Enjoy the chocolatey crunchiness of these easy no-bake chocolate haystacks treats. Made with 2 simple ingredients!

24 ounces chocolate chips or bars (milk chocolate, semi-sweet or dark)
2 cups chow mein noodles
1 cup your choice of toasted nuts (almonds, peanuts, cashews, or pecans (Optional))

Steps:

  • Line two baking sheets with parchment paper.
  • Melt chocolate per the directions on the package.
  • Add chow mein noodles and nuts to the melted chocolate and carefully combine until they are coating well.
  • Scoop about a tablespoon full of the mixture and drop onto the parchment paper.
  • Allow to cool. I place mine in the refrigerator for about 20 minutes. (the freezer would work too for about 10 minutes)
  • Sprinkle with sea salt, if desired.
  • Store in an airtight container.
  • ENJOY!!

These are some of my favorite sweets. Easy and sooooo good! I found the recipe in a church cookbook and made a couple adjustments after making it. The original recipe called for chow mein noodles but I prefer the rice noodles. Yield is an estimate as it depends on how big you scoop them :) Update: Dec 2011 - I made these today and reduced the peanut butter by 2 Tbsp and it worked well. I have updated the ingredient amount to reflect the change.

3 ounces semi-sweet chocolate chips
3 ounces butterscotch chips
6 tablespoons creamy peanut butter
3 ounces rice noodles, see note*
1 cup mini marshmallows

Steps:

  • Melt the chocolate chips, butterscotch chips and peanut butter in the microwave (be careful not to scorch! - my 900W microwave takes 1.5 minutes on 70% power or about 70 seconds on high), stirring every 25 seconds or so until smooth. You can also use a double boiler on the stovetop.
  • Stir in the noodles and marshmallows.
  • Drop by spoonfuls onto waxed paper or parchment paper and allow cookies to harden (may have to chill in fridge).
  • *Note: These are made by La Choy and come in a blue cardboard can. They are sold as a "topper" for salads or main dishes. Not to be confused with rice noodles that you would add a sauce to or use in a soup!

2 cups semisweet chocolate chips
1 package (10 to 11 ounces) butterscotch chips
4 cups crispy chow mein noodles

Steps:

  • In a microwave or large metal bowl over simmering water, melt chocolate chips and butterscotch chips; stir until smooth. Gently stir in noodles., Drop by rounded tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate 10-15 minutes or until set.

2 ounces spaghetti, or 5 ounces packaged fried chow mein noodles
1 tablespoon vegetable oil, plus oil for frying
5 ounces semisweet or bittersweet chocolate
1/4 cup unsweetened coconut flakes, toasted
1/2 cup unsalted roasted peanuts, coarsely chopped
1 recipe chow mein-noodle haystacks
3/4 cup marshmallows, cut into 1/4-inch pieces
2 ounces spaghetti, or 5 ounces packaged fried chow mein noodles
5 ounces white chocolate
1/4 cup unsweetened coconut flakes, toasted
1/2 cup pecans, chopped

Steps:

  • Chow Mein-Noodle Haystacks: In a large pot of boiling water, cook the spaghetti until tender. Drain well, then toss with 1 teaspoon of vegetable oil to prevent sticking. In a skillet or electric fryer, heat 1-inch of oil to 365 degrees. Working in batches of 3 or 4 tangled strands, fry the spaghetti until golden brown. Let the spaghetti intertwine to form interesting shapes. Drain on paper towels. Break the spaghetti or chow mein noodles into pieces no larger than 1-inch long. In a completely dry bowl or in the top of a double boiler set over barely simmering water, melt the chocolate. Mix in the noodles, coconut, and peanuts. Drop walnut size haystacks of the mixture on a cookie sheet and refrigerate for 30 minutes to set. Serve chilled.
  • Rocky Road Haystacks: Stir in chopped marshmallows to the chow mein-noodle haystack recipe.
  • White-Chocolate Chow Mein-Noodle Haystacks: Substitute white chocolate for the semisweet chocolate and chopped pecans for the peanuts in the original chow mein-noodle haystacks recipe.

This is a quick and easy chocolate-fix that the kids and adults will love. It's easy to play around with the ingredients to suit. My family has been making it for years and it's still a fave! Ingredients can be switched up with great results. It's also great with white chocolate and cranberries or crushed peppermints. You can use any nuts in place of the almonds.

1 (12 ounce) package semisweet chocolate chips
1 cup shredded coconut
1 cup chopped almonds
1 cup white sugar
½ cup milk
½ cup butter
1 pinch salt
1 teaspoon vanilla extract

Steps:

  • Line a baking sheet with waxed paper.
  • Stir oats, chocolate chips, coconut, and almonds together in a large bowl.
  • Whisk sugar, milk, butter, and salt together in a saucepan; bring mixture to a boil, add vanilla, and remove from heat. Pour milk mixture over chocolate chips mixture; stir until well-combined.
