbs size 10-15 shrimp (peeled and deveined with tail on)
1 1/2 tablespoons fresh lime juice
2/3 cup mayonnaise

Steps:

  • 1. whisk together lime juice, mayonnaise, honey, mustard and ginger for the sauce, cover and chill (can be made up to 6 hours ahead).
  • 2. take half of the coconut and place in pie plate.
  • 3. whisk together flour, beer, baking soda, salt, cayenne, and egg.
  • 4. heat oil until it registers 350º F in a 6 quart deep heavy pot over medium high heat.
  • 5. while the oil is heating dip each shrimp individually into batter, letting excess drip off, then dredge in coconut, coating completely and pressing gently to help adhere. Transfer to a plate and coat remaining shrimp in the same manner, adding additional coconut to pie plate as needed.
  • 6. Fry shrimp, six at a time, turning once, until golden, about 1 minute. Transfer with a slotted spoon to paper towel to drain and season lightly with salt. Skim any coconut from oil and return oil to 350º between batches.

  • Blend cornstarch into water and add to sauce. Stir frequently, bringing mixture to a full boil for at least one minute or until slightly thickened.

1 lemongrass stalk, top half trimmed, tough outer layers removed, thinly sliced
4 garlic cloves
1 2" piece ginger, peeled, coarsely chopped
1 Tbsp. kosher salt
1 Tbsp. sugar
1 tsp. ground turmeric
1/2 tsp. ground coriander
1/4 tsp. cayenne pepper
1 (14-oz.) block firm or extra-firm tofu, drained
1 small or 1/2 large head of cabbage (about 1 1/2 lb.), cut into 2" wedges through core
3 large carrots (about 1 lb.), peeled, cut into 2" segments
Toasted coconut chips, steamed rice, and lime wedges (for serving; optional)

Steps:

  • Place a rack in top third of oven; preheat to 425°F. Purée coconut milk, lemongrass, garlic, ginger, salt, sugar, turmeric, coriander, and cayenne in a blender until smooth.
  • Squeeze tofu over a medium bowl or sink with your hands, gently at first, then more firmly to expel as much water as possible (like squeezing out a big sponge). Don't worry if it starts to crack apart. When no more liquid comes out, tear tofu into 2" pieces; discard liquid. Place in a shallow 13x9" baking dish. Add cabbage and carrots, arrange in an even layer, and pour sauce over.
  • Bake, basting the vegetables and tofu halfway through, until carrots are fork-tender, most of the liquid is evaporated, and the top is golden brown and lightly charred in places, 40-45 minutes. Let cool 5 minutes.
  • Top with coconut chips (if using). Serve with rice and lime wedges alongside (if using).

1 onion
1 tablespoon fresh ginger
500 g pumpkin, diced
100 ml chicken stock
1 (410 ml) can coconut cream
salt and pepper

Steps:

  • Chop the onion and finely mince the ginger.
  • Heat the oil and saute the onion and ginger without browning them.
  • Add the pumpkin and stir for 2 minutes.
  • Add sufficent water to just cover the pumpkin and cook until the pumpkin is soft.
  • Add the coconut cream and stock and stir thoroughly.
  • Using a blender or mouli, blend until smooth.
  • Serve.

1 1/4 cups chicken stock or broth
1 (14- to 15-ounce) can unsweetened coconut milk
1 chicken leg (10 to 12 ounce), cut into drumstick and thigh and skin discarded
1 stalk fresh lemongrass, 1 or 2 tough outer leaves discarded and root end trimmed
1 (2- by 1 1/2-inch) piece fresh ginger, thinly sliced
1 small (1 1/2- to 2-inch) dried chile (preferably Thai), halved lengthwise and seeds discarded

Steps:

  • Bring stock, coconut milk, and chicken to a boil in a 1 1/2- to 2-quart saucepan, then reduce heat and simmer, uncovered, 45 minutes.
  • Crush lemongrass stalk with side of a heavy knife (to release oils), then thinly slice. Add lemongrass, ginger, and chile to coconut mixture and bring to a boil. Remove pan from heat and let stand, covered, 30 minutes.
  • Pour sauce through a fine-mesh sieve into a bowl, discarding solids, then return to pan and bring to a boil. Season with salt. Blend sauce in a blender until frothy, about 30 seconds (use caution when blending hot liquids). Serve immediately.
